But whereas red-wine makers allow the grape skins to ferment with the juice for an extensive period, rosé producers keep the skins in contact with the juice for only a brief time. Then the pink-tinted juice is drained, or bled off, from the skins. The resulting colour, ranging from pale pink to a deeper shade of salmon or coral, is a delight for the eyes and palate.

The Provence region in France is the birth-place of rosé wine. Ever since the Greeks brought wine to this area in 600 BC, the

people of Provence have been perfecting the art of rosé production.

The tradition of classic rosé wine making now extend to other countries that have similar soil textures and climate, including Chile and Argentina.

The historic Willoughby Hotel has been an iconic North Shore Hotel for

over a century. Since its doors opened in 1899, the hotel’s superior offering,

coupled with its rich history has ensured

it has remained a favourite pub over the

years. But it is the current publican that

has reinforced the pub’s position as the

hub of the Willoughby community.

John McGurk has been publican of the

Hotel for over 3 years, and since coming

on board, has been actively engaged in

local community groups and

activities.

Between running a large hotel and rais-

ing a family with three kids, John finds

the time to be actively involved with the

local rugby clubs, cricket clubs and pub-

lic schools, in addition to working close-

ly with council and the local chamber of commerce. More often than not,

John is able to support these community groups through the hotel by way

of fundraising events and other initiatives.

The strong relationships that John has established within the wider commu-

nity reflect those that he has built with his locals at his pub. This has allowed

them to be open and honest about what they want from their local.

John said; “Our customers’ tastes have been changing over the years. They

requested a more extensive selection of craft beers that we have been in-

creasingly entering the market over the years. We listened and made the

right changes.”

The Willoughby Hotel now offers an impressive range of Australian craft

beers, with over 30 options now available. Taking it one giant leap further,

John and his team presented the Willoughby Craft Beer Street Fair in 2012

which saw thousands of local residents come down to the pub to enjoy sam-

pling craft beer from over eighteen different Australian breweries.

John continued; “Your local community should be your first point of call to

understand how you should be running your pub. Understanding what they

want and how we can help them is what it is all about.”

John’s philosophy has seen to a number of additional changes over the past

year, including a brand new seasonal menu, with a strong focus on locally

grown produce and ongoing refurbishments.

John finished; “It is the community’s support that has assisted my team and

I to make the Willoughby Hotel a place where anyone can feel welcome to

come down and enjoy some great beer, great food and great company.”

A chilled glass of still or sparkling white wine is often the preferred drink of the season. However, a wine that I really enjoy over the hot summer months is rosé.

Recent years we’ve seen an increase in wineries producing rosé wines. Apart from the fact rosé wines are a great style, winemakers love to make this particular wine as it allows them to make a bigger red wine selection with the remaining juices.

This comes about by a process called 'bleeding'. When the wine-maker crushes his grapes he allows the grape juice to have contact with the skins anywhere from 6 to 36 hours, allowing the skins to co-lour the juice. At the desired point of skin contact the winemaker then drains up to a third of the juice off the skins. This juice ferments to be-come the rose the rest of the juice and skins ferments to become their big red. Very few rosés are made

by blending red and white wine to-gether.

Rosé wines range from being off dry to bone dry, having the slight-est of blush to almost dark as a true red wine. There is a style for every-one, so start searching this summer for your preference.

Below are a few wines I will have on hand for those unscheduled get togethers this summer.

Classic Pinot Grigio flavours of apples and pears. Lovely and fresh on the palate. Not just the pinot grigio but this whole range of wines could easily become your favou-rite weekly quaffer.

Summer in Sydney is upon us and the one thing I love about this time is we get together for so many im-promptu occasions. From BBQ’s, pool parties, beach-side picnics and Australia Day, these outings give us the perfect excuse to enjoy some great wines.

This Spanish style rosé from Orange is ripe with red fruits and a touch of rhubarb. A long lingering pal-ate with a touch of sweet fruit. This wine is great with BBQ seafood and even perfect on its own on a hot sum-mers afternoon.

A classic Margaret River wine, that is fresh and vibrant. The wine exhibits lots of tropical fruit with citrus and lemon-grass helping to bal-ance the riper fruit. A lovely clean fresh palate which helps make it the perfect accompaniment with seafood, pastas or on its own again on a hot sunny summers afternoon.
