Quality Tips

• See instructions in the Toddy® maker for first time assembly• Prior to preparation – fill Toddy® maker with water and make sure the spigot is sealed tight to avoid leaks• Ensure Toddy® maker is clean and dry before each batch is brewed• Always use cold filtered water when preparing Cold Brew coffee• Shelf life for Cold Brew concentrate: o 5 days refrigerated – should not be left out on counter• Compost Toddy® filter and grounds when complete

Toddy® Daily Cleaning Guide

Standards• The internal and external parts must be free of coffee oil build-up and odor. • Equipment must be washed, rinsed, sanitized, and then air dried after each use. • Use sanitizing solution to sanitize all food contact surfaces, countertops and store equipment.

What is Cold Brew Coffee?Cold brew coffee relies on time vs. heat for extraction, which allows the coffee to develop a naturally sweeter taste with low acidity and creating a smooth, full bodied experience.

Full bodied blend starting with washed African coffees, which lend citrus flavor to the cup of balanced Latin American beans adding sweet, chocolate notes. Delivering the smooth, sweet flavor of a cold brewed coffee.

5• Wash, sanitize and dry the Toddy® Brewer.

• After 20 hours, transfer Cold Brew concentrate into plastic dispensing pitchers - recommend 2 liter acrylic pitcher o Do not lift filter from Toddy® maker – do not squeeze filter, it could tear or burst• Day dot or mark each container with the 5 day shelf life and place in refrigerator

• Pour proper amount of cold filtered water on top of the closed filter. Ensure the filter is completely saturated • Cover the Toddy® Brewer with the lid and let the coffee brew unrefrigerated for 20 hours o Do not store Toddy® on floor while brewing• Date dot (mark with time) the Toddy® Brewer with the brewing end time

• Pour proper amount of cold filtered water into the filter, ensuring all grounds are wet o Use 2 liter pitcher to measure correct amount of water • Tie the string in a knot around the filter, leaving 3-4 inches at the top

• Wash hands and put on food service gloves• Open filter and place into the dry Toddy® Brewer • Fill with proper amount of pre-ground coffee

3• Fill each keg with diluted cold brew coffee• Mark kegs with 5 days shelf life• Put cold brew kegs in refrigerated keg dispenser

• After chilling for 6 hours, remove Toddy® brewer from refrigerator and dilute with an equal amount of cold filtered water based on cold brew concentrate volume (should be 10 liters) to the Toddy® brewer

• After brewing for 20 hours, transfer Cold Brew concentrate into a clean Toddy® brewer• Refrigerator drained cold brew for 6 hours – mark Toddy® brewer with time

Follow steps 1 through 3 of the Starbucks® Cold Brew Coffee Product Card for core cold brew preparation

instructions before starting the steps below.

Follow the refrigerator dispenser operator manual for all operation and cleaning instructions. It is the operator’s responsibility for all refrigerated

dispensing operation, maintenance and cleaning.

These instructions demonstrate steps to prepare cold brew after it has been brewed for 20 hours. Always follow instructions for 4 – 20oz bags for keg dispensing. This will yield you enough cold brew to fill two 3 gallon kegs.

3• Fill ice chamber and lock into place in 3 gallon dispenser• Pour cold brew coffee from Toddy® brewer into 2 liter pitcher • Fill 3 gallon acrylic dispenser with cold brew coffee – avoid pouring cold brew coffee into ice chamber

• Dilute cold brew coffee concentrate by adding an equal amount of cold filtered water to achieve a 1:1 ratio in the Toddy® brewer

• After brewing for 20 hours, transfer Cold Brew coffee concentrate into a clean Toddy® brewer

Chilled Inline Cold Brew Instructions

On this card you’ll learn step by step directions for preparing Starbucks® Cold Brew Coffee for dispensing out of an approved chilled inline dispenser.

Follow steps 1 through 3 of the Starbucks® Cold Brew Coffee Product Card for core cold brew preparation

instructions before starting the steps below.

Hold time for chilled inline/self-serve cold brew is 12 hours. Cold brew coffee should be disposed of after 12 hours.

These instructions demonstrate steps to prepare cold brew after it has been brewed for 20 hours. Follow 2, 3 or 4 bag instructions for chilled inline dispensing. Cold brew for inline and banquets self-serve should always be served in a dispenser that includes an ice chamber. Ice should not be added directly to the dispenser.
