Therapy dogs aregood medicineSomeone once said, “A dog is the onlything on earth who loves you more thanhe loves himself,” which pretty muchexplains why many are ideally suited towork as therapy dogs.

Now, therapy dogs usually aren’t service dogs; serv-ice dogs have serious responsibilities as compan-ions to people who have various physical chal-

lenges, such as blindness and loss of limbs, which arecompensated for by their service dogs. Such dogs are notpets, and they mustn’t be distracted from tasks at hand.

Therapy dogs, on the other paw, are in a more entertain-ing line of work. By being warm, furry, willing friends topeople in such varied settings as assisted living facilitiesand hospices, select care homes and hospitals, child carefacilities and elementary schools, and even the occasionallibrary, these invaluable canine aides bestow upon one andall endearing calm, comfort, and contentment.

First and foremost, any potential therapy dog must likegoing to new places and meeting strangers who’ll want topet him. A lot. Fortunately, many breeds make great therapydogs. Due to their consistently friendly temperaments, somelarger breeds—for example, Labrador retrievers, collies, andgolden retrievers—are better suited than others. And small-er breeds, such as the bichon frisé, the cavalier King Charlesspaniel, and the Jack Russell terrier, are just right for sittingon laps and peering up adoringly into a person’s face. Notevery dog is cut out for this calling; ultimately, a dog’s dis-position determines his fitness as a therapy dog.

It’s well known that a pet can be a bracing, restorativetonic for your health; simply stroking his fur, slowly, lowersyour blood pressure, reduces stress levels, and ups youroverall sense of well-being. All’s right with the world, or atleast better. Similarly, others seem to reap the same benefits.They’re less stressed and depressed. Patients who feel thatthey’re recovering too slowly from an illness become morepatient. After a visit from a therapy dog, they smile more,feel calmer, are happier, and more relaxed. And, by the way,you’ll take your leave feeling pretty darned good yourself.

If you’re interested in brightening the day for a shut-in,sharing your best friend with a hospice patient, providing afuzzy muzzle for an ailing woman in a care home to caress,prompting fond memories of a long-departed pet for an eld-erly widower, or calming an anxiety-beset fourth-graderwho’s having trouble reading, then you should find out ifyour pet has a secret hankering to be a therapy dog.

Kitchen & Bath Gallery and these homeowners discover that remodelingone room just leads to anotherStarting with one upstairs room, Kitchen & Bath Gallery renovated aseries of spaces so skillfully, artistically, and imaginatively that theresults spectacularly exemplify the concept of seamless remodeling.

Phase Two was a doozy. The homeowners wanted a massive new bar built on the lower level, arenovated kitchen, and a new sheltered veranda. Such a massive undertaking is all in a day’swork for the Kitchen & Bath Gallery crew.These homeowners wanted the bar to evoke the dis-tinctive ambience of old-time establishments, so a massive enclosed bar, constructed of knotty

alder, was custom-designed, built on-site, and stained, and a hand-rubbed, ultra-smooth, marine finishwas applied to the top. Antique mirrors installedbehind the shelves intensify the stunning sheen.

What had been merely a nondescript patio justoff the living room was jaw-droppingly trans-formed into a spacious, largely enclosed, mixed-use grand veranda that leads back into the livingroom. Comfortably furnished with wicker chairs,a television, and a fireplace, one area encouragesrelaxation, and the other, memorable diningand celebrations with a view. A tongue-and-groove wood ceiling, crown molding, a stamped-concrete floor, and area rugs unify the spaces.

But the kitchen arguably most demonstratesKitchen & Bath Gallery’s creative flair for seam-less remodeling. The homeowners wanted theuninspiring brown cabinets, and the room ingeneral, to be lighter and airier. Kitchen & Bath

Gallery’s Mark Combs consulted withDesign Studio’s Pat Wormhoudt, andthey got it right on the first try. Thehomeowners simply loved the paletteof mottled earth tones that include cop-per, gold, brown, and taupe. Custommaple cabinets, painted with custom-blended white and finished with a glazewiped on by hand for depth and char-acter, showcase these colors to ultimate

effect. The countertops and is-land feature Venetian Goldgranite, and the floor is com-prised of irregularly shapedand chisel-edged ceramic tile,which has the look of stone.

And, finally, it’s all in thedetails. “What I love most isthe butler’s pantry,” says thehomeowner. “I have severalsets of dishes which, untilnow, were in storage here and

Now that summer’s temperatures have becomemore temperate, and summer’s light no longerbleaches everything white-hot, and the season hasturned toward autumn’s more muted shades andshadows, it’s time to go walking.

Yes, walking. Walking in honor of autumn. Walking to cel-ebrate the season come ’round again. Walking to findyourself afresh in the quiet spaces of your mind.Depending on the scope of your ambition, you may

Observe how oaks, hav-ing dropped their acorns for squirrels to find and bury, now seem to relax, gatheringstrength from the cooling earth for over-wintering.

Be inspired by those Victorians of long ago, and stoop to examine the quietly fadingcolors of fallen leaves. Finally, summer has given way to autumn, and neigh-borhoods across the city are jubilantly celebratingthe season’s turning by enthusiastically changing out

porch décor, seemingly overnight. Oh, the same elementsare there. Wicker and wrought iron chairs. Tables large andsmall. And plants aplenty, although summer’s petunias,freesias, and hydrangeas have been replaced by asters, pan-sies, and chrysanthemums, and summer’s gaily colored andpatterned porch cushions and pillows, by autumn’s deeperumbers, greens, coppers, and burgundies. Pumpkins andeven the occasional jack-o’-lantern have appeared in antic-ipation of holidays soon to come. Apparently, cooler tem-peratures slow the sap in autumn’s maple trees and people.So come on up and sit a spell.

A La Carte: Restaurants of Note

While the tastes of many spices—ground cinnamon, allspice, cardamom, andginger, for example—bear a passing flavorful resemblance to their plants oforigin, curry powder isn’t one of them. The curry plant itself exhibits the

intoxicating aroma of, say, Indian eggplant curry, but its taste has been described as“similar to a stew of pine needles.”

That’s because the silvery gray leaves of the curry plant, while it makes for a lovely andfragrant addition to your garden, is pretty much inedible. Curry powder, on the other hand,

is actually a blend of several, and as many as twenty, herbs, spices, and seeds, combina-tions that evolved over a couple of centuries on the Indian subcontinent for different usesin various dishes.

Back in the day, curry powders could be a complex mélange of such ingredients as car-away, chile, cinnamon, clove, coriander, cumin, fennel seed, fenugreek, ginger, green andblack cardamom, mace, nutmeg, red and black pepper, salt, saffron, tamarind, turmeric—the source of curried dishes’ familiar yellow color—and mustard, poppy, and sesame seed.

Since then, curry powder has migrated well beyond its countries of origin to become astandardized blend of chile, cumin, fenugreek, coriander, turmeric, and red pepper. Theterm “curry powder” is now a generic phrase, albeit a pungent one. This kicked-up con-coction long ago moved into the eclectic, inclusive mainstream of American cuisine. Itrobustly flavors soups and stews, adds punch to sauces and marinades, and amps up allkinds of entrées, pasta, vegetables, and potato salads. Adventurous chefs like to pair curry

Julie’s Cabbage CurryThis dish comes together quickly and easily,making it a great choice for aweeknight meal.

4 tablespoons butter1 tablespoon mild curry powder (or to taste)1/2 teaspoons ground red pepper (or to taste)1 large onion, chopped1 tablespoon tomato sauce or ketchup1 teaspoon salt1 large head cabbage,chopped2 tablespoons fresh cilantro,chopped (optional)

In a large pan heat the butterover medium heat; add the currypowder and red pepper. Stir aminute until the mixture is fra-grant, add the onion, and sautéuntil translucent. Add the tomatosauce, salt, and cabbage. Stir andcover, reduce the heat to medi-um-low, and cook all approxi-mately 10–15 minutes, or untilthe cabbage is done. Top withcilantro, if desired, and serve thecabbage with basmati rice.

Ready-made curry powder is generally available in two heats: a milder one, and the hot-ter version, called “Madras,” which has more chile powder in the mix. Of course, you canexperiment with small packets of ingredients from natural foods stores and purveyors ofbulk spices to create your own signature curry powder blends. Whichever way you decideto go, you’ll find that curry powder is a can’t-live-without pantry staple.

Workhorse WoolPurchase earth-friendly fabrics. Used in a range

Currently affiliated with Wichita’s Via ChristiRegional Medical Center, Martha Housholder,MD, practices medicine in the fields of dermatol-

ogy and dermatopathology. Having graduated from theUniversity of Kansas School of Medicine and trained atJohns Hopkins Hospital in Baltimore, Maryland, sheholds sterling credentials.

In 1974, the State of Kansas began requiring continuingeducation for doctors trained in the United States, includ-ing those practicing overseas. To meet that charge, thelocal chapter of the Christian Medical and DentalAssociations was established, and in 1978, the first sixdoctors began what have since become annual treks toteaching conventions around the world, with an emphasison the medical protocols and outcomes in developingcountries in Africa and Southeast Asia.

Currently, the U.S. affiliate of this medical-missionaryorganization boasts some 16,000 members; Housholder wasinvited to become a member in 1984, and she began travel-ing to such countries as Kenya, Malaysia, and Thailand toensure that foreign doctors who’d trained in Kansas hospitalsmaintained accreditation in their specialties.

“To chronicle the activities at the medical conferences, Ibegan taking what were essentially documenting photo-graphs,” Housholder reminisces. But she also found herselfdrawn to photographing the beauty she saw in each country,its distinct character, its unique flora and fauna, its colorfulculture. She adds, “I started noticing the intricate layers ofarchitectural history in places that were previously colonial,where successive cultures had cumulatively left their traces.That phenomenon has a strange beauty all its own.”

Housholder was so pleased with what were becomingher art photographs that she began framing and installingthem in her office in Wichita. It wasn’t long before hercolleagues, friends, and patients began taking note of herremarkable artistic talent, the unexpected fruits of herprofessional activities.

This KitchenTune-Up kitchen was primarily a cabinet refacing project.Additional featuresincluded adding hammered glass to a couple of the doors and raising the cabinets above thestove and refrigerator to add interest to the upper cabinets’ lines. However, her mission to provide quality healthcare across the world is paramount. Housholdersays, “I continue to be in awe and admiration ofwhat these doctors do. It’s one thing to practicemedicine with state-of-the art technology, it’s quiteanother to deliver quality health care, with suchscarce resources, to the poorest of the poor in themost difficult situations. My photographs pale incomparison.” Well, that’s probably true. Still . . . .

Every autumn, households around India, as well as many other countries, celebrate Diwali, “TheFestival of Lights.” A golden holiday, Diwali is marked by five days of festivities commemoratingancient stories about the victories of good over evil, light over darkness, and, most importantly,the illumination or awareness of one’s inner light, which brings compassion, joy, and peace.

Symbols of these teachings are observed in every home with beautiful flowers, the radiant glow of lights,and specially prepared meals.

The stories behind Diwali, like the manner of celebration, differ from country to country and from regionto region, and, much like Thanksgiving here, every family has passed down their own traditions. But onething is certain, from fireworks to worship to sharing of sweets, homes far away will be filled with familyand friends sharing memorable moments and plenty of delicious specialties.

Although Indian foods are thought to be difficult to prepare and are generally not considered light, theserecipes do take a lighter approach to some traditional Diwali favorites, making them easy to prepare andsuitable for every palate. Add fresh flowers and candles, and you can start your own traditions for an abun-dantly Golden Festival of Lights.

Koftas are wonderful little balls ofground vegetables. Any kind of mix-ture will work, but to keep in tune withthe golden season, butternut squash isused. Sweet potatoes can easily besubstituted. Garbanzo beans and flourhold the mixture together. Whilethey’re traditionally dipped in flourand then fried, they are much lighterwhen simply brushed with a little oliveoil and baked. To make them extra-special for Diwali, a sweet surpriseawaits inside each kofta.

4 cups butternut squash, lightly steamedbut slightly firm

1 1/2 cups cooked garbanzo beans1 tablespoon fresh cilantro, chopped2-4 tablespoons garbanzo flourolive oil

Surprise Filling2 tablespoons raw cashews2 tablespoons golden raisins1 tablespoon fresh cilantro

Mince the three ingredients togetherand set aside.

Preheat the oven to 350 degrees.Mash the butternut squash and garban-zo beans together. Mix in the cilantro.Beginning with 2 tablespoons of gar-banzo flour and adding a little more asneeded, mix the flour with the squash-garbanzo until it’s of a consistency toform vegetable balls approximately 11/2 inches in diameter.

Make an indentation in each koftawith the back of a quarter-teaspoon,fill with one-half teaspoon of the fill-ing, and smooth the edges backtogether. Brush each kofta with a littleolive oil and bake at 350 degrees forapproximately 15–20 minutes, or untilthey are nicely browned. Serves four.

Creamy Coconut Sauce1 tablespoon coconut oil1 medium onion1 teaspoon ground ginger

1 teaspoon garlic, minced1/4 teaspoon cayenne1 1/2 teaspoons garam masala1/2 teaspoon turmeric1/2 teaspoon mild curry1/2 teaspoon salt2 teaspoons sugar1 14-ounce can coconut milk1 cup unsweetened shredded coconut2 cups tomato sauce1 tablespoon fresh cilantro, chopped1/2 cup frozen peas

In a small saucepan heat the coconutoil; add the onion and cook until it justbegins to turn translucent. Add theginger, garlic, cayenne, garam masala,turmeric, curry, salt, and sugar andcontinue cooking until the fragrancesbegin to release. Put the mixture into ablender and add the coconut milk,coconut, tomato sauce, and cilantro.Blend all until smooth. This sauce canbe made a day ahead, refrigerated, andreheated over low heat when youassemble the meal. Add more salt orsugar to taste.

Basmati Pilau

Basmati rice, known as the “Queenof Fragrance,” is made even more fra-grant with the addition of cumin seed,cinnamon, bay leaves, and cardamom.For Diwali, you may want to make awhite basmati with the additionalspices, and a plain brown basmati.

1 teaspoon olive oil1 teaspoon cumin seed2 cinnamon sticks2 bay leaves4 whole cardamom pods1 cup white basmati rice, uncooked2 tablespoons golden raisins2 tablespoons cashews1 tablespoon fresh cilantro, chopped

Heat the olive oil in a heavy skillet.Add the cumin seed, cinnamon sticks,bay leaves, and cardamom pods. Stirfor a few minutes until the spicesbegin to release their fragrance.Remove the mixture from the heat andstir it into the uncooked basmati rice.Stir in the golden raisins and cashews.Cook the basmati rice according topackage directions. When done, gar-nish it with the cilantro and serve.Serves four.

Broccoli MagicEasy to prepare at the last minute, this dish is a delicious

way to serve broccoli with almost any meal.

2 teaspoons olive oil1/2 teaspoon brown mustard seeds1/2 teaspoon cumin seeds2 cloves garlic, sliced into thin strips1 teaspoon fresh ginger, minced4 cups broccoli crowns, florets separated2-3 tablespoons waterfresh lemon juice to taste

In a heavy pan, heat the olive oil over medium heat and add themustard seeds. Allow the seeds to pop; you may have to place a

lid partially over the pan. When they’ve stopped, add the cuminseeds, garlic, and fresh ginger. Stir for a moment or two, beingcareful not to burn the garlic or ginger. Add the broccoli and gentlystir to coat well. Cook for an additional minute, add the water, cover,and reduce the heat to low. Allow to steam for approximately 5minutes or until done to taste. Squeeze a little fresh lemon juiceover and serve. Serves four.

Mango Chantilly

If you use mangos that are very ripe, they puree eas-ily and require little or no sweetener. A Chantilly ismade when you add a little sugar and vanilla to thewhipped topping.

2 cups mango purée, from approximately 3 whole mangosjuice of 1/2 lime2 cups whipped topping, divided use2 teaspoons sugar1/2 teaspoon vanillazest of 1 lime

Use a food processor or blender to purée the mango, then mixin the lime juice. Cover and refrigerate until ready to serve. Addthe sugar and vanilla to whipped topping and refrigerate. Whenready to serve, fold 1 cup of the whipped topping into the mangopurée. Spoon the dessert into small compote dishes and top withthe remaining whipped topping and a light sprinkling of the limezest. Serve with cups of warm chai, a traditional spiced tea,enjoyed with milk and sugar

These homeowners wanted to update their kitchen. Although they hadplenty of space, they felt that it wasn’t being optimally used. Wantingthe best, they called Guthridge/Nighswonger. Among the decisionsmade was to re-orient the center island, which was bisecting the

kitchen; simply changing the island’s alignment by forty-five degrees made fora more natural flow and more user-friendliness. Working with Nahid Holmes ofDesign Source, the Guthridge/Nighswonger team improved the island evenmore by adding a ledge and counter cutaway for chairs.They then raised the countertops for more-comfortable preparation and cook-

ing experiences, integrated state-of-the-art appliances, and installed new customcabinets, whose heights are attractively staggered to evoke the look of furniture.Made from alder, the cabinets feature a dark stain and a glazed finish; the island,also alder but black-stained, has rubbed edges that impart an aged patina. Allcountertops are Venetian Gold granite. The flooring is multi-colored travertine,which not only adds color but various shapes and sizes, imbuing the floor withlots of visual appeal.As a final genius touch, Guthridge/Nighswonger transformed an ordinary kitchen
