LoS PANELES DE roBLE DEL oAk BAr
Los paneles del Oak Bar fueron tallados en el año 1600 en roble europeo, para decorar la
habitación de un castillo en Normandía, Francia. Al fallecer el dueño del castillo, su viuda,
apremiada por las deudas, decidió vender algunas pertenencias, entre las cuales se encontraba la
decoración de la majestuosa propiedad. Al enterarse de esto, el Sr. Luis Duhau partió a Francia
en busca de decorados para sus Palacios de Buenos Aires.
Los paneles poseen una gran variedad de diseños tallados, mezcla de épocas y estilos: diseños
florales flamboyant, flores de lis, figuras medievales y clásicos medallones con perfiles isabelinos.
Son destacables las tallas con imágenes recurrentes en la imaginería medieval, como San Jorge
y el dragón, imágenes de animales tocando instrumentos musicales, como la talla del gato
tocando el arpa, el perro parlante, un ganso tocando el violín o la cigüeña y la flauta.
OAK BAR PANELS
The panels featuring at the “Oak Bar” are made from European oak, and were especially carved in
the XVII century to decorate a castle in Normandy, France. When the last owner of the estate died,
his widow sold some valuables to Mr. Luis Duhau, who bought the panels and brought them back
to decorate his Palace in Argentina.
The oak panels show a variety of carved designs, mixing styles and eras: flamboyant mouldings,
fleur-de-lis, Elizabethan period medallions and repeated images of medieval reliefs like Saint George
and the dragon, images of animals playing musical instruments, like a cat playing the harp, a talking
dog, a goose playing the violin or the stork and the flute.
SALóN CriStAL
El Salón Cristal se encuentra ubicado en el Piano Nobile del Palacio, a la izquierda de la
entrada principal del Hotel, y une la sala de la Biblioteca con el Oak Bar. Este amplio y
bello salón de techos altos, grandes ventanales originales, antiguas puertas de madera tallada y
magníficos pisos de mármol captura y transmite la historia y la reputación de los años dorados
del Palacio Duhau.
La combinación de la arquitectura de estilo clásico con dos modernos sofás de cuero blanco de
Poltrona Frau, un chandelier central de cristal, los altos candelabros de pie de cristal de Baccarat,
dos de las exclusivas copias de los que fueran realizados para el Zar Francisco un siglos atrás y
los tres tonos de mármol que dibujan una estrella en el piso hacen del Salón Cristal un lugar
mágico, ideal para realizar íntimas recepciones y cócteles.

Salón Cristal is located at the Piano Nobile of the Palace, to the left as you approach the main
entrance to the hotel, and it joins the Library with the Oak Bar. This spacious and beautiful room
with high ceilings, large original windows, and antique doors made of carved wood, and magnificent
marble floors, tell us about the history and the character of Palacio Duhau´s golden years.
The combination of its classic style architecture boasting two modern white leather sofas by Poltrona
Frau, a central crystal chandelier, the tall standing candlesticks made of Baccarat crystal, which are
two of the exclusive copies made for Czar Francis a century ago, plus the three shades of marble
depicting a star on the floor, make the Salón Cristal a magic spot, the perfect venue for private
receptions and cocktails.

Máximo López May: Nuevo Chef Ejecutivo | máximo lópez maY: New executive chef
Palacio Duhau - Park Hyatt Buenos Aires anunció el nombramiento de Máximo López May como su nuevo Chef Ejecutivo, quien de este
modo retorna al Hotel del que formó parte en su apertura. Convencido del valor de promover una relación personal con productores y proveedores
locales, el Chef se muestra apasionado por exaltar los sabores más puros de un producto, sobre todo priorizando los de temporada y los disponibles
en el mercado, preservando su esencia, por encima de preparaciones e ingredientes.
El nuevo Chef Ejecutivo inicia de este modo un nuevo paso por las cocinas de Palacio Duhau - Park Hyatt Buenos Aires, donde podrá continuar
aportando su experiencia y conocimientos, potenciados luego de su reciente paso por el Hotel Andaz Wall Street, en New York.
“Volver a Palacio Duhau - Park Hyatt Buenos Aires es para mí como un retorno a la casa familiar, ahora como Chef Ejecutivo”, señaló López May.

the value of promoting a personal relationship with the local producers and suppliers, the Chef is passionate about enhancing the purest flavours of a produce, mostly by choosing the season´s best and those available on
the market, preserving essence above creations and ingredients.
The new Executive Chef is once again displaying his skills at the cuisine of Palacio Duhau – Park Hyatt Buenos Aires, where he will boast his experience and knowledge after working recently at Hotel Andaz Wall
Street, in New York.
“To me, coming back to Palacio Duhau – Park Hyatt Buenos Aires is like returning to the family home, now as Executive Chef”, said López May. “I feel great responsibility, as I am at one of the main gastronomy

Inspirado en su estilo de Moderna Cocina Italiana, Gioia Restaurante & Terrazas presenta
una experiencia en la que la más alta gastronomía confluye con una costumbre que, nacida
en Europa, es hoy una marca registrada: el aperitivo italiano. Concebida como una ceremonia
que apunta a convertirse en un nuevo clásico del atardecer, esta antigua “usanza italiana” se
revela como un instante de pausa, de diálogo, un meeting point entre amigos y colegas, en
el que los chefs diseñan –de manera simultánea– un exquisito plato aperitivo, que combina
propuestas frías y calientes.
En ella, el clásico aperitivo italiano se luce en base a una selección de productos premium de
la Cava de Quesos del Hotel, alcauciles confitados marinados con tomillo y ajo, pimientos
horneados con romero, ajo y aceite de oliva. También, se incluyen aceitunas marinadas con
almendras y naranjas, marinadas con jengibre y limón, y una tercera opción de aceitunas
rellenas de queso provolone. Sumada a una selección de fiambres con diferentes tiempos de
estación, el Chef los combina entre sí para –a partir de su propia inspiración– crear diferentes
brusquetas, con tostadas y focaccias.
Al tiempo que el Chef diseña el aperitivo frío con las diferentes creaciones exhibidas en la
tradicional mesa central de Gioia Restaurante & Terrazas, el Chef de Cocina se dispone a
preparar el aperitivo caliente, que contempla:
• Panzerottis crocantes rellenos de mozzarella, albahaca, nueces y ajo.
• Croquetas de papa al romero con cebolla caramelizada y queso parmesano.
• Olivas ascolanas rellenas de carne de cerdo, hiervas, ajo, queso parmesano y cebollas.
• Salchichas revestidas en crujiente hojaldre.
Ambas creaciones se funden en un mismo plato, servido a la mesa, acompañando un especial

Italian aperitif. Something that began as a ceremony and now is about to turn into the new evening
classic, this old Italian usage is a moment to pause, to chat, a meeting point between friends and colleagues,
where chefs design an exquisite dish to nibble, combining cold and hot choices.
The classic Italian aperitif is based on a selection of premium produce form the cheese cellar at the Hotel,
caramelized artichokes marinated in thyme and garlic, red peppers baked with rosemary, garlic and olive
oil. Also included are olives marinated with almonds and oranges, marinated with ginger and lemon, and
a third choice of olives filled with provolone cheese. Plus a selection of cold cuts matured at different stages,
the Chef combines them, according to his own creation, to elaborate different bruschetas, toast and focaccia.
As the Chef designs the cold aperitif with a number of different creations placed on the central table at
Gioia Restaurante & Terrazas, the Chef de Cuisine gets ready to prepare the hot aperitif, namely:
. Crispy panzerotti filled with mozzarella, basil, walnuts and garlic.
. Croquettes of rosemary potatoes with caramelized onion and parmesan.
. Olives from Ascoli filled with pork, herbs, garlic, parmesan and onions.
. Sausages wrapped in mille-feuille pastry.
Both creations feature in the same dish, served at table, alongside a special seasonal cocktail menu,
refreshments, grappa and wines. Drinks like Americano, Negroni, Campari Orange, Bellini and the classic
Spritz set the trend of this new option.

La muestra de Martín Rodríguez que se exhibe en la Galería de Arte de Park Hyatt
Mendoza abre la temporada vendimial con paisajes cordilleranos y petisos de polo, que
se conjugan en plácidas escenas en óleo y grafito.
Oriundo de San Rafael, Mendoza, y habiendo pasado parte de su infancia en la
localidad bonaerense de Pilar, el artista creció jugando entre viñas y en contacto con la
naturaleza, de donde toma la inspiración para su trabajo. “Hago realismo y en algunas
obras intento hacer hiperrealismo. Deseo expresar la imagen exacta de las cosas que
tengo en algún rincón de mi alma. Yo también necesito ver con exactitud lo más lejano
de mí, no solo imaginarlo”.
Durante años, Rodríguez se dedicó a su actividad profesional como diseñador gráfico,
aunque nunca dejó de practicar la pintura y el dibujo. Fue hace unos diez años atrás
que comenzó a pintar todos los días, hasta llegar a dedicarse a esta actividad en forma

The exhibition by Martin Rodríguez at the Park Hyatt Mendoza’s Art Gallery will open the
harvest season showing Andean landscapes and polo ponies set on peaceful scenes in oil and
graphite.
Originally from San Rafael, Mendoza, and having spent part of his childhood in the Buenos
Aires area of Pilar, the artist grew up amongst vines and in contact with nature, from which he
took his inspiration. “I do realism and in some works I try to do hyper-realism. I wish to express
the exact image of the things that I keep somewhere in my soul. I also need to see clearly my inner
depth, not just picture it.”

mundo de las carreras, el BMW 328 Roadster –con un peso
bruto de solo 780 kg y unos modestos 80 caballos de fuerza en
su versión de producción en línea– fue una sensación absoluta. Y,
efectivamente, el nuevo Roadster no perdió tiempo en poner a
sus corpulentos rivales sobrealimentados firmemente en su lugar,
en su debut en Nürburgring el 14 de junio de 1936.

almost reduced to ruins. The monk worked tirelessly in order to turn
the spot into the first wine terroir in Riviér de la Marne, by repairing

Father Pérignon´s main goal was the choice of grapes, because if
selected in good proportions, the blend becomes a symphony of aromas
turned into art. He used to place the grapes brought to him from the
vineyard on his window sill at night. The following morning he would
try them before breakfast, so he was able to make the perfect selection
according to early vintages, late harvests, early seasons and many other
aspects which nowadays are taken into consideration.
The contribution made by the XVII century to the birth of champagne
can be put in a few words: bottle, cork and the blend of grapes. The

este aspecto a la mezcla a la que hay que subrayarle su aporte, puesto
que la utilización del corcho se había introducido en Francia en 1665.
El monje dedicó toda su vida a buscar lo mejor para su convento en
las vinificaciones, las degustaciones y la comercialización del vino. Los
vinos tranquilos de Champagne comenzaron así a tener efervescencia
porque se continuaba la fermentación en la botella.
Se los embotellaba luego de que la temperatura bajaba a menos de
siete grados. El azúcar y las levaduras residuales se reactivaban con la
llegada de las temperaturas templadas, produciéndose gas carbónico,
efervescencia, burbujas...
En esos tiempos, los tapones de las botellas eran de un material

producing carbonic gas, effervescence, bubbles.
In those days the tops of bottles were made of a fabric similar to fuses
in torch lamps, so Dom Pérignon figured out a cleaner and better
looking kind of top, by applying bees wax in the neck of the bottle
before adding the cork, thus making it airtight.

Weeks later some bottles started bursting and Dom Pérignon went
about trying to find an explanation to this phenomenon: the sugar
found in honey speeds up the fermentation inside a bottle and makes
it explosive. Thus the champenoise method was born, also known as
fermentation in a bottle or simply: champagne. Dom Pérignon used
whatever he had within hand to modify the ways of making wine,
contributing with scientific findings to the improvement of viticulture.

icen que cuando uno trabaja en lo que le gusta, le dedica
mucho tiempo. Y bien podría ser el caso del Consejero de
Turismo de la Embajada Española en la Argentina, Julio Moreno
Ventas. Es él quien tiene asignada la promoción turística internacional
de España en nuestro país. Su oficina está en Buenos Aires porque
es el principal mercado de trabajo, pero también abarca casi toda la
región: Chile, Paraguay, Uruguay, Bolivia, Perú y Ecuador. “Haciendo
promoción intentamos facilitar el camino a los operadores turísticos
y generar el deseo de viajar del público para disfrutar de cualquiera
de las variantes de nuestra oferta turística”, explica orgullosamente
Moreno Ventas.
-¿Con qué herramientas logran esa promoción?
-Básicamente trabajamos en tres órdenes. Por un lado con quienes
“venden” el producto o el destino España, como agentes de viajes
y compañías aéreas que vuelan a España. Lógicamente el canal
profesional es el brazo armado de nuestra actividad de promoción
y desarrollamos un sinfín de actividades junto a ellos, desde una
capacitación sobre destinos o meras presentaciones a seminarios. En
segundo orden está el público consumidor. Cada día realizamos más
acciones directas, lo que pasa es que esas acciones tienen un carácter
segmentado, como por ejemplo actividades con el Club Centurión
de American Express hasta torneos de golf. Buscamos esos segmentos
del mercado para presentar una oferta idónea al perfil de cada uno. El
tercer orden de trabajo son los medios de comunicación porque son
nuestros voceros y parlantes. Son el nexo para difundir la variedad de
nuestra oferta.
-¿Qué es lo que más disfruta de su trabajo?
-Lo disfruto todo. Soy un “disfrutón” de la vida. Tengo la gran fortuna
de trabajar en lo que más me gusta, que es difundir mi España por el
mundo, en este caso en la Argentina. Confieso que nací en Toledo,
pero de joven me trasladé a Sevilla y yo me siento sevillano por los
cuatro costados y defiendo mi tierra andaluza. Me siento español,

-What are the tools used to promote tourism?
-Mainly three. There are those who sell Spain as the product or destination,
like tour operators, and we could include the airlines flying there. We develop
a number of activities alongside our professionals, from informative courses
to tell about our different destinations, to presentations and seminars. In the
second place, we have the consumer. We carry on direct actions every day,
somewhat segmented, from activities, for instance, with American Express´
Centurion Club to golf tournaments. We look for those segments to provide
something according to each one’s profile. Thirdly, the media as they are our
speakers and communicators. They help make our offer known.
-What is it you enjoy most about your work?
-Everything. I love to enjoy life. I’m very fortunate to work at promoting
Spain in the world, which is what I really like, in this case, in Argentina.
I admit I was born in Toledo, but as a young man I went to Seville; I
feel deeply Sevillian and I support my Andalusia. I feel Spanish, from
Andalusia and Seville and then, from Toledo. I’m also very fortunate to
have a portfolio of a product that is both singular and exclusive.
-What kind of tourism do you enjoy most?
-I love gastronomy as a bait to promote tourism. One fact: of the 53 million
tourists that visited Spain last year, 6 million declared that the main reason
why they chose that destination was its gastronomy. Spanish food industry
is very diverse. It blends tradition and modernity; we still prepare and
treasure our great-grandmother’s recipe. Depending on the regions, there is
one strong cuisine that started off from being cooked over the embers and

-¿Qué tipo de turismo disfruta más?
-Me gusta mucho la gastronomía como señuelo o gancho de
promoción turística. Un dato: de los 53 millones de turistas que
vinieron a España el año pasado, 6 millones de ellos declararon que la
motivación fundamental que los llevó al destino fue su gastronomía.
La gastronomía española tiene como característica fundamental la
diversidad. Otras de sus notas es que conjuga como nadie la tradición
y la modernidad: seguimos haciendo y amando las recetas de nuestras
tatarabuelas. Según las regiones, generalmente existe una cocina
potente, una cocina que partió de las brasas y fogones de las cocinas
medievales y, sin embargo, eso convive en perfecta armonía con la
cocina de vanguardia que nos sitúa en el “top” de la cocina mundial.
Además tenemos esa única y singular manera de disfrutar que es el
tapeo. Yo diría que el tapeo, más que un hábito de alimentación, es
un hábito de amistad, porque nos gusta estar con nuestros amigos y
charlar. Nos gusta hacerlo en la calle y esa es una costumbre en toda
España.
-¿Qué opina sobre el proyecto en Sevilla de la construcción
de una torre de César Pelli en la ciudad? Se había generado
un debate porque con su construcción el centro histórico
de la ciudad corría riesgo de perder el título de patrimonio.
-En mi ciudad hay relaciones de fuerzas que, como en muchas otras
ciudades, chocan; las hay ultraconservadoras y otras más abiertas a lo

Plus, we have a unique and singular way of enjoying “tapas”. I would say

that is a habit throughout Spain.
-What do you think about the project in Seville of César Pelli
building a tower? It was very controversial because it was said the
historic center of town was at a risk of losing its heritage?
-Some forces clash in my city, like in many other cities. Your have the ultra
conservative and others more open to what progress brings. In Seville there is
an endless confrontation between conservatives and the people who want to
blend tradition and modernity. In 1992 there was a Universal Exhibition
that changed the city completely. There were people then that were opposed,
and today the historic center is as beautiful as it was before, because it has
been protected and no one is planning to change it. The Pelli tower, Cajasol
Tower, inside the Puerto Triana, is at the exit from Seville to Huelva. It’s
being built away from the historic city. These issues are always relative and
quite subjective. For its location it seems silly to think that it alters the
historic heritage of the ancient city.
-What is the meaning of the silhouette of the black bull that you see
in all the roads around the country?
-It’s an amazing story because it used to be the logo of Osborne sherry
winery. When I was small that ad plagued the whole of Spain, and it was
a very strong statement. Even though the brand has vanished 15 years ago,

Por su ubicación, parece una tontera que alguien piense que esto
altera la determinación de Patrimonio Histórico del casco antiguo
de la ciudad.
-¿Qué representa la silueta del toro negro que se ve por todas
las rutas del país?
-Es una historia muy curiosa porque ese toro inicialmente era la
imagen de una marca de una afamada bodega de jerez: Osborne.
Cuando yo era chico, España entera estaba sembrada con esa imagen
publicitaria que ha sido tan potente que, aunque hace 15 años que
desapareció la marca, se convirtió en un símbolo nacional. Además,
está vinculada a una de nuestras señas de identidad, les guste o no a
los catalanes, como las polémicas corridas de toros también llamadas
“el arte de cúchare”.
Lo mismo pasa con el logo turístico de España, diseñado por el pintor
Joan Miró. Este año cumple 26 años y tiene absoluta vigencia y ha
logrado que rápidamente se asocie al destino.
-Además de Madrid, que es su capital, ¿qué región es la más
visitada?
-El argentino tiene dos puertas naturales a España: Madrid y
Barcelona, con vuelos directos, que son los dos destinos iniciales
preferidos. Madrid por ser la capital y Barcelona porque reúne
las mismas características, pero con un atractivo importante para
los argentinos: vive un ícono del fútbol que patea la pelota como
nadie y se luce allí. Luego, en tercer lugar, y lo digo con orgullo, está
Andalucía. Encierra una variedad paisajística, cultural, gastronómica,
que hace que muchos argentinos bajen al sur a visitar nuestra tierra.
Cada región tiene lo suyo, tenemos pequeñas joyas por todo el
territorio. Vale la pena abrir la paleta a otros lugares.

Posiblemente, el mayor atractivo de España es la variedad de su oferta:
paisajes, gastronomía, cultura. Es un crisol de cultura imponente como
muy pocos países de Europa, tal vez por su ubicación estratégica. Es
un puente del viejo continente con América.
“Muchos visitantes rescatan el trato de la gente. Hemos recibido
la influencia de muchos pueblos, lo que nos ha hecho abiertos.
Somos ricos en experiencias culturales y eso es lo que nos hace ser
hospitalarios”.
-¿Qué cree que hay en común entre el argentino y el español?
-Hay dos puntos de encuentro importantes en nuestras respectivas
maneras de ser. Uno, la pasión que le ponemos a todo y esa pasión
tiene dos señas de identidad muy concretas: el tango y el flamenco.
El segundo punto en común podría ser las ganas de disfrutar de la
vida, la alegría con la que abordamos el día a día. Uno viaja por
América Latina y en ningún otro país se siente tan en casa como en la
Argentina, y ahí sí influye la historia. Cuando llegué a este país nunca
me sentí, no digo extranjero, ni siquiera extraño. Jamás.
La ventaja es la variedad y hay para todos los gustos. Cada cosa, y por
un motivo diferente, lo hace gozar, y ¡Olé!

Argentines: there lives an icon that kicks the ball like no other and plays
there. In the third place, and I’m proud to say it, there is Andalusia. It has
a wide range of different landscapes, and also cultural and culinary choices
that entice many Argentines to travel south of our land. Each region has
its own distinctive trait; we have many jewels across the country. It’s worth
while opening up to other places.
A hEAlthy hAbit
Spain’s greatest attraction is probably the variety of destinations with its
landscapes, gastronomy and culture. It’s a melting pot like you find in no
other European country, maybe for its strategic location. It’s a bridge that
joins the old continent with America.
“Many travelers like the way they are treated. We have been influenced
by many peoples, so we have become open minded. We are rich in cultural
experiences and that makes us hospitable”.
-What it there in common between Argentines and Spaniards?
There are two main traits that we share. One, the passion we put into
everything, a passion that relates to tango and flamenco. The second aspect
would be the desire to enjoy life, the joy with which we face each day. You
travel through Latin America and there is no other country that you feel at
home like Argentina. History has a lot to do. When I arrived in this country
I never felt a foreigner or not even a stranger. Never ever.
Variety is a good thing and we have something for every taste. Each thing
makes you enjoy, and for different reasons. Olé!

Tupungato Winelands
l paisaje sorprende por sus relieves y colores: el verde
ondulante de los viñedos del Valle de Uco se combina con el
blanco eterno de los altos picos de los Andes y los colores del desierto.
Recorriendo la ruta del vino para descubrir las buenas propuestas de
las bodegas mendocinas, los turistas tiene hoy una sugerencia más:
jugar al golf y disfrutar de una copa de vino con vistas al Volcán
Tupungato, con sus imponentes 5.800 metros de altura.
Diseñada por Adam Golf Design, la cancha de golf se emplaza a 1.200
m de altura, sobre 60 hectáreas rodeadas de viñedos, cerrilladas y
cañadones, que sumados a la vegetación desértica nativa construyen
un paisaje de detalles mágicos.
Para el diseño, se minimizaron los movimientos de suelos tomando
ventaja de las variaciones de la topografía existente e integrando
los recursos naturales. Gracias al diseño en forma de óvalo, jugar al
golf en Tupungato Winelands significa descubrir en cada hoyo un
paisaje distinto. Después de nueve hoyos rodeados de viñedos con
vistas abiertas a las altas cumbres nevadas, sorprenden los siguientes
nueve hoyos, entre cañadones y con espectaculares vistas al Valle de
Uco, y donde la amplitud de los fairways compensa la dificultad de
la pendiente. Los múltiples tees de salida aseguran, tanto a golfistas
profesionales como amateurs de todos los hándicaps, la posibilidad
de disfrutar del juego.
El putting green y la cancha de práctica, con su driving, bunker,
laguna y viñedos que lo enmarcan, ofrecen zonas de juego corto y

undulating green of the Valle de Uco vineyards combines with
the eternal snow-capped Andes and the hues of the desert. Touring the road
of wine to discover the good options offered by the Mendocino wineries, the
tourist has an extra choice: to play golf and enjoy a glass of wine with vistas
of the Tupungato Volcano, towering 5.800 meters high.
Designed by Adam Golf Design, the golf course unfolds at 1200 m high,
spreading over 60 hectares surrounded by vineyards, hills and ridges, which
coupled with the native desert vegetation, manage to build a landscape with
magical features.
For the design of the course, the dirt moving was kept at bay, but making the
most of the variations of the existing topography and by using the natural
resources. Due its oval design, as you play golf at Tupungato Winelands you
discover a different scene at every hole. After walking nine holes embraced
by vineyards with a view of the high peaks, you walk the next nine hole,
between ridges and spectacular vistas of the Valle de Uco, where the size of
the fairways makes up for the sloping terrain. The multiple tee offs ensure
both pros and amateur golf players spanning all handicaps the possibility
to enjoy the game.
The putting green and the practice course, with driving range, bunker, lake
and vineyards, provide areas to improve your short or long game. The
restaurant at the starter is opened all year around for those who wish to have
lunch taking in the view of holes 1, 2 and 18.
Tupungato Winelands is part of a real estate development that is the
brainchild of Burco America (that also developed Arelauquen in Patagonia)
and its golf course is open to the public from Tuesday to Sunday. It offers

uando en la década del 80 la mayor parte de los viñateros
argentinos decidía terminar con sus viñas de Malbec,
Ángel, acompañado de hombres como Raúl de la Mota, Roberto
Luka o la familia Toso, se dispuso a trabajar para agregarle valor
enológico a esta cepa que terminaría siendo la insignia de nuestro
país.
Es un hombre de baja estatura, muy robusto, que no necesita
estímulo para avanzar en una conversación. Solo le basta
semblantear a su interlocutor y entregarse confiadamente a una
charla sin tiempo.
Su bodega –Domaine St. Diego– es un picnic familiar. Mientras
charlamos parados en los viñedos, pasa Rosalía, su mujer, con una
carretilla con no importa qué. Llega una camioneta y dice: “Es
Lucas, mi hijo, el enólogo de la bodega…”. Pasa otro con unos
tanques de plástico, enormes y vacíos, y Ángel explica: “Es Juan,
mi otro hijo que se ocupa de la administración…”. Hay una sala
donde se escucha que alguien da explicaciones en inglés a los
visitantes, y el patriarca vuelve a informar: “Es María Laura, mi
hija…”.
Este esfuerzo de la bodega propia, lo comenzaron Ángel y Rosalía
en 1988, luego de que él hiciera una carrera profesional impecable
dentro de la bodega Trapiche. Cualquier miembro de la familia
Pulenta puede testimoniar el aprecio personal y profesional que
sienten todos por él.
Este aprecio se extiende a buena parte de Mendoza, su provincia,
que en el año 2005, con el voto de 2.200 colegas, lo distinguió
con el premio Oreglia de Oro.
Un premio que representa mucho porque recuerda al padre
Francisco Oreglia, un salesiano a quien se reconoce como el
creador de la enología nacional, al punto que fundó la primera
Facultad de Enología de América del Sur. Ángel terminaría siendo
profesor de esta facultad y varias generaciones de enólogos lo
consideran como uno de los grandes maestros en la profesión.
Se le puede preguntar lo que se desee, él responderá siempre. Lo
hace con un estilo peculiar, ya que se expresa únicamente a través
de aforismos. Cada frase es una suerte de sentencia. Por ejemplo, si
se lo consulta sobre alguno de los grandes enólogos internacionales
que merodean por nuestro país, no duda en responder: “Michel
Rolland, Paul Hobbs, Alberto Antonini producen vinos que van
de mayor a menor acidez. Paul Hobbs es el equilibrio”.
En 4 hectáreas están plantadas sus vides y construida su bodega.
Hasta se permitió aprovechar una ladera y armar un paseo para
visitantes cuyo sendero lleva a una pequeña terraza. Desde allí
se puede ver todo el establecimiento y se destaca la iglesia de
ladrillos que, ubicada calle de por medio, agrega aún más colorido
a un paisaje por demás pintoresco.
Para él, no hay secretos acerca de cómo la paciencia debe regir la
vida de un productor de vino si quiere ganar dinero. La respuesta
fue la de un sabio chino: “Hay que plantar al comienzo una
enredadera del tipo ‘enamorada del muro’. Cuando la enredadera
llega a los cinco metros de altura, se comienza a ver la plata…”.
Se divierte también contando que para él rige la regla del 9 para
trabajar con el vino: “La idea proviene de los frutos de la vid,
vegetal que cumple 9 meses desde el lloro de la cepa por las heridas
de la poda: la brotación, la floración, el cuaje, el crecimiento de los
granos verdes, el envero, la maduración de los frutos y el reposo
vegetativo. Y necesita 9 verdes (9 años) de recién plantada para
lograr el equilibrio vegetal necesario”.
Y sigue jugando con el número 9: “Necesita –la vid– también más

He is a short man, very robust, who doesn’t need encouragement to
start a conversation. He just needs to examine the person standing
before him to spark a conversation with total disregard for time.
His winery, Domaine St. Diego, is rather a family picnic. As we
speak, standing at the vineyard, Rosalía, his wife, walks past
pushing a wheelbarrow, only God knows what she’s carrying. A
pick-up pulls over and she says: “It’s my son Lucas, the winery’s
enologist…” Someone walks by with some plastic tanks, huge and
empty, and Ángel tells us: “It’s Juan, my other son who takes care of
the management…” In one room someone is explaining something
to a group of guests in English, and the patriarch says “That’s
María Laura, my daughter…”
Ángel and Rosalía started with great effort to build their own
winery in 1988, after the former had accomplished a remarkable
career in the Trapiche winery. Any member of the Pulenta family
can tell about the personal and professional appreciation they all
feel for him.
He enjoys great respect in Mendoza, his province of birth that
distinguished him in 2005 with the Oreglia de Oro award, voted by
2.200 of his colleagues. This acknowledgement is very meaningful as
it goes back to father Francisco Oreglia, a Salesian priest known as
the creator of national enology: he was the founder of the first School
of Enology in South America. Ángel would eventually be a professor
at the school and several generations of enologists consider him as
one of the great teachers in the profession.
You can ask him whatever you like; he will always give you an
answer in his peculiar style, as he only uses aphorisms. Every phrase
is a kind of statement. For instance, if you ask him about any of
the international enologists that roam our country, he will comment.
“Michel Rolland, Paul Hobbs, Alberto Antonini produce wines that
go from greater to lesser acidity. Paul Hobbs represents the balance”.
In 4 hectares he planted his vines and built his winery. He even took
advantage of the side of a mountain to design a walking path for his
guests that leads to a small terrace. From there the entire estate can
be seen and the brick church stands out, separated by a road, adding
more color to a definitely picturesque landscape.
He believes there are no secrets as to how patience should prevail
over the life of a wine producer who is intent on making money.
The answer came from a Chinese proverb: “First you have to grow
a creeper plant, when it reaches five meters high, then you start
making money…”
He enjoys telling us about rule 9 to make wine: “The idea comes from
the fruits of the grapevine, a crop that goes through a 9-month cycle
starting with the “bleeding” after pruning, bud break, flowering, fruit
set, growth of green berries, veraison, ripening and dormancy. And it
needs 9 green years after planting to achieve the right balance”. And
he goes on playing with the number 9: “The grapevine also needs 9
levels of leaves for each bud to induce photosynthesis that will allow
it to produce tasty berries, ripe and healthy. The top red wines are
obtained from at least 9 days of fermentation-maceration”.
He loves using puns as a way of teaching, not as a game. That sort
of 9s table is intended to show his students that a good wine is
obtained with patience and respecting Nature´s own timing.
I notice that one vineyard lies under the shade of a small olive
wood, the master will remind me that it’s not by chance, and he will

de 9 niveles de hojas por brote para lograr una efectiva superficie
foliar de fotosíntesis, que le permita generar frutos sabrosos, bien
maduros y sanos. Los mejores vinos tintos nacen de un mínimo de
9 días de fermentación-maceración”.
Se puede pasar horas haciendo su juego de palabras que es su
forma de enseñar, no un entretenimiento. Esa suerte de tabla del
9 pretende trasmitir a los jóvenes estudiantes la certeza de que un
buen vino se consigue con paciencia y respetando los tiempos de
la naturaleza.
Si se le hace notar que parte de un viñedo está a la sombra de un
pequeño monte de olivos, este maestro recuerda no solo que no es
casual, sino que además tiene una historia que contar al respecto:
“Antonio Pulenta me dijo que era un burro al dejar esos olivos
donde estaban. Pero yo, gracias a ese Malbec sombreado, hago un
blanc de noir, con el que consigo un espumoso aplicando el método
charmat”.
Su pequeño principado enológico queda en Lunlunta, con una
“capacidad de vasija”, como se dice, que ronda los 120.000 litros,
y en su sala de barricas se cuentan unas 50. Lo que hoy se llama
una bodega boutique o productora de vino de garage.
Pero el tamaño no le impide haber desarrollado un vino como el
Pura Sangre 2009, del que opina: “Es un vino jugoso, 80% Malbec
y 20% Cabernet. Estuvo en madera nueva. Cultivado en espaldar
alto, para que las uvas de abajo maduren más lentamente y le
aporten más acidez. Tiene mucha ‘cereza’ y se nota que ya tiene
varias lunas”.
Hasta ahí va la definición técnica, pero Ángel Mendoza le agrega
el comentario: “Un vino de guarda no debe dejar ver el dedo de
uno cuando se lo pone del otro lado de la copa. Si se ve, es un
clarete, un vino maricón…”.
Reconoce a Carmelo Patti, otro grande de la enología mendocina,
como su par: “Con Carmelo somos los primeros que pusimos
nuestras bodegas habiendo trabajado en las más grandes, y ambos
ya tenemos más de 10 cosechas”.
Sus bigotes a la antigua con puntas hacia fuera, que exigen ser
peinados cada mañana al levantarse; bronceado por el mismo sol
implacable que tanto bien le hace a la maduración de las uvas; con
un hablar hilvanado, donde una frase se enlaza con la siguiente,
dando una continuidad que anima a escuchar; mechando en
francés términos técnicos fáciles de comprender; dispuesto a
comunicar generosamente sus conocimientos apenas le son
requeridos; patriarcal, familiero, amante de la buena mesa tanto
como del buen vino… todas estas son las características de un
histórico de la viticultura mendocina que conserva plena vigencia.
Por lo que hace en su propia bodega, como por lo que ayuda a
hacer en una decena de otras que asesora, podemos estar seguros
de que lo mejor que tiene Ángel Mendoza para dar a esta industria
está por venir.
tell a story to illustrate: “Antonio Pulenta told me I was a fool to
leave those olive trees where they were. But thanks to that shady
Malbec, I make a Blanc de Noir with which I produce a sparkling
by implementing the Charmat method”.
His small enologic area is located in Lunlunta, with a storage
capacity of around 120.000 litres and some 50 units in the barrel
room: these days known as a boutique winery or a garage wine-
producer.
But the size of the winery did not stop him from producing a wine
like Pura Sangre 2009: “It’s a juicy wine, 80% Malbec and 20%
Cabernet kept in new wood, grown against a high espalier so that
the bottom berries ripen more slowly producing more acidity. It has
a great deal of cherry notes, and several moons”.
So much for the technical definition, but Ángel Mendoza adds: “A
wine to store shouldn’t let you see your fingers through the glass. If
you see them, it’s a claret, a sissy wine…”
He acknowledges Carmelo Patti, another celebrity in Mendocino
enology, as his peer: “Carmelo and I were the first to set up our
own wineries after working with the top, and we both did over 10
harvests”.
He boasts his old-fashioned moustache with the ends outwards that
need to be combed when he wakes up every morning, tanned by
the ruthless sun that is so good for maturing the grapes. His words
stitched in a row, with every phrase intertwined with the next,
provide continuity. He uses some easy-to-understand technical words
in French, and he is always eager to generously share what he knows
as soon as he is required. He is a patriarch, fond of his family, a lover
of good food as well as of good wine…all these are the features of a
historic personality of Mendocino viticulture, still very much in race.
For his job at the winery and for his contribution as a consultant, we
can remain assured that the best that Ángel Mendoza has to give to
the wine industry is still to come.

abián La Rosa nació en el barrio porteño de Devoto en
1970. Fue el tercero de cinco hermanos, todos varones, en
una familia de clase media. Una vieja carpeta con dibujos hechos
por su madre y las revistas de historietas que leía su padre fueron su
modesto contacto con el mundo del arte.
No obstante, desde el jardín de infantes, Fabián se destacó por una
habilidad natural para el dibujo; sobre esa facilidad innata empezó
copiando la colección de comics de su padre, para luego crear sus
propios personajes.
A los 13 años se apasionó por la música, armó su propia banda de
rock y jugaba al fútbol. A la par dibujaba las cubiertas de los long-
plays que, supuestamente, algún día grabaría y a futbolistas en plena
acción de gol. Frecuenta la tapicería de su padre y se familiariza
con las herramientas y las tareas artesanales. Demasiadas cosas para
dejar espacio al colegio: abandona la secundaria pese a que, salvo en
disciplina, era un alumno destacado.
Cuando, en 1986, sobreviene una de las recurrentes crisis
económicas, la familia se muda a San Martín de los Andes: allí (la
necesidad tiene cara de hereje), en pocas semanas Fabián gana fama
como letrista y poco después abre un estudio gráfico dónde, con
éxito, hace trabajos para distintas agencias de publicidad.
Adquiere una cierta holgura económica, se independiza, tiene una
pareja y nace su primera hija.
A principio de la década del 90, en uno de sus viajes a Buenos
Aires, se reencuentra con su hermano Martín (dos años menor) que
había quedado acá. Juntos se proponen canalizar las habilidades que
comparten hacia algo superior e iniciar el camino del arte.
En 1992, Fabián y Martín presentan una muestra conjunta en el
Centro Cultural Amankay de San Martín de los Andes. Son obras
de elaborada factura y cierto carácter onírico que tienen favorable
acogida. Fabián comienza a vender sus trabajos en hoteles, recibe

Nevertheless, since kindergarten Fabián La Rosa stood out for his natural

father’s comics, to then create his own characters.
At 13 he was enthralled with music, created his own rock band and played
football. At the same time, he drew the covers of the longplays that he would
some day record, and also football players in full scoring action. He used to
visit his father’s upholstery shop and became acquainted with the tools and
crafts of the trade. Too many things to leave room for school, so he dropped
out although he was a distinguished student, but not very disciplined.
When one of the frequent economic crises hit in 1986, the family moved
to San Martín de los Andes. Once there, and out of need, Fabián made a
name for himself as a letterist and later on he opened a graphic design studio
with great success, working for different advertising agencies. He became
independent, met his love and later they gave birth to his first daughter.
At the turn of the nineties, in one of his trips to Buenos Aires, he met with
his brother Martín, two years younger, who had remained in the capital.
They decided to use the skills they had in common to rise above and start
walking the art road.
In 1992 Fabián and Martín presented a joint exhibition at Centro
Cultural Amancay in San Martín de los Andes. Those were elaborate works
with a certain onyric trait that were embraced by the public. Fabián started
to sell his work at a hotel, he was commissioned to make some portraits and
he gently abandoned graphic design. When everything in his life seemed to
be falling into place he was overcome by another crisis. This times a personal
one. Fabián separated from his wife and returned to Buenos Aires and the
musical muse seemed to displace art. A new rock band, trips and tours were
the main thing for him for the next three years.

Esta vez personal. Fabián se separa de su mujer, vuelve a Buenos
Aires y la inspiración musical parece desplazar a la plástica. Una
nueva banda de rock, viajes y giras ocupan los tres años siguientes.
En 1998 se reencamina a su primera vocación: vuelve a San Martín
a reencontrarse con la naturaleza y decidido a ser pintor. Sus obras
ahora tienen un marcado estilo realista y de nuevo encuentran
ávidos compradores. Retoma los retratos y se da el lujo de vivir
exclusivamente de su pintura.
También reflorece el amor, inicia una nueva relación y Carolina le
da dos nuevos hijos, esta vez varones.
La etapa ocupa una década en la que Fabián, estabilizado
emocionalmente crece enormemente como artista. Sus pinturas,
hechas con un oficio fabuloso, reflejan una serenidad extraordinaria.

Love also flourished as he started a relationship with Carolina, who gave
him two offspring, this time two sons.
This period encompassed a decade in which Fabían De Rosa was
emotionally stable, and growing enormously as an artist. His painting,
which shows his great skills, reflected an amazing serenity. Everyday objects,
seen through a very sharp eye, gave way to magic creations.
Realism in the greatest expression of contemporary art features in his nudes,
in his fruits and in simple daily life elements. Sometimes he allowed himself
to add small enigmatic details that trapped and disoriented the spectator.
Two years ago La Rosa went back to Buenos Aires. In the belief that he
had found something important to say, he was determined to be heard. Once
again, he burned his boats and decided to face a new stage. Back remained

anomaly or damage. Also featuring is an echo sound, GPS, AM/FM
radio with CD and MP3 players, providing everything needed on board
while still keeping some of the features of jet-skies, with an extra sports

Both models have fine and delicate finishing touches, quite exceptional
for high-speed boats less than six meters overall length.

En cuanto a la habitabilidad, se destaca la gran comodidad interior de
todos sus asientos y el gran número de espacios de guarda para objetos
a bordo. Además, en la versión Speedster 200 encontramos un amplio
solarium de popa, apto para disfrutar de los mejores soles del verano
y una generosa plataforma de baño con su escalera correspondiente.

Con la introducción de la tecnología de motores cuatro tiempos en
un mercado cada día más exigente y ansioso por novedades, BRP
logra ubicar a estas dos embarcaciones sobre la cresta de su gama
de lujo. En el caso de esta marca, los caballos extra se consiguieron
montando un sistema de Supercharged o turbocompresor con
intercooler en los motores, con un concepto muy simple y sencillo.
Esto hace que en altas revoluciones la entrada de aire a los cilindros
sea forzada y enfriada, aumentando su densidad y proporción de
oxígeno, y se obtenga así un gran aumento en el rendimiento.
Según el modelo que estemos probando, BRP ofrece a sus clientes
una amplia gama de motorizaciones posibles. En la versión Speedster
150 se pueden instalar motores Rotax de cuatro tiempos que van de
los 155 a los 255 Hp, dándole al futuro usuario la posibilidad de elegir
la mecánica acorde a sus requisitos de uso. Por otro lado, a la versión
Speedster 200 se la propulsa con dos motores Rotax de 215 Hp
obteniendo una potencia máxima de 430 Hp, dándole a este modelo
una mayor performance, mejor maniobrabilidad y mayor seguridad,
propio de las instalaciones dobles.
Con todo lo anteriormente expuesto se obtiene una excelente
navegación. Las aceleraciones y velocidades máximas en ambos
modelos son espectaculares, con sensaciones muy difíciles de explicar.
El motor y las comodidades interiores permiten transmitir en todo
momento la seguridad anteriormente comentada.
Otro aspecto muy importante en este tipo de embarcaciones es su
bajísimo calado debido al sistema de propulsión jet que poseen, lo
que las transforma en lanchas muy versátiles a la hora de navegar por
nuestros ríos y altamente cómodas para el uso en playas, ya que pueden
ser amarradas en las costas, sin dañar los sistemas de propulsión.
Este gran rendimiento obtenido no está exento de las grandes
emociones, y convierte a estos dos modelos de Seadoo en las

left unattended and they spread and reproduced freely on our pampas for
centuries. Nature did its job, and only the strongest survived.

y se desperdigaron y reprodujeron libremente en nuestras
pampas durante siglos. La selección natural hizo lo suyo, y solo
sobrevivieron los más fuertes.
Fue axial que en las primeras décadas del siglo XX unos pocos
pioneros decidieran recuperar esta raza. Se comenzó su tipificación
y se establecieron los estándares de la actual raza criolla. Y la
Estancia Santa María ayuda a mantener el alto nivel del linaje.
Durante la estadía vale la pena visitar su cabaña (obtuvo
importantes premios), que realiza la cría y selección morfológica
para competir en pruebas funcionales y exposiciones en todo el
país, incluyendo la reconocida Exposición de la Sociedad Rural
Argentina. Sin lugar a dudas, es un atractivo para todos aquellos
interesados en la actividad equina y, en particular, en esta noble
raza que identifica a la historia gaucha argentina.
Aquí verán ejemplares puros de pedigree únicos. Después
de haber aprendido todo lo relacionado al caballo criollo –
historia, evolución, características, reproducción, pelajes, entre
otras cosas– probablemente tengan ganas de conocer el centro
de entrenamiento y pensionado equino de la estancia. El lugar
está abierto a todas las razas, y brinda la posibilidad a terceros de
entrenar sus caballos o simplemente pensionarlos allí. Además hay
varias acciones ecuestres para practicar, como clases de equitación
o adiestramiento del caballo. Pero mi recomendación es que traten
de estar durante el atardecer: lo considero uno de los mejores
momentos para dar un paseo en uno de sus pintorescos carruajes
antiguos.

setting the standards of the present criollo breed: Estancia Santa María

visiting its breeding facilities (they obtained important awards) where the
breeding and morphological selection is carried out to then take part in
shows and exhibitions around the country, including the renowned show
at the Sociedad Rural Argentina. It is a very attractive opportunity for all
those interested in the equine activity and in particular for those keen on
this noble breed that relates to the Argentine gaucho history.
You will get to see unique pedigree horses! After learning all about the
criollo horse, its history, evolution, features, reproduction, and color –among
other things– you will probably want to visit the training center and the
livery facility. The place is open to all breeds and it offers customers to
train their horses or lodge them there. Plus, there are many equestrian
activities to do like show jumping or horse training.
But I personally recommend you to be there at sundown: it is one of the
great moments to go for a ride on one of the estancias´ colourful antique
carriages.
thE truE gAuCho ExPEriEnCE
But this is not all, guests can pick other activities. Maybe they are
interested in taking walks to enjoy the landscapes of Mesopotamia, the
ridges of Entre Rios, the streams or to watch deer, birds like the ostrich,
and the large herds of mares with their colts by them. It is impossible
not feel like a gaucho in these lands, once you experience herding the
cattle on horseback, doing the sanitary checks and roaming the countryside
admiring the pastures and crops.

Como si esto fuera poco, los huéspedes pueden elegir entre otras
actividades. Tal vez les interesen las caminatas organizadas, en
las cuales se disfrutan los paisajes mesopotámicos, las cuchillas
entrerrianas, los arroyos y el avistamiento de aves y ciervos,
ñandúes o grandes manadas de yeguas pastando con sus potrillos
al pie.
Es imposible no sentirse un gaucho en esas tierras cuando se
vive la experiencia de arrear ganado a caballo, se realizan trabajos
de saneamiento y se recorre el campo para ver las pasturas y
sembradíos.
Aunque existe la opción de pasar un día completo comiendo un
asado junto al arroyo y visitando el pintoresco pueblo de General
Almada, con su antigua pulpería; es un desperdicio no pasar una
noche en la casa de estilo colonial criollo, en cualquiera de sus
cinco confortables habitaciones con baño privado. Porque la pileta
o la chimenea y un buen plato de comida casera lo esperará luego
de un excitante día en Santa María.
¿Otra ventaja? Distante a 30 km del centro de la ciudad de
Gualeguaychú, desde el establecimiento se pueden visitar las
playas entrerrianas, hacer un tour de pesca o asistir a su famoso
carnaval durante la temporada estival.
Aquí se disfruta de la auténtica vida de campo, se conocen las
costumbres y tradiciones del gaucho argentino, dándole a usted la
posibilidad de participar de forma activa en las tareas diarias. O,
simplemente, relajarse en un paisaje que lo hará soñar.
Although there is the option of spending a full day relishing an asado near
the stream and visiting the colorful village of General Almada with it old
pulpería (gaucho bar), it would be a shame not to spend the night in the
colonial criollo style house, in any of its five comfortable bedrooms with
private bathrooms. What will await you after an exciting day at Santa
María is the swimming pool or a fireplace and a good homemade meal.
How convenient is this? Only 30 kilometers from the city of Gualeguaychú,
from the estate you can access the beaches of Entre Ríos, join a fishing tour
or attend the famous carnival during the summer season.
