Specialty teas are growing in sales and the number of new products that are entering the market.

We will spend time on tea estates in Sri Lanka to understand how to craft the perfect blend and the authentic way to serve tea.

Cous Cous and Spice

Moroccan and African !avours are growing in popularity in Australia

A visit to the spice markets of Morocco and the artisan tagine makers will allow us to understand the unique !avour combinations and cooking techniques of this cuisine.

The Long Pour Tea Ritual

The long pour mint tea is another Moroccan tradition that we want to understand.

The rituals of tea are emerging in the café scene as much as the coffee rituals, we want to learn more about them "rsthand.

The Revival of the Salami

Australians love their smallgoods. Through the Czech Republic, Austria and Northern Italy we will learn the tradition of Salami from the Flieshmiesters themselves.

Then Contrast this perspective with the Deli culture of New York, where the pastrami on rye is just as effective as a doorstop as it is a lunch.

Traveling through Northern Italy we will visit the local markets and learn about pasta traditions and food from the source.

Island hopping through Croatia we hope to uncover the secrets of cooking amazing seafood.

These villages all have their special way to serve their local produce and we will uncover it and share with you.
