PETER DILLON | Director of Winemaking

Peter is an experienced wine show judge and a 2016 Len Evans Scholar. During 10 years at Accolade Wines he gained wide experience in large-scale operations in different wine regions.

Before joining Handpicked he was senior winemaker at Larry Cherubino Wines, working across regions in Western Australia. Peter brings a wealth of technical skill and management experience to the team.

JONATHON MATTICK | Assistant Winemaker

Jonathon has a background in cooler climate regions with a formal education in Bachelor of Science (Wine Science of course!) from Charles Sturt University.

Based at Capella Vineyard on the Mornington Peninsula, Jonathon believes in a minimal intervention approach to winemaking and that wine is made in the vineyard; if you can get that right everything else will follow from there.

CHARDONNAY | Yarra Valley, Victoria AU 2015A blend of two Chardonnay clones from our vineyard in Yarra Glen, this wine is richly scented with stone fruits, citrus and oak and has a full-fl avoured palate with a crisp fi nish.

CHARDONNAY | Mornington Peninsula, AU 2016A great vintage produced this wine with lifted citrus and fl oral aromas. The palate has layers of fruit fl avour and complexity derived from 11 months ageing on lees in barrel.

GRENACHE | Barossa Valley, South Australia AU 2017From old bush vines at our Watunga Road Vineyard, this wine is proof, if any were needed, that Grenache and the Barossa were made for each other. The wine was aged for 10 months in French oak, a small portion of it new.

PINOT NOIR | Mornington Peninsula, AU 2017The Mornington Peninsula is famous for its Pinot Noir wines and this is a fi ne example from a standout vintage: vibrant cherry fruit and spicy oak, a silky smooth palate with fi ne tannin and a fi nish that goes on to tomorrow.

PINOT NOIR | Tasmania AU 2017Tasmania is a true cool climate region with a reputation for ultra-premium Pinot Noir. With fruit from vineyards in the Tamar Valley and Pipers River, this wine has pretty fl oral perfume and bright fruit with hints of herbs and oak complexity.

PINOT NOIR | Yarra Valley, Victoria AU 2015From one of Australia’s premier cool climate wine regions, this wine has a powerful nose of sour cherry, cinnamon and cloves. The medium weight palate has a mix of fruits with oak and textural lees characters creating a rich mouthfeel.

PINOT NOIR | Central Otago, New Zealand 2015This is a rich and generous wine with a fragrant nose supported by a full-bodied and earthy palate. The fruit was grown from a single vineyard site on the slopes of Mount Barker just outside of Wanaka.

Nestled at the north-eastern end of the Mornington Peninsula is our Capella Vineyard, where Pinot Noir and Chardonnay vines are planted around a beautiful lake that is home to many native bird species.

Fruit from select blocks at Capella Vineyard is handpicked, destemmed and sorted by hand to ensure only the fi nest berries make it into this beautifully perfumed, supple and silky wine. The aromas are classic Pinot Noir – cherries, strawberries and earthy spice - with the purity and perfume we have come to expect of Capella Vineyard. The palate combines power and grace with great texture and silky-smooth tannin.

The Vineyard:

The most elevated vineyard in the region, Wombat Creek grows fi ne Chardonnay and Pinot Noir. The surrounding fern gullies and forest are home to lyrebirds, koalas, kangaroos and, of course, wombats.

Beautifully elegant and exceptionally complex with a mouth-watering long fi nish. Zesty grapefruit pith, white nectarine and grilled nuts with layers of fl int and cigar box oak complexity; tight acid line that drives the long fi nish and keeps you coming back for more.

WOMBAT CREEK PINOT NOIR | $19 / GLASSYarra Valley, Victoria AU 2017

Our fi rst Pinot Noir wine from this premium high-elevation vineyard shows beautiful purity of fruit with velvety tannin and great depth of fl avour from established vines. This is a single clone wine of MV6 Pinot Noir.

HIGHBOW HILL MARSANNE | $19 / GLASSYarra Valley, Victoria AU 2014This is a full-bodied white, similar to the Rhone-style in France. It has a very complex nose with aromas of dried pear and fi eld honey. The palate is rich with spicy pear and nougat fl avours and creamy texture.

HIGHBOW HILL PINOT NOIR | $19 / GLASS Yarra Valley, Victoria AU 2015Using only the fi nest fruit from select blocks at our Highbow Hill Vineyard, this wine has concentrated berry fruit fl avours and fi ne tannin.

HIGHBOW HILL CABERNET SAUVIGNON | $36 / GLASSYarra Valley, Victoria AU 2014This is an elegant, perfumed Cabernet with lovely purity of fruit and a captivating nose of blackberry and dark cherry fruits with mocha and chocolate oak character.

An ancient granite outcrop separates Brindle Vineyard from Wilyabrup beach and the Indian Ocean, which brings soothing breezes year-round. The soils of decomposed granite with coffee rock and iron stone produce wines of great complexity.

A rich, full-bodied and well-balanced wine from an exceptional vintage. Brindle Vineyard brings out the best in Merlot with this rich and supple wine. Plush red and black berry fl avours with dark chocolate and herbs are wrapped in soft but emphatic tannin.

SHIRAZ Nº.2Barossa Valley AU 2012

This wine is made in the renowned Barossa style - rich and generous with great depth of fl avour. The nose is a complex medley of spicy dark fruits and fruit cake; American and French oak adds notes of vanilla and cedar. The full-bodied palate has intense fl avours of plums and raisins balanced by natural acidity and robust, integrated tannin.

A beguiling combination of rich fruit, savoury spice and earthy depth, this wine is at once powerful and refi ned. The palate is full and seductive, with concentrated dark berry fruits leading the charge. There are layers of black pepper, herbs and the savoury complexity of seamless French oak. Assertive tannin confi rms this is a serious wine, but the tannins are perfectly rounded and fl awlessly fi ne. This is a wine of rare poise and sophistication that will develop gracefully over the long term.

This wine has the distinctive bay leaf aromas of Margaret River Cabernet together with deep cassis, chocolate and lifted red berry freshness. The palate has brooding blackberry and cassis boosted in the mid-palate with generous bright red fruits from Merlot. Classic Cabernet structure and drive produces a long tail of fi ne tannin and crisp acid reinforced with subtle oak and appealing mineral notes.


Beaufort | Comte style, with more grown up spiritous notes (Jura, FR)

CABERNET SAUVIGNON Nº.5 Coonawarra AU 2014

This wine is from Coonawarra’s famous terra rossa strip, a special batch of earth that produces Cabernet wines of rare distinction. This wine has all the defi ning aromas of Cabernet Sauvignon – cassis, ripe blackberry and a leafy freshness – with the added depth of mint and dark chocolate that is quintessentially Coonawarra. The palate is full bodied with deep cassis and blackberry fl avours layered with rich dark chocolate, mint freshness and subtle cedar and toffee oak notes. The tannins are fi rm and fi ne, driving to a long and satisfying fi nish.


Mahon Curado | 6-month Spanish cheese, hints of paprika (Mencia, SP)

SHIRAZ Nº.3 Beechworth AU 2012

Complex and self-assured, this is a bold wine for the serious Shiraz lover. The alluring nose has aromas of dark berry fruits, spice and a hint of ivy. The full-bodied palate is intense with loads of rich, dark berry fruit laced with graphite. Oak tannins add to the fi rm structure, yet the fi nish remains smooth and surprisingly soft for such a big wine.

VERMENTINO | Murray Darling, AU 2017

Vermentino is a white grape variety traditionally grown in northern Italy and on the islands of Sardinia and Corsica.

Bright, clear pale lemon in colour. The nose has fresh lemon and a grassy note, with added depth of peach and just a touch of honey. The palate is light with fl avours of citrus and loquat fruit, almond meal and a fl inty line accompanied by fresh acid.

FIANO |Murray Darling, AU 2017

Fiano is a white grape variety originally from the region of Campania, around Naples in southern Italy. It is also grown extensively on the island of Sicily and is gaining in popularity in warm regions of Australia.

Clear, bright, pale lemon in colour. Aromas of white fl owers and chamomile. The palate is medium-bodied and textured with an appealing waxy character and fl avours of unripe nectarine and spicy notes.

NERO D’AVOLA |Murray Darling, AU 2017

Nero d’Avola is a black grape variety native to the island of Sicily, off the toe of the Italian peninsula in the Mediterranean Sea. Its name, translating as “black of Avola”, is derived from the town of Avola in the south of the island.

Bright, clear, medium purple in colour. The nose has aromas of bright red berry fruits and red cherry and the palate is quite light with juicy red fruits, a touch of spicy pepper, fresh acid and light tannin.

NEBBIOLO ROSÉ |Pyrenees, AU 2018

Nebbiolo is a very old black grape variety that originated in Piemonte, north-west Italy, where it produces the big, bold, age-worthy reds of Barolo and Barbaresco that are among Italy’s most revered wines.

Deep, vibrant blush in colour. The nose has intense redcurrant and strawberry aromas, with a touch of rose petal. The palate is medium-bodied with a velvety texture and fl avours of raspberry. The fi nish is savoury with a touch of lingering spice.

BADLANDS PALE ALE |4.6% alc, 350ml, Orange, NSW

Badlands Brewery is Orange’s longest established craft brewery, specialising in a large range of small batch-brewed beer. Jon Shiners beers are produced with a commitment to quality and balance with only the highest quality ingredients used in all of his brews. Badlands Beers are carefully crafted in small batches and are unfi ltered and unpasteurised.

The pale ale is a golden beer brewed in the traditional English Summer Ale style. Goldings hops add fruity, earthy and grassy fl avours with a crisp, bitter fi nish.

SMALL ACRES PÔMME CYDER |5.0% alc, 350ml, Orange, NSW

Jamón Ibérico de Bellota, the incredible cured ham made from free-range, acorn-fed pork, is the ultimate of its kind. Cured for over two years, thin slices of this delectable ham glisten with benefi cial fats that are the key to its profound, complex fl avor.

Cinco Jotas uses only 100% genetically pure bred Ibérico pigs that live their entire lives roaming the countryside of Spain.

The hams come from an ancient breed of pig, Cerdo Ibérico, which has been roaming the woodland meadows of western Spain feeding on acorns for thousands of years. Jamón Ibérico de Bellota is the pride of Spain, and Spaniards consume the

vast majority of the limited number of hams produced in their own country.

Each fall, a traditional group of breeders set aside a select group of young pigs, allowing them to roam the dehesa wood-lands. There they feast upon acorns which are falling in abundance from the holm oak and cork trees. They feast on these

‘bellotas’ (Spanish for acorn) themselves, putting on at least two pounds of weight each day!

When it is time for their sacrifi ce, these genetically unique animals produce Jamón Ibérico de Bellota hams that are marbled with rich golden fat infused with the fl avor of the sweet bellota acorns. Remarkably, a good portion of which is mono-unsatu-

rated, similar to healthy olive oil. Sliced paper-thin, it glistens at room temperature and provides an inimitable rich nutty fl avor and tender texture.
