International Dutch Oven Society's2011 World championship Cook-Off
The 2011 International Dutch Oven Soci-ety’s World Championship Cook Off will be
held at the South Towne Expo Center locatedat 9455 South State Street in Sandy, Utah dur-ing the International Sportsman’s Expo Show.The semifinals are on Thursday and Friday,March 17th and March 18th. The finals are onSaturday, March 19th.
There are 22 teams competing during theSemi-Finals this year. There will be 11 teamscompeting on Thursday and 11 teams compet-ing on Friday. The top five teams from eachday will advance to the Finals on Saturday tocompete against the 2010 World Champions,Brian and Lisa Blodgett.On Thursday and Friday, the ISE show opensto the public at noon. Teams will be allowed tostart cooking at 11:30 am. Desserts are due at3:00, Breads at 4:15, Main Dishes at5:30. Announcements will be at 7:00.
There will be cooking and vendor dem-onstrations during the day. Camp Chef andLodge will have many of their products ondisplay.
Annual Ice Fishing Trip toEly , Nevada
As usual the trip was worth all thepreparation and the long drive. Lots of Fish, and great friends sharing a com-mon interest.
Of course we all spent way toomuch, prep’ing for the trip. You can’tdo one of these trips without wander-ing around Bass Pro or one of theother sporting goods stores. Funnything is, a simple pack of hooks a fewsplit shot, and rod are really all that isneeded. But I believe half the fun isshopping for the right stuff.
Fourteen or so of us committed tothe trip. All up in the wee hours of the night to descend upon one friends
house to carpool the 275 or so miles toour destination.
Trying to coordinate that manypeople is fun. My hat is off to our friend Tony who always books thehotel rooms, always seems to knowthe upcoming weather, ice condi-tions, etc.

It took 50 years to finally have mydreams come true (well, except for the Tar-zan part). It was a hell of a trek to get there,
but the journey was worth the wait. Whenyou live in the middle of the south pacific, atrip to Africa begins with a 12,000-mileflight from Maui to the Kilimanjaro airportin Tanzania on the central east coast of thecontinent. It is literally half way around theworld! That works out to about 30 or sohours of living (existing) in a metal tube at35,000 feet. As a side note, the antithesis toMaui is Maun, Africa. Cool huh? Drillstraight through the Earth and you can con-nect the two & save 10 hours of travel.
When you see your first exotic game ani-mals, whether they are Thompson's gazellesor herds of elephants, you will be excitedand mesmerized by the grandeur and abun-dance of these unusual creatures. Their sheanumbers make it difficult to accept the factthat they are rapidly becoming endangered,and that some may be extinct within a fewdecades!

On Saturday, the ISE show opens at 10:00 am tothe public. Teams will start cooking at10:00am. Desserts are due at 1:30, Bread at 2:45,Main Dishes at 4:00. Final announcements will
be at 6:00.There will be cooking and vendor demonstra-
tions during the day. Camp Chef and Lodge willhave many of their products on display.
During this event, you will be able to watchthe teams fully prepare and cook all of their itemson site and using only charcoal for a heatingsource. There will be many people available toanswer any questions you may have about DutchOven cooking. Unfortunately, food samples arenot allowed for the general public.
Tickets for the ISE show are $12.00 per adult,kids under 15 years of age are free. Active Mili-tary is free with current ID card.

SHOT SHOW 2011 Las Vegas, Nevada
The annual Shot Show in Las Vegas was ahuge success. Post show statistics show theattendance records broke last years count.That is a good indicator that sales in outdoor gear might take off in 2011. Perhaps an indi-cator the economy may be turning around.
The SHOT SHOW is not open to the pub-lic, but is full of manufactures, suppliers, andvendors. From the huge, elaborate, display set-ups of the major weapon companies to thesmall start-up business people. Weapons,ammo, knifes, packs, survival gear and food,to normal camping gear.
My friend Brian showed up early in themorning, after working all night. But we don’tmiss this show. At the Sands ConventionCenter in Las Vegas there are booth after
booth, on several floors, as well as numerouslarge halls. We kill most of the day wonderingaround checking for something new we havenever seen, speaking with the sales people outproducts and pricing. It is impossible to see itall in one day.
There is the extreme. From a woodenpocket knife kit, to a vehicle roof mount 50 calmachine gun turret. Two hundred thousanddollar shot guns to $10 special event Gerber knives.
We picked up way too many catalogs, fly-ers and brochures. We were fortunate some of the vendors supplied cloth carrying bags.
We had to have hiked a good 5 miles, in-cluding the trip from the parking garage. Notour normal Outdoor trip report to say theleast. Be sure to check your favorite sportinggoods store (we hope TOPOGEAR might be
on that list) for the latest gadgets to hit themarket. Be sure to check out some of the newknives, Leatherman tools, dry bags and much,much more.
Tony also elects to help any new personthat might decide to join our weekend excur-sion. Making PVC rod holders, PVC Protec-tive rod cases and the such.
In the early hours before sunrise we meetup and the ribbing begins. There is lots of
back and forth verbal jousting about theamount of gear, too much food, and people
not on time. So as we sip our coffee and waitfor all to arrive, I guess we are getting into themood.
Our group is made up of guys, gals, younggrand-children, grand-fathers, young, and theretired. So we have a wide slice of life. Someof us have shared the trip many years. I havewitnesses a grandson of one friend grow froma small boy, to now a teenager, worried abouthow he looks to the girls.
We put the city of Las Vegas to our back and head north on a 2 lane road toward Ely,Nevada. We are soon away from the glitz
and lights, into another world. A desolatesection of highway. 100 miles between gasstations in places. We stop along the way ata mom and pop place to gas up. and have
breakfast. A place with homemade bread,not so fast service, but the friendliest andmost accommodating people you will ever meet. We were getting further in the fishingmode.
We made it to Cave Lake, mid morning.A sunny day, 14 inches of ice. Snow cov-ered mountain peak surrounding us. Wesoon started stripping our heavy coats off to
enjoy the warmth of the sun. 10 inch holeswere drilled in the ice, poles rigged and therelaxed business of fishing settled in.
Between bites I set up the folding table,fired up the coleman camp stove, and put on12 lbs of Chili I had prepared the evening
before. Life is good!Looking around, everyone was getting
bites. Pam, one of our gal friends had takenthe PVC rod protector tube Tony had made,and added her own personal touch. Therelaying on the ice was the tube, spray paintedhot pink, and dotted here and there with
rhinestones. Guess she had to bring a little of Vegas!
The fishing went fast, as did the big pot of Chili. Some of the younger boys soon be-came bored with fishing. Too much energyto just sit there. They grabbed the sleds weused to haul gear, and headed off the side of the lake to the steep mountain side thatdropped to the shoreline. I am not sure if they had more fun fishing or sledding?
The fish seemed smaller in size than weremember from the past. But perhaps our fish stories have clouded our memory?

Your cooking surface will be several sheets of extra Large HeavyDuty Aluminum Foil.. Spread these out to make an area about 4feet square and at least 2 layers thick. Make sure the ground islevel. You don't want your turkey tipping over. Remove the gibletpackage from the interior of a turkey and thaw the turkey beforecooking.
Put 1 16 ounce beer can half full in a Beer Can Turkey roaster ( available at Amazon for $12 including shipping) and mount up toa 21 pound turkey on the stand and make sure the turkey is bal-anced. Put the turkey in the middle of the 4 foot square of foiland put a small aluminum trash can over it upside down.. Heaplong burning charcoal coals on the top and sides of the trash canand as the coals burn down, regularly add more coals to the topand sides.. No coals go inside the can, all the cooking material ison the outside of the trash can. Raise the 4 corners of the alumi-num foil ground cloth up so they reflect the heat inwards towardsthe sides of the trash can. You will use most of a 20 pound bag of long burning coals for this.
Cook the turkey for 2 hours and 10 minutes. Brush the coals
from the top of the upside down trash can and away from thesides, lift the trash can and if the turkey is golden brown like itshould be, have the lid ( which will double as your carving board)covered with fresh aluminum foil to serve as your platter. Tip theturkey and stand onto the trash can lid and take to your carvingstand. Do not put anything on the turkey prior to cooking.. oil,butter or any marinade will result in a burned bird. We usuallyaccompany this meal with packets of pieces of root vegetablesroasted in foil over other coals, Dutch Oven dressing, cranberrysauce and desert ( Dutch oven). a 21 pound turkey will feed be-tween 27 and 30 people depending on the sides you have..

Editors Note: Please make sure you use an aluminum can as stated, and not a galvanized can that may contain lead or hazardous metal coatings.
After the initial release of this Newsletter issue, we have been told this TrashCan Cooking technique has been around for years and is generally credited tothe Girl Scouts of America. It has been found in magazines, Dutch OvenCooking forums, etc. Whomever the original cook may be, our hats are off to that person. We are sure glad this was shared again since we had never seen it before. This could have been used many times in the past had we known about it.
Dutch Oven Heat “Three Up -Three Down Rule
It is better to place more coals or briquettes on the lid of the Dutch oven. Many Dutch oven cooks follow a simplethree up, three down rule . Measure the diameter of your Dutch oven and add 3 to estimate how many briquettes toplace on the lid. Take 3 away from the diameter measure-ment and this is the number you need to place under the
Dutch oven.
If you have a 12 inch Dutch oven. 12 + 3 = 15. Place 15 briquettes on the lid of your oven.

meet you at the “Camper Check -instation” in the Village of Supai.
The date is determined oncepermits are secured. You are
welcome to sell or give away yourreservation. We are hoping for amid May or Mid June 2011 date.
This is not a guided tour. You areon your own, responsible for your
own gear and your own safety. Youmay hike down with us if you caretoo. This may be a benefit for first
timers.
Be aware this trip is verystrenuous, and could be dangerousif you don’t stay alert on the trail.Especially strenuous on the trek
back out.

You will pass through the Village of Supai, located in the Havasu Canyon, a south-western branch of the Grand Canyon. This village has been inhabited by the Havasupaisince 1300 A.D.
So bring your pack and camera. Trek down the switchbacks and through a long slotcanyon to the breathtaking waterfalls. (Havasu Falls = 100’ ft and Mooney Falls = 200 ft)Camp with us, on your own, extend your visit.
