AEROPRESS INVERTED METHOD - HOT

Supplies you will need: 12-17 grams of coffee, AeroPress, paper filter or S Filter from Kaffeology, 200 grams of fresh cool water, electric kettle, countdown timer, favorite mug

First, measure and grind coffee. Coffee grind should be about as fine as table salt.

At the same time, heat up 200 grams of water to 204 degrees F or 30 seconds off

boil on stovetop. Coffee Maven tip: I like 14 grams of coffee. Experiment to find

out how much coffee you most enjoy. Be sure grind coffee right before brewing.

Refer to the grind guide on page 13.

Place the plunger into the brewing tube with the black rubber part touching the

bottom of the number 4 circle. Then invert so the top of the plunger is on the table.

Rinse the paper filter two to three times with hot water and preheat the inverted

brewer. (Alternative: Use S Filter by Kaffeology and preheat along with brewer.)

Add your coffee into the inverted AeroPress. Set your timer for 3 minutes and start.

Coffee Maven tip: You can also experiment with lengthening or shortening the

time based on your taste. I like a 4 minute brewing time.

Next, pour hot water about into your brewer, saturating the grounds, and pouring

to the top of the 3 level. Use the AeroPress paddle to give a thorough stir.

Next, pour enough water to bring the level to above the level 2 circle.

Place the filter and black cap on top of brewer and screw it tightly.

When your timer goes off, flip the brewer on top of your mug

and plunge with gentle and steady pressure, stopping as soon

as you hear a hissing sound. Coffee Maven tip: If this is too

difficult to plunge, try a coarser grind.

Carefully flip the brewer upright. Coffee Maven tip: You can

also brew double strength coffee using a pour over method.

Then add equal parts ice to coffee on a warm day for an

iced coffee option. Adjust your coffee to water ratio to taste

preference. Watch this video to see how to use the pour

AEROPRESS INVERTED METHOD – COLD BREW

For those of our customers who enjoy a good science experiment with a delightful outcome, you might enjoy trying the AeroPress to build your own Cold Brew tower. Have fun!

Supplies you will need: an AeroPress with 2 filters (at least one should be paper), a kitchen scale weighing in grams, 45 grams of coffee, ground medium-fine, 300 grams of water, 200 grams of ice, a water bottle (Dasani works well 12 oz & up), a sewing needle, a sharp blade, a small mouth mason jar Directions:

Empty water bottle and cut off bottom with sharp blade.

Remove bottle’s cap and puncture with sewing needle, creating the smallest hole

possible.

Replace cap and test flow by filling with water and watching drip rate, aiming for

about 40 drops per minute. Alter hole size as necessary. Coffee Maven tip: Adjust

the drop rate per minute by adjusting the coarseness/fineness of the coffee grind.

Rinse filter and assemble AeroPress, filling with coffee.

Moisten grounds with cool water and mix gently, subtracting water used from total

water volume.

Level coffee bed with finger.

Trim paper filter to fit inside of AeroPress tube and place atop coffee bed, pressing

softly to level.

Place AeroPress on jar and mount bottle on top.

Fill bottle with remaining water and ice.

When bottle is empty, disassemble and enjoy.

AMERICAN DRIP BREWER

Supplies you will need: Drip coffee brewer, appropriate sized paper filter, coffee grinder,

kitchen scale, timer, cold filtered water, fresh roasted coffee, favorite mug

Ratio: 1 part coffee to 18 parts water. Coffee Maven tip: The

Specialty Coffee industry uses as 1:16 coffee to water ratio. After

beginning with the industry ratio and experimenting with both

weight of and grind coarseness/fineness of coffee, I found this to be

my favorite ratio. 1250 ml/18 = 69 grams of coffee for a full 10 cup

pot of coffee in my Technovorm Moccamaster. I took this one step

farther: 6.9-7.0 grams per 4 ounce (125 ml) cup of coffee. (Bonavita

8 cup brewer pictured to left)

Directions:

Measure and grind coffee immediately before brewing. Coffee Maven tip: See Quick

Reference Brew Chart below for my favorite amounts of coffee. I like my coffee

medium coarse like coarse kosher salt. Refer to the grind guide on page 13.

Place paper coffee filter into filter basket then rinse with water 2-3 times. Coffee

Maven tip: Rinsing your paper filter prior to brewing eliminates both paper dust on

the filter as well as rinses out the paper taste. I find I need to rinse my filters three

times before brewing. Also, you may want to rinse your coffee carafe with hot water.

This will rinse out any old brewed coffee as well heat up your carafe.

Place ground coffee in rinsed filter & basket.

Pour fresh filtered cool or cold water into water tank.

Place carafe under the filter basket as appropriate for your drip coffee maker.

Turn on and brew. Coffee Maven tip: If you are brewing into a carafe that sits on a

heating element, be sure to pour your brewed coffee into a heat retaining carafe

rather than leaving it on the heating element. Decanting, or changing holding

containers, will keep the coffee from continuing to cook while it keeps it warm.

Pour into your cup and enjoy!

AMERICAN DRIP BREWER - OVER ICE

Supplies you will need: Drip coffee brewer, appropriate sized paper filter, coffee

grinder, kitchen scale, cold filtered water, fresh roasted coffee, ice, 12-16 ounce

drinking glass

Ratio: 1 part coffee to 9 parts waters & 9 parts ice.

Directions:

This is exactly the same as brewing hot, except you will be brewing double strength

coffee. This is accomplished by using the same amount of coffee but half the amount

of water.

Measure and grind. Coffee Maven tip: See Quick Reference Brew Chart below for

my favorite amounts of coffee. I like my drip coffee ground medium coarse like

coarse kosher salt. Experiment to taste both how much and how coarse/fine you

enjoy your coffee. Refer to the grind guide on page 13.

Place paper coffee filter into filter basket then rinse with water 2-3 times. Coffee

Maven tip: Rinsing your paper filter prior to brewing eliminates both paper dust on

the filter as well as rinses out the paper taste. I find I need to rinse my filters three

times before brewing.

Place ground coffee in rinsed filter & basket.

Pour half the typical amount of fresh filtered cool or cold water into water tank.

Coffee Maven tip: If you are making iced coffee for 2 cups, use only 1 cup of water;

4 cups of iced coffee using 2 cups of water; 6 cups of iced coffee using 3 cups of

water; 8 cups of iced coffee using 4 cups of water, etc. You will make up the

difference in water with ice.

Place carafe under the filter basket as appropriate for your drip

coffee maker.

Turn on and brew.

Place ice cubes in 12-16 ounce drinking glasses. Coffee Maven

tip: Try freezing your favorite coffee in ice cube trays and use in

place of ice cubes. This will help coffee not to become to

diluted or weakened when poured over plain ice.

Pour double strength coffee into your drinking glass and enjoy!

CHEMEX POUR OVER – HOT

Supplies you will need: 40 oz Chemex, Chemex paper or steel filter, coffee grinder, fresh roasted coffee, scale, timer, electric kettle or stovetop for hot water, coffee grinder, kitchen scale, timer, cold filtered water

Directions for a standard 40 oz Chemex Brewer:

Heat water to 204 degrees F or 30 seconds off boil on stovetop. Grind 44 grams of

coffee. The coffee grind should be about as coarse as kosher salt. Coffee Maven tip:

Remember, you can experiment with amount of coffee and grind to find your

perfect ratio. Refer to the grind guide on page 13.

While water is heating up, place the filter inside the Chemex, lining up the multiple

folds with the spout. Pre-rinse with hot water to seal the filter and rinse out the paper

flavor. Coffee Maven tip: Rinsing your paper filter prior to brewing eliminates both

paper dust on the filter as well as rinses out the paper taste. I find I need to rinse my

filters three times before brewing.

Discard the rinse water and add your ground coffee. Make a divot in the center of

your grounds. Set Chemex on kitchen scale and zero out the weight.

Set timer for 4:30 minutes. I use a countdown timer. Press start as soon as you begin

to pour the freshly boiled hot water. Pour 50 g water to saturate the grounds and let

it bloom for 30 seconds. The fresher the coffee, the more of a bloom you will see.

Coffee Maven Tip: During the bloom, give the coffee a quick stir to make sure the

water fully saturates all the grounds. This will ensure even brewing.

Next, at 4 minute fill to 150 grams of water for the first pour, evenly pour water in a

spiral over the coffee bed and slowly fill to the top of the brewer.

Continue to add water periodically until the brewed coffee reaches the glass button

on the Chemex.

At 3:20 minutes, fill to 450 grams of water.

At 2 minutes, fill to 700 grams.

At 4 minutes or when the coffee level reaches the glass button, lift the filter out of

the Chemex and quickly move the filter to your sink where it will drain completely.

Pour coffee into mug and enjoy! Yield: 700 gm

extraction = 2 cups of coffee

CHEMEX POUR OVER – OVER ICE

Supplies you will need: 40 oz Chemex, Chemex paper or steel filter, coffee grinder, fresh

roasted coffee, scale, timer, electric kettle or stove top for hot

water, coffee grinder, kitchen scale, timer, cold filtered water,

ice

Directions for a standard 40 oz Chemex Brewer over ice:

Ratios: H2O 16 gm to Coffee 1 gm

H2O 500 gm to Coffee 65 gm over 200 gm ice

H2O 250 gm to Coffee 33 gm over 100 gm ice

Assemble and brew in the Chemex as per instructions for hot Chemex Pour Over.

Measure water by weight per ratios given above. Add water to an electric kettle and

heat to 204°F or 30 seconds off boil on stovetop.

While water is heating up, place the filter inside the Chemex, lining up the multiple

Lift filter up and add appropriate amount of ice to bottom of Chemex per ratios given

above. Large cubes are preferable to crushed ice. Return filter.

Grind coffee per ratios given above. The coffee grind should be about as coarse as

kosher salt. Coffee Maven tip: Remember, you can experiment with amount of

coffee and grind to find your perfect ratio. Refer to the grind guide on page 13.

Pour ground coffee into filter. Make divot in center of grounds. Set Chemex on

kitchen scale and zero out the weight.

After all the water has drained through the coffee and filter, discard filter.

Serve coffee in a glass of cubed ice. Enjoy!

CLEVER COFFEE DRIPPER BY ABID – HOT

The Clever Coffee Dripper is a very easy and forgiving method of brewing a single

serve cup of coffee. It is also very personal and can be tailored to fit personal tastes.

Experiment with the amount of coffee, the fineness/coarseness of the grind and

the length of time your leave your coffee extract. This happens to be my all-time

favorite manual or pour over brewing method. I hope you will enjoy this method as

much as I do. If you are interested in purchasing a Clever Coffee Dripper, we have

the large size available for purchase in our on-line shop. ~ Valorie King, Owner &

Coffee Maven

Supplies you will need: Clever Coffee Dripper (L), #4 paper cone filter, coffee grinder, fresh

roasted coffee, kitchen scale weighing in grams and/or ounces, countdown timer, electric

kettle or stove top for hot water, coffee grinder, cold filtered water, 12 oz coffee mug

Directions:

Coffee:Water Ratio - 24g (.85 oz) coffee to 360g (12 oz) water [1 gm coffee : 16 gm

water]. Yes, I do weigh both the coffee and the water in grams!

Heat water to 204 degrees F in electric kettle (or 30 seconds off boil on stovetop).

Set timer to 5:00 minutes. I use a countdown timer. Press start as soon as you

begin to pour the freshly boiled hot water.

Put the paper filter (#4 cone for Large) into the dripper and rinse to reduce paper

taste and warm the dripper. Coffee Maven tip: Rinsing your paper filter prior to brewing

eliminates both paper dust on the filter as well as rinses out the paper taste. I find I need to

rinse my filters three times before brewing.

Measure and grind coffee immediately before you brew. You want to use a

medium-fine filter drip grind. Coffee Maven tip: I use the same grind as my regular drip

coffee - medium drip grind like coarse kosher salt. Also, if you use a coarser grind, you may

need to lengthen extraction time. If the water pools and does not drain effectively, try a

coarser grind. If you use a finer grind, you will need a shorter extraction time.

Add coffee into the filter. Create a small trough in the center of the grounds. Set

Clever Coffee Dripper on scale and zero out the weight.

Pour in about 50 gm water being careful to pour water in the center of the coffee

and in the trough you created. This is about enough water to just cover the grounds

in hot water. Let coffee bloom for about 20 seconds until the 4:30 minute mark.

Pour the remaining 310 gm of water over the next 20-30 seconds in a figure eight

pattern being careful not to go all the way to the edge of the filter. Cover and wait. Coffee Maven tip: Also try stirring part way through when your timer reaches 1:30-2:00

minutes left on the countdown timer vs simply leaving it alone all the way through the

extraction.

When time is complete, place dripper on top of a mug or other vessel to start coffee

draining. To stop the flow, simply lift the dripper off the mug.

CLEVER COFFEE DRIPPER BY ABID – OVER ICE

Supplies you will need: Clever Coffee Dripper (L), #4 paper cone filter, coffee grinder,

fresh roasted coffee, scale, timer, electric kettle or stove top for hot water, coffee grinder,

kitchen scale, timer, cold filtered water, ice, 12-16 oz drinking glass

Directions – Same as the Clever Coffee Dripper Hot except using half the amount of water.

Coffee:Water Ratio - 24g (.85 oz) coffee to 180g (12 oz) water + 180 grams of ice.

Heat water to 204 degrees F in electric kettle or 30 seconds off boil on stovetop.

Set timer to 5:00 minutes. I use a countdown timer. Press start as soon as you

begin to pour the freshly boiled hot water.

Put the paper filter (#4 cone for Large) into the cone and rinse to reduce paper taste

and warm the dripper. Coffee Maven tip: I triple rinse my filters.

Measure and grind coffee immediately before you brew. You want to use a medium-

fine filter drip grind. Coffee Maven tip: I use the same grind as my regular drip

coffee - medium drip grind like coarse kosher salt. Also, if you use a coarser grind,

you may need to lengthen extraction time. If the water pools and does not drain

effectively, try a coarser grind. If you use a finer grind, you will need a shorter

extraction time.

Add coffee into filter. Create a small trough in the center of the grounds. Set Clever

Coffee Dripper on scale and zero out the weight.

Pour about 50 gm water into cone being careful to pour water in the center of the

coffee and in the trough you created. This is about enough water to just cover the

30 seconds in a figure eight pattern being careful not

to go all the way to the edge of the filter. Cover and

wait.

Fill drinking glass with 180 gm cubed ice.

When time completes, place the dripper on top of the glass to start coffee draining.

To stop the flow, simply lift the dripper off the glass.

FRENCH PRESS

Supplies you will need: French Press (24 oz size) coffee grinder,

fresh roasted coffee, scale, timer, electric kettle or stove top for hot

water, coffee grinder, kitchen scale, timer, cold filtered water, coffee

mug, thermal carafe for decanting

Directions:

Coffee to water ratio: 1 gm coffee to 16 grams water.

Remove the plunger and check that the press, plunger and screen

have been thoroughly cleaned and are without old coffee. Left over

coffee oils or grounds from previous brewing session will taint the

current brewing session. Reinsert plunger in press. Coffee Maven tip: If possible, periodically

completely disassemble the plunger and remove the screen for more thorough cleaning.

Heat water to 204 degrees F in electric kettle or 30 seconds off boil on stovetop. Coffee Maven

tip: You can also use hot water for preheating your French press, decanting carafe and mug.

Measure out your coffee and set the grinder to a coarse setting. Coffee Maven tip: Usually

coffee is ground to the coarsest possible setting on electric grinders. Coffee should be as

coarse as coarse sea salt. Refer to grind guide on page 13.

When water is heated, pour some water into the French press, decanting carafe and mugs to

preheat.

Discard the preheating water from the French press. Place the French press on the kitchen

scale and zero out the weight.

Grind your coffee and add it to the French press. Be sure to zero out the weight again.

Set timer for 5 minutes. I use a countdown timer. Press start as you begin to pour the freshly

boiled hot water.

Completely saturate the grounds as you pour. Pause at 50 gm of water and allow for a 20-30

second bloom. Continue pouring water making sure to saturate all the grounds until you

reach your desired weight of water.

Give the coffee several gentle stirs and place the screened lid on top without plunging.

After 5 minutes, plunge the coffee slowly and carefully. This should take 20-30 seconds.

Coffee Maven tip: Pressing down on the plunger too quickly and/or too forcefully can cause

hot coffee to spurt. If this is too difficult to plunge, try a coarser grind.

Once the plunger filter pushes the grounds to the bottom, immediately pour into your mug.

Be sure to decant the remaining coffee into a thermal carafe for holding.

Enjoy!
