20g garlic

15g mint
50ml water
20ml vegetable oil
20g Knorr Patak’s Mild Curry Paste
5g salt
Real Ease Cooking Spray
10 x goldband Snapper
20 x lime wedges
10 x banana leaves cut to size
1ltr Knorr Tikka Masala Sauce
10g Knorr Vegetable Booster
Method
1. For the green masala paste: place the coriander,
garlic, ginger, chillies, mint, water, oil and the cooked
Knorr Patak’s Mild Curry Paste together in
a blender. Blend until smooth then season with
Knorr Vegetable Booster.
2. Spray Real Ease Cooking Spray onto the fish
and cook both sides of the fish on a pre-heated
char grill cooked medium rare. Cover to keep warm.
Char grill the lime wedges until lightly golden
and caramelised.
3. To serve, carefully trim the banana leaf to size and
place the grilled snapper fillet on top. Pour over
heated Knorr Patak’s Tikka Masala Sauce.
4. Garnish with lime wedges and serve with a side
of green masala sauce.
FISh TIkkA, LImE & GREEN mASALA
• SERVES 10 •
10 medium pre-made pizza bases
150ml olive oil
300g baby capers
500ml sunflower oil
300g Knorr Mexicasa Mild Chunky Salsa
50g dill
200ml Hellmann’s Real Mayonnaise
30ml lime juice
300g baby rocket
600g smoked salmon
Method
1. Place the pizza base on a pizza tray and brush with
olive oil, place in a preheated oven (170°C) and cook
until golden brown, remove and keep warm.
2. Drain and dry the capers on a paper towel, preheat
the sunflower oil to 160°C and gently fry the capers
until they open. Remove and drain on paper towel.
3. To make the dill mayonnaise, finely chop the dill
and add to the Hellmann’s Real Mayonnaise along
with the lime juice.
4. Pour Knorr Mexicasa Mild Chunky Salsa on the
cooked pizza base and spread to the edges.
5. Add the baby rocket and sliced smoked salmon.
6. Drizzle over the dill mayonnaise and sprinkle over
the fried capers.

30ml vegetable oil
10 x skin-on salmon portions
20g salt
10g ground black pepper
600g Chinese broccolini
20g peeled ginger
20g sliced shallots
20g long red chillies
50g Knorr Patak’s Korma Paste
50ml lemon juice
150ml rice vinegar
Method
1. Preheat the oil in a large grill pan and season the
salmon with the salt and pepper. Place on the hot
grill pan and cook each side of the salmon until
golden brown. Finish cooking in a preheated oven
(180°C) until medium rare.
2. Wash the Chinese broccolini and place into boiling
water. Cook until tender. Remove and chop
into portions.
3. Wash and finely shred the ginger, shallots and chilli
and place into a bowl. Lightly fry the Knorr Patak’s
Korma Paste, remove from heat and add the rest
of the ingredients. Mix well to create a dressing.
4. To serve, place the chopped Chinese broccolini
onto a plate with the cooked salmon, drizzle over
the dressing.
ROASTED SALmON FILLET WITh SPICED LEmON DRESSING

20 x green cutlet prawns
10 x wooden skewers
Real Ease Cooking Spray
100g peanut butter
50g KNORR Patak’s Mild Curry Paste
300ml coconut cream
10g coriander
10g shallots
Method
1. Thread two prawns on steel or soaked wooden
skewers. Spray the Real Ease Cooking Spray onto
the prawns and lightly cook on a char grill until
cooked through.
2. Mix the peanut butter, Knorr Patak’s Mild Curry Paste
and coconut cream together and heat well.
3. To make the herb salad, combine the coriander
and shallots.
4. Place the cooked prawns on a small plate and
pour over some of the satay sauce, add the remainder
to a small bowl and garnish with the coriander
and shallots.

Method
1. Spray the Barramundi fillets with the Real Ease
Cooking Spray and cook the fish on a preheated
char grill until golden on both sides. Remove and
keep hot.
2. Wash and drain the lettuce and slice the tomato.
3. Combine the lime juice with the sweet chilli sauce
and Hellmann’s Real Mayonnaise.
4. Build the burger in the following order – toasted
bottom bun, lettuce, tomato, BBQ fish, sweet chilli
lime mayonnaise and top toasted bun.
5. Serve with fresh cooked chips.
BBQ BARRAmUNDI BURGER/ThE OCEANIA

1.5kg barramundi fillets
200g iceberg lettuce
300g sliced tomato
30ml lime juice
70g sweet chilli sauce
200g Hellmann’s Real Mayonnaise
60 tasmanian half shell oysters
333g smoked bacon
900g Knorr Mexicasa Chunky Mild Salsa
60g chopped coriander
10 x lemon cheeks
1kg rock salt
Method
1. Place the oysters on a large tray for grilling.
2. Slice the bacon into fine strips and pan fry until golden,
remove from the pan and drain excess fat.
3. Add the cooked bacon to the oysters and pour over
Knorr Mexicasa Mild Chunky Salsa.
4. Place the oysters under the salamander grill and cook
until hot.
5. Garnish with the fresh chopped coriander and serve
on a plate with rock salt and lemon wedges.

2 lemons, rind finely grated, juiced
400ml dry white wine
4kg mussels, beards removed
20g parsley leaves, roughly chopped

Method
1. Heat oil in a large, deep saucepan over medium heat.
Add chilli. Cook, stirring, for 3 minutes. Add the wine
and reduce by half, place in the mussels and cook
until they start to open.
2. Add the Knorr Mexicasa Mild Chunky Salsa, lemon
rind and lemon juice. Stir until well combined.
Increase heat to high. Bring sauce to the boil
and simmer for 2 minutes.
3. Ladle sauce and mussels into bowls. Sprinkle with
parsley. Serve with bread.
