Essential Ingredients:

Dark Chocolate : 30gmButter : 150gm

Maida : 150gmPowdered Sugar : 250gmEggs : 4NosChocolate Essence : 1tspBaking powder : 1tspMilk : 100ml

Procedure:

1. Sift the flour along with the baking powder and the other ingredients by alternating the wet and dry ingredients.

2. In the top of a double boiler, combine chocolate and butter. Heat, stirring occasionally, until mixture is melted and smooth. Remove from heat and allow to cool to lukewarm.

3. Preheat oven to 325 degrees F (165 degrees C). Line the tray muffin cups with paper liners.

4. Fill muffin cups 2/3 full. Bake in the preheated oven for 25 minutes.

Cup Cake Icing:

White butter : 100 gmMargerine : 100 gmPowdered sugar : 350 gmChocolate essence : 8-10 dropsAdded colours (of desire) for icing and piping : red/yellow/pinkCocoa Powder : 4 tbsp

For Icing:

1. Begin mixing at low speed until the mixture starts to thicken. Increase the speed to high and beat just until you start seeing streaks in the cream.

2. Add the sugar and chocolate essence and beat on high speed until the mixture holds a soft peak when lifting the beater out of the icing.

3. The cake needs to be kept refrigerated until served.
