On November 8-10, the 12th Annual South Carolina Bank and TrustHilton Head Oyster Festival returns to Shelter Cove Community Park.Highlights include oysters, shrimp, chili, chowder, hot dogs, hamburgers,live music, kids activities and more.
Also, don’t miss the 24th Annual Taste of the Season, presented by theHilton Head Island-Bluffton Chamber of Commerce, on November 22at the Hilton Head Marriott Resort and Spa in Palmetto Dunes. Moving from the mist into the light inNorthern California’swine country.
Standing at the mouth of the Russian River,enveloped in a cold Pacific maritime fog,we really began to get a palpable sense ofthe “terroirs” we were about to encounter.
Terroir is the term used to describe the completenatural environment in which a particular wineis produced, including factors such as the soil,topography and climate.
O.K., I will admit Highway One is scary! Butthe steep rocky cliffs of the Sonoma Coast arewhere we needed to begin our journey intoWest Coast wine country. The Sonoma Coastterroir is shrouded in a cool mist and fog,which keep temperatures at night in the 40’s,rarely venturing above 70 during the day.
This cool, sometimes harsh, climate providesfor a long, cold growing season, which imbuesunique characteristics into the Pinot Noirs andChardonnays of northern California. The yieldsare low and the grape clusters are small,creating a thick skin and a high skin-to-juiceratio. These characteristics produce winesthat are highly complex, with a wonderfulbalance of acid and mature fruit.
Leaving the rocky coast, we headed east throughmisty redwood groves on a road snaking alongthe Russian River. Traveling into the narrowRussian River Valley, we began to see the grad-ual changes in our surroundings, signalingthe fact that we were entering into anotherunique growing region. We were beginningto discern the terroir of the world-famousRussian River Valley.
While the fog was still a significant feature as
we entered the valley from thesouthwest, it slowly gave way to asunny dry heat when we reached
Healdsburg, 26 miles away, to the northeast.At approximately 126,000 acres, the RussianRiver Valley is so large it can be divided intothree sub-regions, depending largely on thedistance from the Pacific Ocean and theelevation.
Traveling through the valley we saw how themountain peaks – some nearly 2,000 feethigh – create conduits through which coldmaritime air and fog penetrate miles inland.This is the key ingredient that makes RussianRiver wines so remarkable. Tempered by thedistance from the coast, the cool Pacific airacts as a moderator, preventing large swingsbetween daily high and low temperatures.
There’s no question that this is where PinotNoir shines. Because there are so many climateand topography variations within the valley, it’snot surprising how diverse the flavor profilesare throughout the region. From the spiced,piney quality which comes from the coolerfoggy part of the region to the rich, bold andfull-bodied wine derived from the warmer, dryerregion towards Healdsburg, a Pinot Noir lovercould get lost here forever!
We couldn’t linger too long, however, as we hadmuch more exploring to do. To be continued…

Although mucky and smelly, the salt marsh is an important part ofthe Lowcountry.
In actuality, the salt marsh produces more food for the environmentthan rain forests. The green grass that dominates the marsh is calledsalt marsh cord grass or Spartina. When this cord grass dies eachwinter and decomposes, its nutrients are released into the marshmud, creeks, streams and even into the ocean. These nutrientsbegin the food chain for the entire Southeastern coastal area.
So, the next time you enjoy a meal of shrimp, mussels, oysters, bluecrab, stone crab or saltwater fish, thank the muddy salt marshes.

A master of camouflage, the flounder isone of the oddest looking fish swimmingin our local waters.
A flat fish with both eyes on one side of its body,the flounder has the capability of altering itscoloration to match the bottom of the ocean,where it lies in wait for its prey. Jaws full of sharpteeth expand to facilitate the lightning-quickstrike, which is usually followed by returning tothe bottom to savor its catch. This behavior canpuzzle an angler who is fortunate enough tohook a flounder.
When drifting a bait on a cork, the cork will oftenstop as if it were stuck on the bottom. Whencasting an artificial, the flounder bite feels likea snag. As you reel the flounder in, it may feellike dead weight initially, until the fish starts tobattle. Then, hold on! Using its flatness andmuscle, the flounder can put up a great fight.
Flounder are not born with both eyes on oneside of their body. They go through a metamor-phosis, which occurs when they transition fromthe larval state to the juvenile state. The topside of the fish, where the eyes are, is darkwhile the bottom side is white. I have seensome flounder that were partially dark on thebottom, but this is a rare sight.
One thing is for sure: most people know howdelicious the flounder is, which explains why it iswidely sought commercially and highly valuable.
Locally, the flounder is a pleasant surprise toanglers chasing the more readily availablespeckled trout and redfish. To our north – fromMyrtle Beach to New York – anglers are blessedwith better flounder fishing as they tend toschool up more so than here. Occasionally,large numbers can be caught at the offshorereefs near Hilton Head Island. However, inshoregigging tends to be a more efficient method ofprocuring better numbers of flounder.
The weather has cooled and so has the water,offering better clarity. November throughJanuary is a great season for artificial baitssuch as the soft plastic Gulp variety, the screw-tail and paddle tail plastic jigs.
There is certainly an abundance of speckledtrout and redfish around at this time of year. Ifyou’re lucky, that “snag” you feel on your linejust might turn out to be a bonus flounder!

Great White Sharks are magnificent top preda-tors found along almost all coastlines of theworld. These creatures are thought of asdangerous “people eaters” due to Hollywoodportrayals. However, Great Whites aren’tinterested in humans. In fact, Great Whiteattacks happen by accident, when thesegiant fish mistake humans for seals or othermarine mammals they prey upon. Humansdon’t taste good to Great Whites, so in mostcases they bite and then move on.
Carchardon carcharias share an ancestry datingback 400 million years. Their ancient ancestors,Megalodon, are considered to be older thandinosaurs. Great Whites have large torpedo-shaped bodies with strong tails, enabling themto swim up to 35 miles an hour. They can live tobe up to 60 years old, reach up to 20 feet inlength and weigh up to 5,000 pounds. Males willmature when they are 10 years old, while femalesmature at the age of 16. Great Whites prefercooler waters and have one of the largest, mostdiverse migration patterns of any animal.
Great White sharks are intelligent creatures withsix senses that are highly tuned for their predatorylifestyle. They have an acute sense of smell andcan detect one drop of blood per 10 billion dropsof water. Their ears are small slits located behindand above their eyes which sense vibrations froma great distance. They also have specific ear stoneswhich sense gravity and allow them to orient them-selves in the water. The Great White’s retinas aredivided into two parts, providing acute vision byday and by night. Their sense of touch allowsthem to feel vibrations in the water from up to820 feet away. Their sense of taste is also sharpdue to taste buds located throughout their entiremouths. Their sixth sense is electro-perception,which they use for navigation across the ocean.Specialized pores located on the underside of theirsnout allow them to feel electrical currents along
the ocean floors.
Great White Sharks are con-sidered to be a ThreatenedVulnerable species. Humansare the most common predatorto Great Whites. These creaturesare often killed due to “catch
casualties” by commercial fishermen. They’realso hunted for their fins, which are made intosoup in many countries. Pollution in the ocean,including heavy metals and toxins, is alsocausing declines in population among theGreat White species.
Ocean Research, a group of scientists andresearchers interested in learning more about GreatWhite behavior and migration patterns, have tag-ged Great White Sharks along the U.S. Atlanticcoast and South Africa. Information is used to learnabout the biology and health of these creatures.
According to Ocean Research, three Great Whiteshave been spotted off the South Carolina coast:Genie, a 14.8-foot female weighing 2,292pounds; Lydia, a 14.6-foot female weighing2,000 pounds; and Mary Lee, a 16-foot femaleweighing 3,456 pounds. Mary Lee, in particular,has spent a lot of time off of our Southern coast.Her tag identified her at the mouth of the PortRoyal Sound in South Carolina on Thanksgivingof 2012 and placed her along the coastline ofJacksonville Beach in Florida in January of 2013.

As the air temperature drops in November, sotoo does the water temperature. This colderaquatic environment leads to a slowing of thegrowth of plankton and, consequently, clearerwater. It also facilitates the annual dying off ofthe spartina alterinflora, which turns the brightgreen marsh grass of summer into a still, deadsavannah.
Most importantly, however, November marks thepeak of oyster season. In the Lowcountry, there’sonly one way to eat oysters – at an oyster roast.A grill is typically set up over open flame, theoysters are placed on that grill and then coveredin a wet burlap sack. The wet burlap seals in theheat and steams the oysters. You know they’redone when they just pop open.
The steamed oysters are dumped on a table,which is outfitted with shucking knives, rags,paper towels, lemon slices, saltines and variouscondiments. Everyone gathers around the tableand, holding the oyster carefully with a rag, usesthe knife to pry the oysters open and reveal theirjuicy meat. What a great way to enjoy beingoutside this month!
The oyster shells are collected separately fromthe other trash, and taken either to an OysterShell Recycling Facility or put back in a salt river.The shells will weather on the riverbed, and thecalcium they contain will become available forgrowing oysters to absorb. Oyster shell recyclingis vital to maintaining a healthy oyster population.
Oyster season in South Carolina runs fromSeptember through April – all the months thatcontain the letter “R.” In the summer, warm waterfacilitates the fast breeding and growing of manytiny plants and animals that are suspended in ourwaters. Some species of summertime planktonare bacteria (and most are harmless), but someare harmful to humans if ingested. Oysters arefilter feeders, passing gallons of water through
their bodies each day, filtering out particles forfood. For this reason, they are better eaten whenit’s too cold for harmful bacteria to grow in thewater, and ultimately, to enter the oysters’ bodies.
To harvest oysters, it is best to see a professional.The thin calcified layers of the oyster shell arevery, very sharp and require skill and equipmentto harvest correctly. Oysters can live for up to 30 years and grow tobe more than a foot long, but most of the oystersaround here aren’t quite that big. Oysters start outas free floating plankton, then attach themselvesto whatever looks like it isn’t going anywhere,most often other oysters. There they stay for theirentire lives.
Oysters have few natural predators, since theirtough shell keeps most things out. Since they can’tmove, these bivalves are susceptible to changesin salinity and water quality. A flood or a droughtcan kill miles of oyster beds. Competition forspace on a mud bank is another threat to theoyster. New oysters can slowly bury older oystersuntil they suffocate and die.

Sitting behind first base at an AtlantaBraves game, I had a great view of thebatters as they hit the ball.
I realized that, in many ways, the impact whenthe batter hits the ball looks the same as theimpact when a golfer hits the ball on thePGA Tour.
Here’s a quick checklist to keep in mind whenhitting a golf ball effectively:
1. An outside observer can see the belt bucklemoving to the target, creating centrifugal force
2. Centrifugal force straightens and extends your left arm
3. A good 80% of your weight is on your leftfoot
4. Your head remains to the right of the ball 5. The right heel is coming off the ground 6. The right knee is pivoting toward the target
There’s a lot golfers of all skill levels, fromamateurs to pros, can learn from other sports.You may be surprised to learn that tennis play-ers tend to make great golfers. The majorreasons are the similarities in the mechanicsinvolved in both sports. The forehand in tennisis a rotation to the back foot and then a rotationto the front foot. The same core muscles do thework in a proper golf swing. Every time a tennisplayer strokes a forehand they’re developingthose muscles.
Take your hands and place them on the sidesof your trunk above the belt line and belowyour ribs. Now laugh and feel the contractionof the oblique muscles. This muscle squeezesyour lungs and forces the air out of your lungsfor a hearty laugh. The same action takes placewhen you cough. Triggered by the need to clear
your airways, these muscles contractand force the air out of your lungs.
Tennis superstar Rafael Nadal hasdeveloped the oblique muscles and
increased his racket speed considerably. GrandSlam winners who have pursued competitivegolf include Ivan Lendl, Leyton Hewitt andStan Smith.
Tennis players have a head start in learningproper golf. I invite you to give your knees arest and begin the natural transition to golf. Youcan learn to be an athletic golfer like BobbyRiggs, who visited Palmetto Dunes Resort fre-quently in the ‘70s and ‘80s. Mr. Riggs wouldplay tennis in the morning, eat lunch and (with-out changing clothes) go to the driving rangelooking for a golf game.
Jack Nicklaus broke down a barrier separatingthe active tennis players and the perceived non-athletic golfers who rode in carts or walked. WhenNicklaus built a tennis court in his back yard,and a photograph of him playing tennis with hisfamily appeared in a national magazine, peoplebegan mixing the sports in their agendas.
Now, we know the two games complementeach other quite well. The bottom line: you’llplay better tennis if you play golf and vice versa.
With cooler temperatures settling in and plentyof sunny days, November is an ideal month totee off on Hilton Head’s championship golfcourses.
Make the most of your time on the course thisseason. I hope to see you out on the green!
