i CINCO DE MAYO • SATURDAY, MAY 5 j The holiday of Cinco de Mayo, or Fifth of May, commemorates the 1862 victory
of a smaller, poorly-armed Mexican militia over a powerful, well-outfitted French army. The Battle of Puebla illustrated the courage and love of freedom of the Mexican people. Today, Cinco de Mayo celebrations showcase the culture, dance, food, and music of Mexico.
MOTHER’S DAY • SUNDAY, MAY 13 Mother’s Day is Sunday, May 13. It’s a day set aside to show our appreciation for
the tender care, selfless devotion, and loving commitment mothers have made over the years. Small acts of kindness and thoughtful words are gifts that will make our mothers feel special on Mother’s Day and all year long. We wish a Happy Mother’s Day to all of our very special moms!

Mexican Scrambled Eggs
Makes 4 servings
Ingredients 1 tablespoon vegetable oil 1 small onion, finely chopped 2 serrano or jalapeño chilis, seeded if desired 3/4 pound tomatoes, cut into small dice 1 clove garlic, minced 4 tablespoons chopped fresh cilantro Salt to taste 8 large eggs
Directions Heat oil in a large skillet over medium heat. Stir in the chopped onion, and cook until tender, about three minutes. Add the chilis, tomatoes, garlic, and half the cilantro. Cook well, stirring often, until the tomatoes have cooked down completely and the mixture is lightly browned, about five minutes. Season with salt to taste.
Beat the eggs in a medium bowl, and add salt to taste and the remaining cilantro. Add to the pan and cook, stirring constantly until the eggs are scrambled.
Hint: serve with browned chorizo sausage as a savory and spicy accompaniment.
