TUNA CHICHARON
A healthier variant of the famous Filipino snack locally known as tuna chicharons “chicharon”, the Tuna
“chicharon” or crackling is a deep fried dried tuna. Paired with vinegar, this all time favorite snack ease

ATCHARA
Served as a relish to grilled or fried dishes, Atchara’s primary ingredient is grated unripe papaya. Raisins,
pineapple chunks, carrots, ginger, bell pepper, onion, garlic and spices such as chilies, freshly ground
black pepper, red pepper flakes, or whole peppercorns make up the other ingredients. These are then
mixed in a solution of vinegar, sugar, and salt preserves.
To preserve its freshness, atchara are stored in airtight jars or stand up plastic pouches. However, once
opened atchara is preferably stored in refrigeration to maintain its taste. The nutrients of atchara is
determined by it’s several main ingredients.

CIVET COFFEE
Renowned as the world’s most expensive and best tasting coffee, “kape melo” or “kape musang” as
known locally in Mindanao and “kape alamid” in Luzon is made from the beans of coffee berries which
have been eaten by the Asian Palm Civet (melo or musang, a small, fruit eater, nocturnal and spotted
gray and black mammal).
The coffee berries passed through the musang’s digestive tract, go through physical and chemical
changes where the seeds or coffee beans are still intact after it has been excreted, it is then gathered ,
carefully washed, sun dried, roasted, ground and brewed. Its unique process makes the coffee
expensive.
“Kape melo” or “kape musang” has rich and strong aroma, its texture is thick and less bitter-naturally
sweet taste compared to any other coffee in the world.

TUNA VALUE ADDED PRODUCTS
The city of General Santos is known as the Tuna Capital of the Philippines. The demand for tuna and
tuna based products both the local and international markets contributed in the growth of investments
in businesses along its value chain, from fishing to processing.
Several entrepreneurs in the city are engaged in production of tuna value added products (TVAP) such
as chorizo, patty, ham, sausage, hotdog, nuggets, steak, spicy chunks, barbecue, shanghai, tocino,
embutido, bola-bola, longganisa, siomai, lumpia and molo. Each TVAP are prepared with corresponding
ingredients and has distinct flavor.
The health benefits derived from tuna made it a great alternative to other red meats such as pork and
beef. Tuna is loaded with protein and other vitamins and minerals such as magnesium, potassium,
vitamin B6, vitamin B12, and folic acid. It is rich in Omega 3 fatty acids that reduces the risk of
cardiovascular diseases and lowers blood pressure; Selenium that enhances immune system and
metabolism; and Niacin that helps improves brain function.

DRIED FISH
Dried split fish, commonly known as “tuyo” is the fish that has been converted from the fresh state to a
much lower moisture level with the use of heat usually mixed with salt to maintain its acceptability over
an extended period of time.
The process of drying fish preserves the fish that can be stored for months. Dried fish is common and
favorite breakfast for many Filipinos.
