McCarthy, 54, of Aaronsburg RD, professor in the Department of Food Science in the College Pennsylvania State Uni- versity, died Tuesday, June 16, 1987. McCarthy began his career at The Pennsyl- vania State University as a research associate in dairy science in 1958, was made assistant pro- fessor in 1961, associate professor in 1965, and professor in 1971. McCarthy received his bachelor's and master's degrees in dairy science from The Pennsylvania State University. Most of his research focused on the nutri- tional and health aspects of dairy products. He helped develop considerable national prominence for the Department of Food Science. Along with his research activities, he taught 13 different courses at various times at The Pennsylvania State University. He was well liked by his students and McCarthy's concern for the welfare of his students was appreciated and returned in kind. McCarthy received the Borden Scholarship and a Gamma Sigma Delta research award and was a member of Phi Kappa Phi, Sigma Xi, Gamma Sigma Delta, the American Dairy Science Association, the American Institute of Nutrition, the New York Academy of Science, and the American Association for the Advancement of Science.
