with its 15th century Manor House and Norman

church, Thyme was born of our passion for the land,

the seasons and its produce.

Rooted in the idea of creating a home for family,

good friends and good food in the secluded setting

of one of England’s most beautiful landscapes,

Thyme shares its bounty with visitors from far

and wide.

A tranquil haven, comprising a sophisticated,

elegant, small country house hotel; luxury

cottages; magnificent entertaining space in a

medieval Tithe Barn; a traditional 17th century

village pub with an award-winning restaurant

and a state-of-the-art cookery school, Thyme

offers an unmatched escape.

In the heart of a picture-perfect village, surrounded

by breathtaking countryside and a multitude of

stunning historic towns, Thyme welcomes all with

warm hospitality, gourmet food and pleasurable

Slightly grand, quintessentially English, exquisitely

restored, very country, with no detail or comfort

overlooked - a stay at Thyme is very special.

In total we have 17 rooms arranged as follows:

THYME HOUSE

Blurring the line between a private country house

and a small boutique hotel, this large and beautifully

appointed house welcomes individual guests to stay

in the eight double bedrooms, whilst lending itself

perfectly to being taken over in its entirety for family

celebrations and important occasions.

Relax in front of roaring fires, enjoy a game of boules

in the garden or simply enjoy a glass of Champagne

in the individually designed, supremely comfortable

rooms before dinner. Staffed to your requirements, we

take care of every need, from delicious breakfasts made

by our chefs with produce from the estate to sumptuous

dinners served in the dining room.

We currently offer beauty treatments and relaxation

therapies in Thyme House and all the cottages, upon

The cookery school and kitchens are the beating

heart of all our culinary endeavours and passions.

Working closely with the land and the seasons,

sourcing from our kitchen garden and farm, and

taking culinary inspiration from around the world,

we offer a wide programme of classes – full day,

residential, lectures and hands-on – which are

available throughout the year.

We also specialise in bespoke classes for family

celebrations or for corporate team-building.

Our Village PubThe journey to Southrop meanders through a mazeof narrow lanes nestled away in some of the mostbeautiful countryside in England, abundant with river walks, water meadows, ancient hedgerows, historic forests and picturesque towns.

In the centre of the tiny village, a minute’s walk from Thyme, is The Swan, our award-winning restaurant and quintessential village pub. With its bar central to community life, this 17th century inn is a relaxed, gourmet haven for visitors to Thyme as well as locals, drawn by the deceptively simple, seasonal country cooking.
