A half hour is enough, and sometimes I will stretch it to forty-five minutes; if it's a dinner for more than a hundred, maybe an hour.

It's rude to everyone else who got there on time. If you're more than a half hour late from the time you were invited, call to let your host know. When the food's ready, we eat.

Keep it light-nuts, crudités with hummus, and pea pâté will fill the bill.

I put people where I want to. I like to mix it up. If it doesn't work, it doesn't work. You never know. Sometimes the best things come out of the worst situations.

Do not tolerate seat changing

My attitude is, if you are not enjoying yourself here, go someplace else.

Don't plate food.

It's old-fashioned. I like people to serve themselves from passed platters or a buffet. That way they can eat what they want, and there is not a lot of wasted food.

I love desserts and serve lots of them.

I serve a variety of desserts, especially cookies and dark chocolate. I think it's fun, and they look great after a good meal. If people are on diets, they can just pass.

Serves 4 -- Total time: 45 minutes

3 cups amaranth1 medium onion3 tablespoons olive oil, divided2 zucchini1 small eggplant (you want to end up with 1-1/2 cups after its is cooked)1 garlic clove4 large blossoms per serving1 tablespoon finely chopped parsley

1. Bring 3 cups of water to a boil and add amaranth. Simmer and cook until water is absorbed, approximately 20 to 25 minutes.2. Quarter the onion and cook in 1 tablespoon olive oil for 30 minutes over medium heat until caramelized.3. Dice zucchini and sauté in 1 tablespoon olive oil until soft, approximately 5 to 7 minutes.4. Dice eggplant and garlic and sauté in 1 tablespoon olive oil for 10 minutes.5. Mix the cooked vegetables with the amaranth and add parsley. Fill the squash blossoms with the mixture. Serve at room temperature.
