ESCAPE TO GRACELANDHOME OF ELVIS PRESLEY

Less than an hour’s drive from the hustle and bustle of New Orleans, Houma offers a chance to dive deep into “Cajunicity,” the joie de vivre that’s ingrained into every part of the culture. The city is home to the second largest Mardi Gras celebration in the state, with costumed revelers, tons of great throws, and more than a dozen parades full of colorfully-decorated floats. DIRECTIONS

Place the peppercorns, coriander, clove, and allspice into a spice grinder and grind for 10 to 15 seconds (yes, you can certainly just use a prepackaged crab boil seasoning).

Fill a 40-quart pot with 5 gallons of water and add the freshly ground spices with remainder of seasonings & bay leaves. Cover and bring to a boil over high heat (this may take awhile).

Rinse the crawfish thoroughly in the bag in which they arrived to remove excess dirt and mud (sometimes this works best by placing the crawfish in a sink full of cold water and stirring to remove dirt…no one likes a gritty crawfish).

Once the seasoned water comes to a boil, add the potatoes, corn, garlic, and sausage. Cover and cook for about 10 minutes.

Add the crawfish, cover, and cook for 3 minutes. Turn off the heat and allow the pot to sit, covered, for 10 minutes. Drain well and serve immediately.

8 pieces of chicken (with bone and skin)1 Quart Buttermilk3 cups all-purpose flour1 tablespoon Dried Oregano1 tablespoon Dried Thyme1 tablespoon Paprika1 teaspoon Garlic Powder1 teaspoon Ground Cumin1 tablespoon Salt½ teaspoon Black PepperPinch Red Pepper

DIRECTIONS

Place chicken in a large container with lid, pour buttermilk until covered. Refrigerate for 8-24 hours.

Remove chicken from refrigerator and allow to come to room temperature. Fill a cast iron skillet half way full of vegetable oil and heat to 350 degrees. Meanwhile, set up a baking sheet and lay a cooling rack on top. Preheat your oven to 350 degrees.

n a large bowl or resalable bag, combine flour and following eight ingredients. Stir together and, working in batches, add in chicken straight from the buttermilk bath. Once coated, place chicken into oil cooking 2-3 pieces at a time. Allow to cook for 5-7 minutes on each side, or until golden brown. Once browned on both sides, place chicken onto the cooling rack. Work until all chicken is complete, and then put the chicken in the 350 degree oven until it reaches an internal temperature of 165 degrees.
