food-lover. She has spent many years

traveling the globe, immersing herself in

foreign cultures and sampling local cuisine,

applying her motto ‘everything should be

tried at least once.’ Her heart has now

been captured by Bali where she is happily

indulging her favorite things; writing and

Let’s Eat’s newest writer describes herself

as a part-time food lover and a full-time

food friend. She enjoyed her exposure tomany different restaurants during her year

teaching Indonesian Language and Culture

in Washington DC. Now back in Indonesia

she has discovered that her pleasure

in trying new food and restaurants has

deepened. Menur mostly works in sales and

marketing, but deep down she knows that

one day she will have her own business,

hopefully a restaurant! \MA 

Formerly worked as a full-time assistant

editor for more than two years, before

deciding to go solo as a freelance writer,

and is enjoying the freedom to travel and

enhance her photography skills. After a

year of hiatus, pursuing her Journalism

and Creative Writing certificate in Madison,

United States, she’s now back with a full

bag of knowledge. She confesses that she

is always hungry to step into a restaurant,

Produce is handpicked at the markets each

morning and prepared into the daily  Nasi 

 Campur  offerings which fill the display

cabinet. The Ayam Betutu is rich and spicy,

as is the hearty, slow cooked Beef Rendang.

The Perkedel Tahu is made with tofu from

Lombok, (chosen for its superior taste and

quality), the sweet crunchy Tempe Manis 

made with soybean cake from Tabanan,

while the softest eggplant has been

steamed then grilled with hot tomato sauce.

Rice is a choice of [beras merah] (a nutty

and nutritional red rice), sweet flavoured

yellow rice cooked with turmeric and

coconut cream, and the ubiquitous steamed

white rice. In typical Indonesian style, spicy

sambals range from hot, to very hot, to very

very hot.

A la carte highlights include  Nas i Goreng  

cooked with crab; succulent Sate Lilit 

served with vegetables and rice; as well as

Ayam Goreng, Gado Gado and Thai style

soups, like Tom Yam Gong . Well-prepared

western dishes include pastas, such as

 Carbo nar a and Tuna, Aglio Olio as well as

salads such as Greek or  Chicken Caesa r

You can find bawang merah or shallots

in every Indonesian kitchen. Shallots,

like onion, garlic and leeks belong

to the lily family which has more than 500

different sub-species. They were introduced

into Europe around the 10th century when

the crusaders brought them back from

Asia. If you don’t like the strong flavors of

garlic and onions but do not want to give

them up completely, then shallots are the

perfect substitute with their mild flavour and

natural sugar content which makes them

caramelize easily.

Bawang MerahThe Multitasking Ingredient

In Indonesia, shallots are predominantly

small and round with a deep red color and

are readily available in traditional markets

and more modern supermarkets. Look for

firm bulbs with crisp outer skins, which are

heavy for their size. When the outer skin

is removed, the inner skin should be pink.

For storing, the salad box of the fridge is

the ideal place for them and it’s best to

wrap them in paper rather than a plastic

bag so that the air can circulate and they

don’t sprout. Peeled shallots can be kept in

a fridge for a week in an airtight box. Like

onions, shallots can make you cry when you

chop them but if you want to avoid this,

simply place them in the freezer for 30

minutes before chopping, peel them under

running water and use a wet chopping

board and a sharp knife. To be able to peel

shallots easily, immerse them in boiling

water for ten minutes as you would if you

were peeling tomatoes and the skins will

simply rub off.

Thousands of hectares of shallots aregrown in Indonesia, as they are tropical

cultivars that grow easily with fewer hours

of daylight. Nasi Goreng / fried rice, fried

chicken, stir fry vegetable / oseng-oseng,

soups, soto, gulai and sambal are just some

of the Indonesian dishes that use shallots

as a base ingredient. Shallots also have

plenty of non-culinary uses. When I was a

child, my mother used chopped shallots to

cure colds by rubbing it into my skin until

I felt a tingling, hot sensation that made

me sleep very well. Shallot or onion juice

rubbed into the scalp is allegedly a remedy

for baldness, and is used as a cosmetic toget rid of freckles, it can also be taken for

pain relief and as a mild diuretic. \MA

restaurant business for generations, many

of the Indonesian recipes coming from her

grandmother’s recipes, and her Aunty Hani is

the main chef. We start with Lumpia Ma Gue 

which translates as Mum’s spring rolls, which

are deep fried, tasty and filled with sweet

potato and carrot. The sweet chilli sambal

on the side is a perfect accompaniment. In

contrast, the Goi Cuon are fresh spring rolls,

with an unmistakable Vietnamese blend of

vermicelli, shrimp, chicken and vegetables

flavoured with mint and coriander. We wash

these down with a supremely refreshing, Ice

Blend Mint created from huge handful of

fresh picked mint blended into a lush dark

green concoction.

Other Vietnamese favourites include The

 Pho which comes in a huge bowl and is

justifiably popular with its thick beef noodle

broth and slivers of beef. The bean sprouts,

coriander, chillis and lime served on the side

can be added for extra taste and texture.

The Bun Bo Xao is equally generous, a

salad of vermicelli with lettuce, onion, garlic

peanuts and bean sprouts – with a dressing

of sweet nuoc nam sauce – a Vietnamese

essential. The daily special at Rp 19.000

is truly a great deal – usually a tuna dish

served with rice, tofu, tempe and cassava.

I really enjoy the Vietnamese coffee with a

rich, full bodied and creamy taste, especially

the  Ca Phe Sua Nong  which is serve

hot with condensed milk. The homemad

Lemongrass Tea is also strong on flavou

and both go well with desserts like Mang

Sticky Rice, Saigon Crepe and Dada

The once sleepy fishing village of Tanjung Benoa has become a magnet for water sports

enthusiasts, but the mellow vibe and pristine beaches remain. The newly opened Meads

Beach Bar and Grill situated at the tip of the peninsula is a perfect fit and offers glimpses of

the sparkling sea and colourful outriggers bobbing in the water. An open-sided pavilion creates a

fresh and breezy setting with simple wooden tables, all weather rattan furniture and chequered

cushions. With a casual ambience reminiscent of a beach side Australian eatery, it comes as

no surprise to learn the owner is Warren Mead, a well known restaurateur from Perth. Mead

prides himself on providing the freshest seafood, handpicked at the Jimbaran fish markets each

morning. Meals are generous and simply prepared with an emphasis on the natural flavours of

premium seafood, enhanced with a drizzle of olive oil, a touch of lemon and a pinch of salt.

We start with Asparagus with Smoked

Salmon – tender asparagus spears

wrapped in slivers of salmon and lightly

drizzled with a sweet and spicy honey

mustard dressing. Also recommended, the

rich and hearty Seafood Chowder, and

Garlic King Prawns Cutlets prepared with

chili and fresh herbs. Mains include Grilled

 Chicken Baguette, Australian Tenderloin,

 Mahi Mahi Fillets , and generous individual

 Homemade Pies with golden puff pastry

crust, mashed potato topping and a variety

of fillings. We opt for the  Fresh Snapper 

and Chips, with three large, flaky fish fillets

fried to crispiness in a light beer batter.

A squeeze of fresh lemon brings out the

flavour beautifully, while crunchy French

fries and a side salad round out the dish.

Pizzas are great to share as a snack (or eat

alone), with a thin crispy base and range

of toppings such as Seafood, Vegetarian,

 Ital ian Volcano, and perennial Aussie

favourite Hawaian with ham and pineapple.

We finish with a Bread and Butter Puddin

– something I don’t see so often in Bali, an

it is excellent, with a creamy citrus flavou

crunchy top, and segments of fresh orang

on the side. Our round of mocktails are als

really enjoyable; there is a lush, cream

Virgin Colada, a fragrant  Cranberry Punc

Entering Balique Restaurant is like stepping back into another

era, with its charming rooms adorned in retro artwork and

antique furniture. Dimmed chandeliers, hanging lanterns with

beautiful floral patterns, soft purple linen-dressed tables, and old-

fashion furniture contribute to the character and charm of this large

and airy restaurant. Every little detail, including the gift shop is a

pleasant distraction while waiting for your meal.

The restaurant offers Mediterranean cuisine specially crafted by

talented Chef Yehudi Van Meckeren. Today he has prepared an

impressive appetiser of Tuna Tartar – a plate of freshly sliced tuna

and avocado served with wasabi, soy sauce and wakame seaweed,

garnished with lemon, sesame seeds, cherry tomato and crispy thin

sliced bread. The hint of ginger on our palates perfectly stimulates our

appetites. Parma Ham Pizette , made with fresh tomato, red onion,

mozzarella and prosciutto crudo; and Salad with Gratinated Goat’s

 Cheese, comprised of crottin de chauvignol, dried figs, walnuts, and

walnut raisin bread are among dozens of other hors d’oeuvres also

listed on the menu. In addition, Balique offers a children’s menu with

dishes named after all-time favourite characters, including Tweety’s

 Cheese Burger, Tom & Jerry’s Chicken Nugget, Mickey’s Spaghetti 

Bolognese and Sponge Bob’s Fish Fingers.

Our impressive appetiser is followed by Seared Ginger Salmon

served with coriander rice, a tasty cucumber salad, and ginger beurre

blanc. It’s a delightful, simply seasoned salmon dish, crispy on the

outer layer and juicy on the inside. A plate of Double Chocolate

 Fudge Brownie follows. The taste is impeccable – a perfect

balance of dark chocolate and sweetness, garnished with chocolate

ganache, roasted sliced almonds and a soft icy treat of hazelnut

gelato. We also try the Dame Blanche, two scoops of vanilla gelato

with roasted almonds, hot chocolate sauce and a Ginger Crème

Brulée – ginger custard caramelised with brown sugar. A decadent

dessert need to be paired with a suitable companion, in this case, a 

 Passion Star Mart ini  served from the antique-style bar, which also

offers an impressive wine selections, sparkling cocktails, beer, coffee

and tea.

Ma Na clings to the majestic limestone

cliffs on the southern most tip of Bali –

a glistening white feat of modern architecture

with bird’s eye views of the sparkling sea

far below. The ocean provides a constant

theme, with an abundance of fresh seafood

on the menu, gleaming lanterns adorned in

mother of pearl, shell-shaped plates and

The  Ju Ma Na Signature Cocktail Set also

has an Arabian influence, with two cocktails

served with seafood canapés; Rock the

 Kasbah is a lovely concoction of vanilla

infused vodka, Kirsch, fresh strawberries

and crushed mint; while the Blue Atlas is

similar to a Pina Colada, with the addition

of Blue Curacao adding sweetness and agreen tinge. I also feel compelled to try 1001

 Nights, a thoughtful concoction with the

initial fruity flavour of vodka melon, peach

and lime juice, giving way to a lingering

minty aftertaste from the dash of Crème

de Menthe. Ju Ma Na also provides my first

experience with molecular cocktails which

blend science with the art of cocktail mixing,

resulting in a very good Gin & Tonic floating

with flavourful, caviar-like molecules of Blue

Curacao.

The daily showcase is brimming with fresh salads, as well a

appetisers such as quiche and soup, and provides an ever evolvin

grains and proteins. We choose an excellent and super refreshin

Gazpacho blended with cucumber, fresh mint and olive oil, a

The a la carte menu has a greater selection of meat an

fish, including Oriental Beef Salad, Fisherman Salad, an

 Mac Granny’s Burger for the kids. We try the Bombay Spic

 Chicken and Mango Salad with grilled chicken, mango

watercress and cucumber – the curry spices make a grea

contrast with the sweet silky mango. The tasty, Frenc

influenced Beetroot and Brie Salad comes with mixe

greens, avocado, apple, beetroot and is sprinkled with slighty spicy Italian style vinaigrette; the brie comes on th

side – atop a thick slice of wholewheat toast.

A rich Choco late Orange Cake is perfect with a homemade

aromatic Masala Tea (made with local spices). Tea lovers w

enjoy the extensive range on offer, from organic importe

teas, like Bio Liquorice and Bio Rooibos to herbal blend

of Digestive or Lemon Verbena. I am easily seduced b

the espresso selection, which include Colombian, Ethiopian

and my choice, a rich Guatemalan blend that has hints o

spice and chocolate and keeps me fuelled for the rest of th

afternoon.

Made Bagus Windhyantara was headed

to a life in the culinary world from a very

young age. He was born in Singaraja,

on the north coast of Bali, to a family and

community with a strong food culture. “In

every religious and traditional ceremony,

my family and I were involved with the local

community in preparing a big feast,” says

Chef Bagus. His profound love of food led

him to attend the Hotel and Tourism Training

Institute Nusa Dua, specialising in Culinary

Art. After graduating from college, he took

the position of cook helper at Intan Resort,

and never looked back.

A two-year stint in cruise lines followed as he

traveled through Europe and the Caribbean

Islands. From there he continued his culinary

journey to Celebes Island, working as a

Chef de Partie for Novotel Manado for two

years before returning home to Bali. He was

assigned as chef butcher at the Club Med

Bali and, the following year, joined Mercure

Kuta as sous chef.

Hailing from London, Chef Will Meyrick visited Asia on h

way to Australia in the late 90’s. His travels led him on

culinary journey across Hongkong, Thailand, and Indonesia

exploring Asian cuisine from its origin. It was a profound experienc

that transformed what had previously been “just a job” into a tru

passion.

“I wasn’t good at many other things. So I ended-up cooking,” Meyric

confesses. With no formal training, he began his career at the ag

of 18, working at western-style restaurants in the U.K, starting from

the very bottom – picking herbs. Determined to fully explore th

restaurant business, he found his way to Michelin-Star restaurants

where he polished his skills as a cook by creating precise and wel

executed dishes. After seven years, he decided to spread hiculinary wings and fly to Australia, making a stop in Asia on the way

in order to learn the secrets of Asian cookery. He quickly discovere

a passion for this aromatic spicy cuisine, and would spend the nex

eight years building a solid career in Australia as an Asian chef.

In 2005, he arrived in Bali and admits that he has no intention o

ever leaving. His first restaurant on the island, Sarong, has enjoye

phenomenal success with its Asian fine dining experience. MAMA

San opened late last year and embodies the concept of “Asia

street food” with an emphasis on authentic flavours created b

the freshest, highest quality ingredients. Menu highlights includ

 Chicken and Prawn Eggnett with caramelised coconut , mint leaves

bean sprouts, cucumber pickles, peanut and lemon, Steamed Duc

Shitaki Bun with Chilli Oil,  Char Sui Pork with Five Spiced Sauce

and Lamb and Pumpkin Pot Stickers with Chilli oil and Blac

Vinegar . Meyrick frequently travels within the country and abroad

to quench his constant thirst for Asian and Indonesian culinar

knowledge. He is passionate about Indonesian food, claiming, “M

goal is to promote Indonesian food, to get Indonesian people t

believe in their own food." Authentic, mouthwatering recipes from th

islands of Indonesia can be found in his latest project, the 'Saron

Inspirations Cookbook,' alongside recipes he has gathered from h

travels throughout Thailand, Vietnam, India and Malaysia. "My stor

For the Balinese, spices (bumbu) are seen as a gift from God and meal preparations

always start with a visit to the market to buy fragrant roots like galangal, ginger,

garlic, turmeric, tiny red and green chili peppers, raw palm sugar and terasi

 (fermented fish paste.) Using a mortar and pest le the spices are ground into a th ick paste

which serves as the base for tasty dishes. One of the best known blends is basagede

used for spicy chicken, which is called Ayam Bumbu Bali . The amount of chili peppers

can be varied according to taste. \AB

 Ayam Bumbu Bali The Spice of Life

 Ingredients 

1 chicken cut into 20 pieces

1 cm crushed galangal

2 curry leaves

3 orange leaves

2 tomatoes each cut into eight pieces

2 tablespoon of soy sauce

Sauce Ingredients 7 red chilies

5 onions

4 cloves of garlic

2 cm ginger

3 seeds from candlenut tree

1/2 teaspoon terasi (optional)

 Method 

Add salt to the chicken, allow to sit for short while, then fry until half cooked an

set aside. Sautee the finely chopped sauc

ingredients until an aromatic flavour

achieved, mix in the galangal, curry leaves

orange leaves, tomato and soy sauce.

Add the chicken, cook until the tomato i

broken down and the sauce has soaked int

the chicken. Serve with rice.

Loulou,) to produce wines from its own vineyards on the north coast o
