1 INSTRUCTIONS ON HOW TO USE THE GUIDE Since we are in the company VALMAR aware that it is in yours as well as in our interest that the machine would operate at its best and as cheap as possible we have prepared this instruction manual, in order to assist you with your machine. The instruction manual must be stored near the machine, so you will be able to access it when needed. Only authorized persons (operators), who know how to operate the appliance, are allowed to handle and operate it. Operators must read and study the manual carefully and they must follow the instructions. The company VALMAR can’t be held responsible for any kind of damage or injuries occurred due to non-consideration of the instruction manual. Further to these instructions, all applicable environmental legislation and regulations regarding safety at work must be taken into consideration. Handling the appliance required carefulness, which is expressed in the manual with symbols.

2 GENERAL FEATURES AND SPECIFICATIONS

2.1 GENERAL FEATURES

The appliance is designed exclusively for the ice cream production and the processing of fresh ice cream. The appliance can’t be used for the pasteurization of crude milk, but only for pasteurization of ice cream mass. Ice-cream mass should contain already pasteurized milk. The manufacturing company VALMAR cannot be held liable in any way for personal injuries or damage caused to the appliance in cases when the appliance has been used for any other purposes than those specified. The appliance consists of:

� main construction � side panels and top cover � mixture producing cylinder with mixer � electrical assembly � hydraulic assembly (water) � hydraulic assembly (glycol) � cooling assembly

It is forbidden to reassemble, alter or in any way modify the appliance or any part of the appliance without an express permission of the manufacturer. This appliance is designed in compliance with the following European directives:

� CE 98/37 and updates, � CEE 73/23 and updates, � CEE 89/336 and updates, � CEE 89/109 and updates,

and following standards:

� EN 292 � EN 294 � EN 60204

This appliance is fully compliant with all legal standards of health and operational safety. The level of operating noise does not exceed 70 dB. Cooling is carried out with the use of ecological gas R507 and water condenser with the possibility of mounting air condenser. With the intention to provide our customers with a well-tested appliance, ready for normal operation, the initial start-up is always carried out at the factory by the manufacturer before the product is packed and shipped to our client. Additional start-up and appliance's adjustments can be made on the client's premises by technicians authorized by VALMAR. The price of the appliance does not include the initial start-up on the client's premises.

Set the appliance in a suitable place, block it to ensure stability, and connect to the water and power supplies. Blocked and connected appliance is ready for operation. The warranty does not include replacements or repairs of malfunctions caused by incorrect connection of the appliance. The quality and the quantity of the ice cream depend on:

� temperature of the cooling water � temperature of air � final temperature of the ice cream � quantity and quality of the ice cream mixture

Put the ingredients into the mixture production cylinder, close the lid and press START button. The appliance will produce the needed mixture based on selected program (P.1 ~ P.21). Appliance operations:

� simultaneous mixing and heating of the mixture until the pre-selected temperature (max 115°C),

� simultaneous mixing and cooling of the mixture to 4°C and maintaining the produced mass at a temperature of 4~5°C;

� possible mixing modes in production cylinder:

� constant, � impulsive, � fast, � slow.

The warranty does not include replacements or repairs of malfunctions caused by incorrect use of the appliance.

2.2 IDENTIFICATION OF THE APPLIANCE

Every appliance has its own identification label, which is fixed on the backside of the appliance. The ID label contains the essential technical specifications of the appliance:

All performance data is based on standard ice cream mixture production. When producing mixtures, which include ingredients or additives that increase in volume during heating and/or cooking, the maximum mixture quantity must be reduced in accordance with the recipe.

3 TRANSPORTATION AND POSITIONING THE APPLIANCE

3.1 INSTRUCTIONS FOR PREVENTING INJURIES

Pay due attention to legally required safety measures. At work wear suitable clothing. Do not wear ties, jeweller’s chains or belts, which could get caught in the machine. Do not shift or dislocate the safety switches or protective parts. Make sure that the lifting device is in good condition and that its load capacity exceeds the weight of the appliance (refer to the technical specifications data sheet). Lift the appliance following the instructions for its use and maintenance. Pay attention to the handling and handgrip locations. The use of a suitable lifting device is recommended. While lifting or moving the appliance do not stand under the machine. Do not turn the appliance after holding the cables or the water hose has lifted it. If you have to attend to any work higher up above the appliance, you should use a suitable ladder and not the appliance for support.

3.2 UNLOADING THE APPLIANCE FROM THE LORRY

Required devices are a hand lift for pallets and a forklift truck with load capacity of at least 1,200 kg. Lift the crate containing the appliance using the hydraulic palette lift and move it as close to the open side of the lorry as possible. Remove the hand lift from underneath and handle the crate with the forklift truck. Make sure that the weight is focused on the holding points. Remove the crate from the lorry with the forklift truck in reverse gear as soon as the crate is moved out of the lorry, and lower the crate to the minimal height of around 30 cm. Slowly and carefully place the box containing the appliance in its place. To move the appliance around on the premises use wheels, which are supplied with the appliance. .

3.3 UNPACKING OF THE APPLIANCE

Upon the delivery of the appliance check if the crate was not damaged during transportation. The appliance is fixed to the pallet with two screws. The side covers should be removed and the screws detached. When the machine is unpacked, make sure that the packaging is disposed in a suitable manner and in compliance with standards on environmental safety.

3.4 PLACEING THE APPLIANCE

Place the machine on a level solid surface with an adequate strength of at least 600 kg per m² for the weight of the machine, and position the appliance at least 60 cm away from the wall or other objects. Leave enough space in front of the appliance to ensure comfortable access and work with the appliance. While placing the appliance in position, block the front wheels (by pressing the brake), which will ensure that the appliance will not be able to move.

4 REQUIREMENTS AND CONDITIONS FOR NORMAL OPERATION OF THE APPLIANCE

Before connecting the appliance to electricity supply, the operator must make sure that environment requirements have been met: the temperature and humidity of the air must be appropriate and the water supply and electricity networks comply with all requirements for normal operation of the appliance. When the characteristics of either the water supply or electricity network fail to meet the requirements for normal operation, the machine must not be connected to power supply.

4.1 ENVIRONMENTAL CONDITIONS

Prior to connecting the appliance, the temperature and the humidity of the environment, in which the appliance will be operated, must be assessed and checked. If room temperature drops under 0 ºC (273K), water must be released from the condenser.

4.2 WATER SUPPLY REQUIREMENTS

Prior to connecting the appliance to the power source, the temperature, pressure and water flow from the water supply network must be checked. Permitted water temperature and water pressure from the water supply network: Water supply must be checked for all conditions that are required for alimentary use. Low water pressure causes the cooling system to function improperly. The cooling gas does not condense, thus causing the compressor to overload. In such cases, the safety pressure valve kicks in and switches off the compressor. The results of mixture treating and ice cream production when the water pressure is too low are not as good as when the water pressure is normal. The maximum presence of chlorides in water is 120 ppm. Exchangers are not suitable for the use of salt water.

4.3 ELECTRICITY SUPPLY REQUIREMENTS

Prior to connecting the appliance to the power source, the voltage and the maximum power current allowed in the network must be checked and the appliance must be protected externally with FUSES and the MAIN SWITCH. Permitted voltage of three-phase appliances (400/50/3): Permitted voltage of monophase appliances (230/50/1): The diameter of each phase conductor must be of an appropriate dimension (corresponding to the power of the fuses). The MAIN SWITCH must be installed in the immediate vicinity of the appliance, where it must be easily visible, accessible to the operator and appropriately marked.

Magnetothermic differential FUSES (slot ≥ 3 mm) of appropriate dimensions must be installed between the electricity network and the MAIN SWITCH.

5 CONECTING THE APPLIANCE

5.1 INSTRUCTIONS FOR PREVENTING OF INJURIES

When the characteristics of either the water supply or electricity network fail to meet the requirements for normal operation, the machine must not be connected to the power supply. It is forbidden to connect the appliance to the power source when the floor around the appliance is wet. It is forbidden to connect the appliance to the power source if any of the side panels and the cover is missing.

5.2 CONNECTING THE APPLIANCE TO THE WATER SUPPLY

The water supply valve is connected to the WATER SUPPLY PORT. The water outlet pipe is connected to the WATER OUTLET PORT. All mentioned water connections have a diameter of 3/4". To connect the appliance to the water supply (water supply port) and the outlet to the drain (water outlet port), use pipes capable of withstanding 1MPa and measuring at least ½” in diameter (make sure upon the delivery that the pipes are supplied with the appliance).

If the appliance is meant to be used in areas with two separate water supplies, two separate water connectors are built in it, one for each: a DRINKING WATER SUPPLY PORT and a COOLING WATER SUPPLY PORT (condenser). The valve belonging to the cooling water supply must not be connected to the DRINKING WATER SUPPLY PORT. The valve belonging to the drinking water supply may be connected to the COOLING WATER SUPPLY PORT and/or to the DRINKING WATER SUPPLY PORT. The valve should be opened after the appliance has been connected to the water supply system.

5.3 CONNECTING THE APPLIANCE TO THE POWER SUPPLY

Only appropriately trained technicians are allowed to connect the appliance to the electrical current. They must follow installation instructions and observe the occupational safety regulations applying in the country in which the appliance is being installed. They must read the instructions carefully and above all thoroughly familiarize themselves with the sections on REQUIREMENTS AND CONDITIONS FOR NORMAL OPERATION OF THE APPLIANCE and the machine’s electrical circuit scheme. Before connecting the appliance, all attachments that might have become loose during transportation must be checked. Attachments that may have become loose or disconnected must be screwed back on and tightened. Connecting instructions for five-vein cable (three-phase appliances – 400/50/3): Connecting instructions for four-vein cable A test start-up of the appliance is carried out by an appropriately trained electrician who has also connected the machine so as to make sure that it is properly connected (see the section on MAINTENANCE). If the appliance is correctly connected to the mains the mixer in the production cylinder should be turning in counter clockwise direction.

Should the mixer is turning in clockwise direction, it is necessary to change the connecting position of any of the two phases. Production cylinder mixer, installed in appliances with built-in inverter, will rotate in the counter clockwise direction regardless of the connecting position of either of the phases. After connecting the appliance to the electricity network, appropriately trained electrician must also control the power consumption. The current must not exceed the maximum allowed on the identification plate or sticker (see the section GENERAL FEATURES AND SPECIFICATIONS). Appliance with more than 2kW power should have fixed electrical connection. Fuses can’t exceed manufacturer prescripted fuse power! (possible cause of fire)!

6 OPERATING THE APPLIANCE The user operates the appliance standing in front of appliance. This position allows user to handle the control panel, the safety switch and the water flow regulation valve (shower). The appliance must be always under users control during operation.

The control panel is used to display the status or the operation phase the machine is in, to perform settings and to show messages and errors while producing ice cream. The safety switch is used to safely and securely switch of the electronics. The electronics is switched off by pressing down the switch-off key in the normal position and then depressing it. The switch will normally remain down and must be pulled back up by hand to return to its normal position. The shower is used for cleaning of the appliance.

7 CONTROL BOARD The control board consists of a display with keys and keys with light indicators. The display with keys and light indicators serves to display the status or operation phase of the appliance, various messages and error messages during mixture treating and for setting processing parameters for the ice cream mixture. Keys with light indicators are used to start or terminate various functions. Pressing such a key will activate a designated function and the indicator above the key will light up.

7.1 KEYS WITH LIGHT INDICATORS

7.1.1 OUTLET VALVE WASHING key

Pressing this key for half a second, during any phase or operation, will activate water flowing through to clean the valve. Water is discharged when key is pressed.

7.1.2 CYLINDER WASHING key

Pressing this key will activate water discharge into cylinder if the appliance is in STOP state or during heating phase. This is not possible during cooling or temperature maintenance phase. If washing is possible and the key is pressed twice within 2 seconds, water inflow lasts for 3 minutes. The operation may be terminated by pressing the same key again or by pressing the STOP / RESET key.

7.1.3 MANUAL MIXTURE TREATING key

Pressing this key will activate the mixture treating with manually selected temperature. The ice cream mixture is mixed and heated up to the manually selected treating temperature between 65°C and 85°C, entered in the SET phase. As soon as the heating phase is completed the appliance enters cooking phase. When cooking time expires the appliance enters cooling phase. The mixture is cooled down to 4°C and subsequently automatically maintained at the temperature 4-5°C until is used.

7.1.4 COOLING AND MAINTAINING key

Pressing this key will activate the ice cream mixture cooling and maintaining. Ice cream mixture is cooled down to 4°C and then automatically maintained at the temperature 4-5°C until is used.

7.1.5 MIXING key

Pressing this key will activate the mixer if the appliance stands still. If the appliance is in the cooling or heating phase, pressing this key sets the rotation speed of the mixer. Light indicators display the selected mixing speed; when both indicators are on, speed is set automatically as required in individual processing phases.

7.1.6 AUTOMATIC MIXTURE TREATING key

Pressing this key will activate the mixture treating with preseted temperature. The ice cream mixture is mixed and heated up to the preseted treating temperature of 85°C. As soon as the heating phase is completed the appliance enters cooling phase. The mixture is cooled down to 4°C and subsequently automatically maintained at the temperature 4-5°C until is used.

7.1.7 STOP / RESET key

Pressing this key will stop the operation of the appliance, regardless of the current phase. OFF is displayed on the display. After this, any key may be used.

7.2 DISPLAY WITH KEYS AND LIGHT INDICATORS

7.2.1 HEATING PHASE

When this indicator is lit, appliance is in the heating phase. 7.2.2 MANUAL MIXTURE TREATING

When this indicator is lit, appliance is in the cooking phase during mixture treating with manually selected temperature.

7.2.3 COOLING PHASE

When this indicator is lit, appliance is in the mixture-maintaining phase. When this indicator is blinking, appliance is in the cooling phase.

7.2.4 MIXING PHASE

This light signal is lighted on if the slow hand-selected mix is chosen.

This light signal is lighted on if the fast hand-selected mix is chosen. The user can change the mixing speed during the mixing cycle by pressing MIXING MODE key and chose between slow, fast or automatic speed. If automatic mode is selected, both light signals are switched on (snail and rabbit).

7.3 UP and DOWN keys

UP key

Pressing UP key: � will stop beeping at the end of the phase; � will stop error beeping; � until the UP key is pressed the display shows the glycol

temperature; � if the appliance is in STOP position, the simultaneous pressing of

the UP and COOLING AND CONSERVATION keys activates glycol pump and the display shows Pum.

DOWN key

Pressing DOWN key: � until the DOWN key is pressed, if the appliance is not in mixing

phase, the display shows the mixtures temperature in the pot ; � if the appliance is in mixing phase, pressing DOWN key will

display the mixtures temperature in the pot until next pressing of the key.

7.4 DISPLAY

7.4.1 Messages Appliance in STOP mode

If the display shows OFF it means that the appliance is in STOP mode.

Compressor cannot be switched on

This message means that the compressor cannot start due to pressostat guard or thermal sensors guard.

Appliance in function without displaying of temperature

Message means that the appliance is in active mode (no heating or cooling) without displaying the temperature (cleaning, test-run, mixing)

Cylinder coverlid is open

This message means that the pot cover lid is open. Due to the pot cover lid being open, the active phase and the mixing phase are interrupted. In order to continue with the program, the cylinder door must be closed.

Manual start-up of the glycol pump

This message means manual start-up of the glycol pump due to simultaneous pressing of the UP and COOLING AND CONSERVATION keys.

50Hz impulse is not reached

This message means that 50Hz impulse is not reached at start-up or at reset.

Control panel codes and software versions

This message shows control panel codes and software versions. 7.4.2 ERRORS Mixer engine overheating temperature has been reached

This error message means that the temperature of the mixer engine has reached the point of overheating. After 4 subsequent errors the appliance enters STOP position. If the appliance was in the active phase before overheating, the phase goes on only after temperature drops below overheating point. The error message clears only when the temperature has dropped back below overheating. The error cannot be cleared by pressing STOP / RESET.

Presostat errors

This error message means that 16 subsequent presostat errors occurred. The appliance gives off a quick beeping sound and enters STOP position. The error is cleared by pressing STOP / RESET key.

Mixer engine overheating temperature has dropped below critical point

This error message means that the exceeded temperature has already dropped below overheating. The error is cleared by pressing STOP / RESET key.

Temperature exceeded 10°C during the conservation phase

The error message is displayed when temperature between the

conservation and maturing phases at 4- 5°C rises above 10°C. The COOLING PHASE light indicator blinks and the appliance gives off a quick beeping sound. The beeping and blinking is cleared by pressing STOP / RESET key.

Mixture was not cooled within 150 minutes

The error message is a warning that mixture has not cooled down to

4°C in 150 minutes; the appliance gives off a quick beeping sound. The beeping is cleared by pressing STOP / RESET key.

Power failure during cooling phase

The error message is displayed if the microprocessor determines during data analysis that there was a power failure during the cooling phase. Er6 error message is displayed and the appliance continues operating. The error is cleared by pressing STOP / RESET key.

Glycol pump error message

This error message is a warning that the starting state of the glycol pump does not match the state of the differential pressure switch. The state of the pressure switch is tested 5 seconds after the change of the state of the pump. If the pressure indicator does not confirm that the pump is engaged, heating or cooling phase cannot be started. The error is cleared by pressing STOP / RESET key.

Temperature sensor failure

This error message means that the temperature measured exceeds allowed parameters. This may be due to terminated connection or a short-circuit error of the PT1000 temperature sensor.

8 ICE-CREAM MIXTURE PREPARATION

8.1 SETTING THE MIXTURE TREATING TEMPERATURE

In case mixture treating with manually selected treating temperature (MANUAL MIXTURE TREATING) is selected, the mixture treating temperature can be manually selected between 65°C and 85°C. Pressing MANUAL MIXTURE TREATING will activate heating of the mixture. Pressing the SET key will show the final temperature of ice cream for 5 seconds During these 5 seconds, the user may increase set temperature (by pressing UP) or lower it (by pressing DOWN). By pressing SET within 5 seconds since the last change of temperature, the new temperature becomes the assigned temperature. The cooking time at the selected treating temperature is selected automatically by appliances microprocessor. Symbolic display of temperature choice:

8.2 MIXTURE TREATING AT THE PRESETED TEMPERATURE

By pressing AUTOMATIC MIXTURE TREATING activate the mixture treating with preseted temperature. The ice cream mixture is mixed and heated up to the preseted treating temperature of 85°C. As soon as the heating phase is completed the appliance enters cooling phase. The mixture is cooled down to 4°C and subsequently automatically maintained at the temperature 4-5°C until is used.

Total mixture treating time must not exceed two hours and a half. If temperature does not fall to 5°C after 150 minutes, there has been a malfunction. The ice cream mixture is not suitable for consumption and must be discarded. In such event, call VALMAR service personnel immediately!

9 PROTECTION OF THE APPLIANCE AND USER

9.1 PROTECTION OF THE USER

Safety micro-switches, built into the machine under the rim of the cylinder coverlid protect the operator against injuries that might be caused by the mixer’s rotation. Opening the cylinder cover lid will cause the operation of the mixer engine to shut down.

9.2 ELECTRICAL OVERLOAD PROTECTION

Electrical installations are protected with appropriate FUSES. If the FUSES terminate the operation of the appliance upon its start-up, the error causing this action must be found and corrected.

9.3 THERMIC SAFETY DEVICES

The mixer engine and the compressor engine are protected with thermal sensors. If temperature reaches the maximum allowed value, the protection shuts down the engine operation. In this case, press the key STOP and allow 15 - 20 minutes for the engine to cool down. After this time, the appliance is again ready for normal programming and operating (see the section OPERATING THE APPLIANCE).

9.4 PROTECTION OF THE COOLING SYSTEM

The cooling system is protected with the pressostat at the maximum pressure of 2,5 MPa (25 bar) for the cooling gas R507. In the case of water shortage, the protection shuts down the operation of the cooling compressor.

10.1 GUIDELINES FOR THE PREVENTION OF INJURIES

Only authorized persons, who know how the machine is operated, must be allowed to handle it. Operators must be familiar with all regulations concerning occupational safety and fire safety measures, and they must know where fire extinguishers are located. Persons still in training must be constantly supervised by a designated person in charge who knows how the machine works. Operators must be dressed suitably (no ties, jewelers chains or belts that could get caught in the machine) and be appropriately protected. All warning labels on the appliance must be replaced with new ones when they begin to fade or if they become damaged. Before operation, the operator must make sure that the appliance is not under maintenance, in service or in cleaning. At the end of the shift, the operator working on the next shift or the person who will continue to operate the appliance must be informed of the current state of the appliance. Before every use, the operator must make sure that the floor is free of any oil smudges or other slippery substances or objects which might cause a person to slip or trip over. Operators must make sure before every use of the appliance that the side panels and the top cover of the appliance are securely fitted to the main construction and that there are no parts or objects on the appliance or in the cylinder that could damage the appliance during its operation. In the event of dangerous situations (e.g. blocked mixer), which could harm the operator’s or another person’s well being, switching off the MAIN SWITCH must immediately shut down the appliance. The side panels and the top cover, as well as safety devices and protective covers, must not be taken off during the operation of the appliance. It is forbidden to get onto the appliance and walk upon it during its operation. During the operation, attention must be paid to any oil leaks, increased noise, squeaking sounds or increased vibrations. In such a case, the appliance must be immediately shut down; a visible notice board must be placed on it with information that it is inoperable and authorized service personnel must be notified as soon as possible. Attention! Be careful not to burn yourself! During the heating phase the mixture and the inside of the basin-pot get very hot.

The user operates the appliance standing in front of appliance. The appliance must be always under users control during operation. Only a single operator can use the appliance at the time. The simultaneously use of the appliance from multiple users is forbidden.

10.3 PRODUCTION BASIN COVER LID

The operator opens the cover lid by lifting the lid lever and lift it back into the open position. If the appliance is in the mixing mode, the mixing will be interrupted by lifting the lid (magnetic switch - OFF) We close the lid cover by pulling the lid lever back down in close position. If the appliance was in mixing mode the appliance will continue the mixing mode after cover is closed. (magnetic switch - ON).

10.4 OUTLET PIPE

The outlet valve opens by turning the handle in the counter-clockwise direction and pulling it towards oneself.

The outlet valve closes by pushing the handle fully forward and turning it in the clockwise direction.

10.5 BEFORE APPLIANCE USAGE

Before using the appliance you should:

� Check that the surroundings of the appliance are not wet or slippery; � Check that the water gauge inlet is opened; � Check that the FUSES are inserted and protected; � Check that the MAIN SWITCH is turned on; � Check that the basin is properly cleaned; � Check that the basin is properly disinfected; � Check that there are no other items or tools left in the production basin

Just a cleaned and disinfected appliance can be used for mass preparation. To get optimal results it is needed to have proper quantity and proper quality of the mixture.

The amount of the mixture shall conform to the technical characteristics of the machine. During preparation and loading it is needed to comply with the minimum and maximum mixture amounts in the basin. They are reported in below table: All performance data is based on standard ice cream mixture production. When producing mixtures, which include ingredients or additives that increase in volume during heating and/or cooking, the maximum mixture quantity must be reduced in accordance with the recipe.

10.6 SMALL AMMOUNTS OF ICE-CREAM MIXTURE

To prepare small amounts of ice mass it is necessary to install a flue damper on the agitator. Mixing smaller quantities without flue dampers cause air suction in the mix. When the mass occupies more than half of the basin volume, the flue damper is not needed. For small amounts of ice-cream mixtures it used reduced heating and cooling. When entering the stage of preparation or refrigeration, the reduction is always off. If the key of currently selected mode is pressed once again for more than 3 seconds the reduction is switched on or off. If the reduction is activated the led of the active key is blinking. If the key is pressed again the reduction will be disabled.

10.7 MIXTURE TREATING AT THE PRESETED TEMPERATURE

Ice cream mixture treating process at a preset temperature:

� make sure that the control panel is in STOP state; � make sure that the outlet valve is properly set and well closed; � pour ice cream mixture in the cylinder and close the cover lid; � press the AUTOMATIC MIXTURE TREATING key, temperature in the

cylinder is shown on the display, heating phase light indicator lights up; � as soon as mixtures temperature reaches preset temperature 85°C, the

appliance enters COOLING PHASE and the cooling phase light indicator begins blinking; mixture is cooled down to 4°C;

� as soon as mixture reaches temperature 4°C, the appliance enters MAINTAINING PHASE at a temperature between 4°C and 5°C and the cooling phase light indicator starts lighting continuously.

10.8 MIXING

Ice cream mixture mixing:

� while the appliance is standing still, press the key MIXING to activate the mixer;

� by pressing this key during the mixing phase, you change the mixing speed and the corresponding indicator lights are switched on. When both indicators are on, speed is selected automatically;

� by pressing the MIXING key when the appliance is in the phase of maintaining or conserving ice cream mixture (the mixer is not active) will activate the mixer for the duration of 1 minute, after which it will stop automatically.

Pressing the STOP/ RESET key can stop MIXING.

10.9 OUTLET OF ICE-CREAM MIXTURE

Process of outlet of mixture into a pot (Be careful not to burn yourself while pouring out

the hot mixture!):

� Place a container under the drain outlet; � Open outlet pipe; � Control the outlet of ice-cream mixture; � Close the outlet pipe.

The side panels and the top cover, as well as safety devices and protective covers, must not be taken off during the cleaning (during SLOW MIXING) of the appliance. It is forbidden to get onto the appliance and walk upon it during its cleaning. During the cleaning (during SLOW MIXING) of the appliance, attention must be paid to any oil leaks, increased noise, squeaking sounds or increased vibrations. In such a case, the appliance must be immediately shut down; a visible notice board must be placed on it with information that it is inoperable and authorized service personnel must be notified as soon as possible Each day before using the machine it is mandatory to verify the operation of the safety switches on the door. When the machine is in standby mode (on the screen it shown OFF) lift the basin cover lid. On the screen it should appear DOOR. Then (with the cover lid opened), press MIXING MODE key, the appliance must NOT START.

11.2 CLEANING THE SURFACES

Surface cleaning includes cleaning of the side panels of the machine and other external parts of the machine that are not in contact with the ice cream mix. It is strictly forbidden to use abrasive pads or aggressive cleaning agents, which can damage the surfaces.

Cleaning process:

� turn off the SAFETY SWITCH and the MAIN SWITCH; � ensure that the cover lid and outlet pipe are properly closed; � clean the surfaces and make sure that the detergent does not touch those

parts, which do come into contact with ice cream mixture.

11.3 WATER PIPES USAGE FOR CLEANING PURPOSES

For cleaning the basin or outlet pipe washing you can use the water pipes that are installed into the appliance itself. The upper pipe that is installed in the upper part of the basin is meant for washing or adding water into the basin. Lower pipe, which is installed in the lower part allow us to wash the outlet pipe, but not to clean it in the appropriate way. The pipes have to be connected to the drinkable water inlet (Check appliance connection). The pipes are controlled by keys on the electric control board. (Check electric control board).

11.4 CLEANING OF PARTS THAT COME IN CONTACT WITH THE ICE CREAM

All parts, which come into contact with ice cream mixture, must be cleaned before and after every use. With regular cleaning practice you comply with standards of hygiene and ensure ice cream mixture treating quality. Cleaning process:

� make sure that the mixture treating control panel is in STOP state; � make sure that the ejection opening is well closed; � by double pressing the desired temperature key allow water inflow into the

basin (30 cm of water); � Press the mixing key and pay attention on the mixer; � Press STOP / RESET key; � turn off the SAFETY SWITCH and the MAIN SWITCH; � place a suitable container under the ejection opening; � open the outlet pipe and empty the water from the basin; � disassemble the cylinder cover:

First, unscrew the cap (clockwise) and lift it from the lid.

Then unscrew the top of the lid (clockwise) and remove it.

Finally lift the lid lever and remove the lower part of the lid.

� unscrew the plastic bolt, take off the flue damper from the mixer, extract the mixer from the basin:

First unscrew the plastic bolt (clockwise).

Pull off a flue damper from the mixer.

Firmly grab the mixer with both hands and slowly pull it out with care from the cylinder, as the mixer could be damaged by accidental dropping.

Unscrew the locknut. Push the handle as far as possible and turn it clockwise. Use both hands.

Pull out the piston from the outlet pipe.

Loosen the valve locknut (clockwise) and detach the outlet pipe assembly using both hands.

� take off and inspect he piston seal, the locknut washer and the valve washer: if the washer or seal is cracked, worn or has lost elasticity, it must be replaced with a new one;

� the mixer, blockader, both sliders, all parts of the outlet valve, all washers and seals must be cleaned in warm water and left to dry. It is strictly forbidden to put plastic parts of the appliance into the dishwasher to clean them!

When cleaning the mixer use the brush that is supplied with the appliance.

� it is recommended that rubber seals are greased with Vaseline � put the mixer back into the basin, screw the plastic bolt and if necessary re-

install the flue dumper back onto the mixer: Hold the mixer with both hands and slowly and carefully put it back in position into the basin.

When the mixer is back in proper position onto the mixer axe screw the plastic bolt.

At the end if necessary put the flue damper back onto the mixer (see chapter SMALL AMMOUNTS OF ICE-CREAM MIXTURE)

� reinstall the cover lid: First put the lower cover back into position and lower the lid lever.

Then put the upper part of the cover back in position and screw it onto the lower part of the lid.

At the end screw the cover cap onto the upper part of the lid. With this the basin cover lid is back in position and ready to use.

� re-install the outlet pipe assembly: Put the outlet pipe assembly near the outlet support and screw the valve locknut back in position. Outlet drain pipe should be directed downward toward floor.

Insert the piston back into the housing of outlet pipe assembly by turning it and screw the locknut back in position.

11.5 PRODUCTION BASIN DISINFECTION

Disinfection process:

� make sure that the mixture treating control panel is in STOP state; � make sure that the ejection opening is well closed; � open the basin cover; � fill the basin with a disinfecting mixture; � fill the basin with water (double click DESIRED TEMPERATURE key); � close the cylinder cover and let the disinfecting mixture rest for 20 minutes.

While doing so, please pay special attention to instructions of the disinfection agent manufacturer as well as hygienic standards, which are valid in your country

12 MAINTENANCE OF THE APPLIANCE

12.1 INSTRUCTIONS FOR PREVENTION OF INJURIES

Authorized servicing personnel may only perform removal of the top cover and side panels and any intervening actions inside the machine. Removal of the top cover and side panels and any intervening actions inside the machine is strictly forbidden when the machine is connected to the power supply. It is strictly forbidden to connect the machine to the power supply if top cover and side panels are not properly attached and all required security measures are not in place. Cleaning or lubrication of parts, which are moving or rotating, is forbidden.

12.2 PROBLEMS, ERRORS AND TROUBLESHOOTING

Malfunctions and errors are caused mostly by incorrect use, improper or inadequate maintenance or incorrect connection of the appliance. Therefore the operators must always carefully follow the instructions.

12.4 TESTING START UP

Testing start up of the appliance:

� make sure that the control panel is in STOP state; � make sure that the outlet pipe is properly set and well closed � open the cover lid ; � fill the basin with 30 cm of water (double click DESIRED TEMPERATURE

key); � lower – close cover lid; � press MIXING MODE key and check mixer operation; � press STOP / RESET key; � open outlet pipe and empty the water from the basin.

12.5 REGULATION OF THE WATER FEED VALVE

The water feed valve is preset to factory default values. These may change due to possible shocks and vibrations during transportation. In this case, the water feed valve has to be reset properly by authorized servicing personnel. The water feed valve functions properly when tepid water is discharged from appliance during the operation of the compressor unit; the water flow stops when the appliance stops. Water consumption increases if the temperature of cooling water exceeds 18°C.

12.6 ENVIRONMENT TEMPERATURES BELOW 0°C

Do not leave the appliance in an environment colder than 0ºC (273K). If this is the case, discharge water from the condenser. To empty the water out of the appliance, detach the cap of the safety valve at it's bottom. When all water has been discharged, put the cap back in position.

Open the safety valve and empty the system.
