Ingredients for cooking Paella of Seafood

All the ingredients are:

• 1 cup diced tomatoes• 4 cups fish stock• 2 cups water

• 1 pinch saffron + 1 cup water• 4 tablespoons olive oil• 2 tuna breast

• ½ kg prawns

• 2 pieces of squid• 1 tablespoon paprika (pimentón dulce)• 2 red peppers, cut into thin

strips• 3 cloves garlic, minced• 4.5 oz (125 g) snails (weight of drained, canned snails)

• ½ kg Mussel • 2 cups short grain rice, preferably Sollana or Bomba varieties• Salt, to taste• Special equipment: Large, heavy-bottomed stovetop-safe baking vessel (e.g., Dutch oven)

• Step 1. Heat the oil in a large paella, toss the 3 garlic cloves, and wait a few minutes.

• Step 2. Add the squid,

• -add 5 tablespoons of tomato paste

• -stir it all well for mixed the tomato

• -After about five minutes or so, we add the paprika and return to mix it well

• Step 3. Mix the paprika,

• -remove everything right and after add the saffron.

• -leave everything for a few minutes.

• Step 4. left it over medium heat.

• -The rice take saffron color, add salt

• Step 5. When you see the rice, is the signal to throw the crawfish and shrimp and

• -let it all cook for 20 minutes over medium heat with the lid on for the broth,

• -If we run out of stock quickly, we can take a little fish stock.

• Step 6. Past 20 minutes left the rice sit for a couple of minutes and is ready to eat.
