Pasteurized Process Cheese Spread Same as cheese food with the highest allowable moisture, the lowest fat, and the lowest cost. The standard is Butter Fat at least 20%; Moisture under 60%.
Pasteurized Process Cheese ProductNo standards defined by FDA. Typically the same as cheese spread but with even lower fat and higher moisture.

Cheese CubesAvailable in a variety of popular flavors, pre-cut cheese cubes are easy to use and ready-to-go at a moment’s notice. Pre-cut cheese is a hassle-free, safe alternative to hand-cutting. The cost of pre-cut cheese is equal to or less than that of hand-cut cheese. Pre-cut cubes eliminate waste while providing 100% yield. Uniform size and shape add eye-appeal.
Melting CheesesPrepare with 5 cups of milk/water per 5 pounds of cheese. Thin with water.
Queso Seguro Pasteurized Process American Loaf The standard is Butter Fat at least 50%; Moisture under 40%. Shreds extremely well and performs in topical melts and cheese sauces.
Special Melt Pasteurized Process American Cheese Food Loaf The standard is Butter Fat at least 23%; Moisture under 44%. Additional butter fat adds a softer body and wonderful, rich flavor. The product is geared toward the price-conscious customer with quality needs. Shreds and melts topically and makes a great tasting cheese sauce.

Crab Rangoon Recipeusing Culinary Selection®
Culinary Cream Cheese Spread
CraB rangoonYields 48 Crab Rangoon
8 oz. Culinary Selections Culinary Cream Cheese Spread
8 oz. fresh crab meat or canned crab meat, drained and flaked
1/2 tsp. worcestershire sauce
1/2 tsp. light soy sauce
Freshly ground black pepper, to taste
1 green onion, finely sliced
1 large clove garlic, smashed, peeled, and finely minced
1 package won ton wrappers
In a small bowl add 2 cup water and 1 tbsp. cornstartch for wetting wontons
Oil for deep-frying, as needed
Method:
• Combine the Culinary Cream Cheese Spread and crab meat
• Mix in the remaining six filling ingredients one at a time
• On a flat surface, lay out a wonton wrapper in front of you so that it forms 2 triangles (not a square). Wet the edges of the won ton
• Add 1 tsp. of filling to the middle, and spread it out toward the left and right points of the wrapper so that it forms a log or rectangular shape (otherwise the wrapper may break in the middle during deep-frying)
• Fold over the edges of the wrapper to make a triangle. Wet the edges with water and press together to seal
• Keep the completed Crab Rangoon covered with a damp towel or paper towel to keep them from drying out while preparing the remainder
• Fry in oil at temperature between 360 - 375 degrees, carefully slide in the Crab Rangoon, don’t overcrowd the fryer. Deep-fry until they are golden brown, about 3 minutes, turning once. Remove with a slotted spoon and drain
• Serve hot with Sweet and Sour Sauce or Chinese Hot Mustard

• Always have the decision maker present.
Simply dropping off samples will not
lead to sales.
• Shred each product. The colder the
product, the easier to shred. Compare
for matting and clumping. Prepare
so that Casa Solana product and the
competitor’s product are at the same
temperature. Products closer to room
temperature become softer with
enhanced flavor.
• Top separate tortillas with equal
amounts of each brand of cheese.
Fold in half. Place in 450°F oven for 2
minutes or have chef cook according
to usual method and time. Cut each
tortilla in half to compare inner melt.
Less visible shred strands means better
inner melt. Unfold tortilla. Cheese
should hold to top half. There should be
no burning.
• Prepare two cheese dips for
comparison. Use following proportions:
Shred or cube 5 lb. of each cheese, and
approximately 1 cup of milk/water per
lb. of cheese. Thicken or thin to desired
consistency for each dip blend. Heat
liquid over medium-low heat and add
each cheese to heated liquid. Cover and
stir frequently until smooth and melted.
Hold at 160 F, stirring occasionally.
• Refrigerate dips. Cool completely.
As cheese dips cool they will thicken
and develop a skin. This is normal.
Thicker product has more yield and
more profitability. If cheese dips get
too thick, use water to thin. Compare
cooled cheese dips for moisture and
separation.
