If the mother of the bride is still beaming six months after her only daughter’s wedding, it must have been a special event. If that mother is Joan Bever, wedding planner extraordinaire and Director of Catering and Banquet Operations for !e Breakers in Palm Beach, you know it must have been a doozey.
I had the great pleasure of speaking with Joan about all things weddings during a recent visit to Palm Beach. During her 17 years at !e Breakers, she has planned events both small and grand, but it wasn’t until her only daughter got married did she understand why people choose a destination wedding.
Her new son-in-law is Chilean, and with both families spread across the globe, the destination experience made perfect sense for the couple. “Having gone through it myself, I can really sell destination weddings from the heart. !e experience allows everyone time to connect in a relaxed environment over the course of several days, ” she said. !e Breakers is just one of three outstanding venues featured in Destination Palm Beach (feature on pages 30–37).
I also talked with Joan about the importance of relying on an experienced wedding planner. “When you are in the moment, every decision is emotional and that third party serves as the rational voice to get things done,” she said. To that end, we’ve called on the experts to share their advice on choosing a photographer (pages 54–57) and tackling an outdoor wedding (pages 48–53), all complemented by outstanding photography that is sure to provide a bit of inspiration for your own special day.

!ree years after their chance meeting at a Halloween costume party, Colin Walker proposed to Lauren Moerings while the couple vacationed in Napa Valley – a pre-planned photographer planted in the bushes captured Lauren’s exuberant reaction.
!e destination ceremony and wedding, held in Palm Beach, took place at the historic Bethesda-by-the-Sea Episcopal Church and !e Breakers, respectively. Lauren worked remotely with the wedding professionals from !e Breakers, which helped her select which of their many gorgeous venues would serve as the backdrop for their reception and satis"ed Colin’s request for a premium bar and great music.
!e bride, wearing an Amy Michelson sheath, looked radiant and fresh with her hair fashioned into a low chignon and ornamented with a single orchid. Complemented the summery feeling were her bridesmaids who were attired in short buttery yellow bubble hem dresses.
At the reception, dramatic table centerpieces were fashioned from orchids of varying types; a single orchid was tucked into the linen napkins at each table setting. Even more orchids could be found on the multi-tiered wedding cake, which appeared to “#oat” atop a clear glass overlay underlined with coordinating #owers.
At the end of the evening, ladies in attendance were given butler-passed #ip-#ops, while the men received Nicaraguan cigars with custom labels.

Seven years a!er meeting Kortney Bryan at the University of Kentucky Library, Ryan Roppel was "nally able to propose. He had waited patiently for Kortney to complete Veterinary school at Auburn University, as he went to Knoxville to open a new branch of the family automotive business. Ryan proposed on a special trip to Savannah, then surprised Kortney with an engagement celebration with family and friends at Hilton Head.
#e couple chose Downtown Louisville for their wedding in keeping with the Southern traditions they both love. Family from Arizona and friends came from near and far to celebrate the special New Year’s Eve wedding. #e ceremony took place at St Bonaface Church. Kortney was absolutely stunning in her Ramona Keveza designed dress. As she walked down the aisle with her father to Canon in D, the violin strings and harp and the look on Ryan’s face made it impossible for her or her guests to hold back tears. #e spiritual celebration o$ciated by Father Martin Linebach (Ryan’s cousin) was very personal and emotional, but of course sprinkled with a touch of family humor.% #e couple le! the church in a 1937 Mercury convertible supplied by Ryan’s grandfather. A "tting departure for a couple about to extend family business to a new generation.
#e dinner and reception were held at the historic Brown Hotel where guests were treated to special “Hot Brown” hors-devours and of course, Kentucky bourbon.% Boston Floral Couture’s careful attention to design and details made a perfect setting for a New Years Eve celebration. Everything from the &oral arrangements, to the beautiful white linens and the blue lighting turned the room into a special moment in time. Hand made petit fours and cakes from Cake Flour on Market were displayed elegantly for the guests to enjoy. #e “Endless Summer Band” played nonstop to a packed dance &oor and as the “snow” &oated down gently over the guests with noisemakers at midnight, Kortney and Ryan knew it was the “perfect ending to a perfect day”.

Kali Chowning and Brandon Lewis were married at Kali’s family estate located in Bardstown, KY. !e ceremony took place at the front of the home. Guests watched as Kali and her father, D.L. Chowning, walked through the large double doors of the house and made their way to the edge of the walkway. D.L. gave his daughter a long embrace before he gave her hand to Brandon. After the ceremony, guests made the walk over to the huge tent awaiting the introduction of the couple. Everyone enjoyed dinner and danced under the massive hanging grid made of willow branches. From the branches hung clusters of pink peonies, ribbons, and votive candles. !e reception went late into the night as guest enjoyed the sounds of a the Endless Summer Band.

Fox 41 News Anchor Jennifer Baileys chose the elegant Hurstbourne Country Club
for her fabulous outdoor wedding. She looked stunning in her beautiful dress and her
shoes were striking. !e lighting was almost magical as it pierced through the trees
and the ballroom was an exquisite setting for their "rst dance. Jennifer’s new husband
Chris is one of Louisville Metro’s Finest. !ey meet when Chris was giving Jennifer
a ticket for blocking tra$c with the news van. !ey are a wonderful couple and so
fun to just hang out with. !ey looked great and were so easy to photograph. I was
honored to be a part of their wedding and I had a great time.

Tara !ompson and Matt Elder kept with their Kentucky roots as they were married
at St. Joseph Proto-Cathedral and celebrated their reception at My Old Kentucky
Home in Bardstown, KY. !e couple prepped for the wedding at a local bed and
breakfast and then had a private meeting at the carriage house behind My Old
Kentucky Home before their photos. After the ceremony, the couple rode to the
reception with the wedding party in a trolley car. !e reception began with dinner
in the Great Hall at the visitor’s center. Guests then walked over to the Rotunda
for cake and dancing. !e celebration went late into the night with live music and
specialty drinks.

Tim and Cheri met at their current employer where they have both worked for over
15 years. !ere are "ve children between the two of them and the couple felt blessed
to have all of them take part in their wedding day, which made it even more special.
An hour before the wedding rain and hail threatened to ruin the day. As if
on cue, about 15 minutes before the ceremony, the sun came out, the skies turned
blue and everything sparkled. Folks scrambled to dry o% the chairs just in time for
the couple’s dream wedding in the beautiful rose garden at Garden Court on the
Presbyterian Seminary campus.

!e term “Princess Bride” comes to mind when picturing a destination wedding at !e Breakers Palm Beach. !e opulent Italian Renaissance-style “castle” on the Atlantic Ocean is complemented by 140-acres of impeccably manicured grounds and a nearly limitless range of activities to entertain wedding guests of all ages.
“Our landscape engages guests with its dramatic sensory appeal,” said Danny Miller, director of horticulture and grounds at !e Breakers who helms a 44-member team of gardeners and grounds technicians. “We know that hues attract attention, variety piques interest and scent taps into mood. Our guests are sophisticated enough to appreciate the creative thought put into every square foot and the attention to detail that makes each camera angle a photo opportunity.”
While the property can seem intimidating due to its scale, it is “home” to a top-notch team of experienced wedding planners who make the experience feel like a family a%air. Joan Bever, Director of Catering and Banquet Operations has a 17-year tenure at the property, while Je% Simms, executive chef of banquets, is in his 14th year. Bever pointed out that the “new kid on the block” on her team is now in his sixth year.
With venues large and small, both inside and out, !e Breakers is able to accommodate a tailored range of events: a sunset ceremony on the oceanfront lawn to a ballroom reception
under gilded, frescoed ceilings. Even completely unadorned, the majestic ballrooms, some of which are modeled after historic 14th and 16th century palazzos of Italy, possess a fairytale quality. Di%erent venues can be called into service for varying facets of the destination wedding, providing distinct experiences for the rehearsal dinner, ceremony, reception and post-wedding brunch.
Wedding fare is meticulously prepared and artfully presented. “We obtain absolutely the best products on the market, as these core ingredients are the foundation for outstanding cuisine,” said Chef Simms. Wine director and master sommelier Virginia Philip and her team of "ve sommeliers are available to o%er their expertise in wine and food pairings (elsewhere in this issue you’ll "nd her recommendations for several romantic wines).
Bever recommends scheduling your event one-year in advance, although she’s booked weddings with as much as a two-years out and as little as six months. Bever and her team have established wonderful working relationships with the country’s leading event designers such as Michelle Rago and Preston Bailey to name a few. His painterly plated compositions are enhanced by incredibly attentive service that includes the expertise of one of two on-property Master Sommeliers. !is duo possesses an amazingly intimate knowledge of !e Breakers’ 28,000-bottle collection. !e 40+ page wine list is a treat to review, as is the 7,800-bottle display Wine Cellar, where hand-painted 19th century European leaded glass doors open to reveal a #oor of Chinese slate engraved with a vineyard pattern and a racking system make from gleaming solid redwood. Discreetly nestled amidst tidy bungalows on a residential street within walking distance to the beach, the supremely intimate Brazilian Court Hotel, constructed in 1926, remains a favorite of celebrities, Palm Beach power players and socialites who cherish the historic ambiance of spacious guestrooms enveloping lush courtyards.
Crossing the threshold, guests are transported to a serene oasis. Just beyond the reception desk - where a bouquet of pecky-cypress used throughout the interior lends a fresh woodsy scent to the air - lies a courtyard with a central fountain, which is lively with al fresco diners day and night. !e Frederic Fekkai Salon and Spa carries on the brand’s legacy of providing high-level services to discriminating clients (the original #agship once resided in NYC’s Bergdorf Goodman), by o%ering indulgent European facials in addition to salon services.
It’s little surprise that such a re"ned setting is a popular choice for discerning brides. Wedding ceremonies at !e Brazilian Court Hotel are held in the circa 1936 Candela-designed courtyard, which is highlighted by tropical foliage, vibrant Mediterranean colors and a historical wishing well.
Following the ceremony, guests can adjourn to the Brazilian Ballroom or the Conservatory for a celebratory reception. !e architecture and interior design of the former calls to mind a formal dining room found in a nearby oceanfront manse. Prominent design elements include three arched French doors in-laid with aged mercury glass and custom mahogany corner cabinets with crown detailing. Klismos-inspired chairs are covered with a Bergamo #oral tapestry. !e conservatory is situated just o% the terrace at Café Boulud. Arched glass doors lead to a terrace shaded by a custom-designed 1,000-square-foot awning.

Wedding parties are privy to the full range of award-winning talent in the Café Boulud kitchen and enjoy superb signature French-American cuisine coupled with attentive service during all facets of their event.
Many pre-ceremony activities can be arranged, including an after-hours champagne shopping spree at the Tory Burch Boutique on Worth Avenue; use of the private beach club at the nearby newly opened Omphoy Ocean Resort, the hotel’s sister property; and, hair and makeup services at !e Frederic Fekkai Salon and Spa.

TIPS FROM THE EXPERT CONSIDERATIONS FOR AN OUTDOOR WEDDING
Bees, bugs, humidity, rain, heat, WHAT? You seriously thinking of planning an outdoor reception – OF COURSE!!! Don’t let these elements intimidate you from planning what most likely will be beautiful weather for a fabulous celebration. You need a solid plan in place to battle any element that Mother Nature throws your way.
Just a little less than half of my weddings a year are outdoor a%airs. It takes very careful planning, especially if your event is held on private party. Below are some invaluable tips to consider when establishing your budget and outlining your event. Remember that having an event outdoors is truly spectacular, but inevitably costs more. Know your potential challenges and how to overcome them.
• Adequate and lighted parking areas. You should also mark parking lines or hire a company to help with directional parking or valet service
• Insurance rider added to your home owner’s policy especially if the event is held on private property
• Accessible electric outlets with separate circuits to ensure no overload when plugging in tent lights, catering lights, kitchen items, DJ, band, and restroom facilities.
• When ordering a generator consider a “whisper” generator which distributes far less sound
• Water available close by to operate portable restroom facilities, kitchen sta%, etc.
• Fairly level ground to ensure ease of seating and table placement in tents
• Height of trees and other structures/landscaping around the area you are placing the tent
• Have the electric, water and cable companies mark o% underground lines to avoid any potential breaks in those lines when staking the tent
• Have the area around and under the tent mowed a few days before the event or the day before the tent is erected
• Hire a company to spray the grounds to limit the amount of bugs• O%er your guests bug spray so they don’t leave your event with
bites all over their ankles• Depending on the size of the guest list, consider having a covered
dumpster delivered on-site and placed in an inconspicuous area for ease of trash collection
• Portable fans placed correctly in a tent can cool an area pretty well• When planning the ceremony consider where the sun sets and
how that can a%ect guests, your pictures, and your wedding party standing up for 30 minutes or more
• On a hot day consider o%ering bottled water to guest as they arrive. If the weather is chilly, how about some hot chocolate instead
• If rain falls on your wedding day, no problem. If lightning is around your guests must exit the tent immediately until the storm clears
Truly, some of the most amazing events I have been privileged to plan are outdoors. !ere is something magically creative about an open, empty structure like a tent that can be transformed into the most amazing canvas of colors, #owers, and décor. Don’t let the fear of the unknown of Mother Nature keep you from having an outdoor wedding. Surround yourself with the best vendors who have experience in outdoor events. !ey will guide you through each step of the planning with ease having their highly organized back-up plan that includes towels, umbrellas, water, bug spray, and tons of smiles. What to keep in mind when planning an outdoor wedding:
1. What time' the chairs are set up and who monitors it: I have straightened out countless chair rows and cleaned bird droppings o% of countless chairs.
2. !e comfort of your guests. Yes, your wedding is all about you, but what makes it truly special is your guests. If the sun is shining and is 90 degrees, it’s so much nicer in the shade. Guests will not sit down at the ceremony site if it’s in the blazing sun and they are wearing a three-piece suit. If it’s really hot, have some ice water and fans available to your
guests. On the other side, it may feel nice to you to walk from your car to the store when it’s 60 degrees outside, but it’s very di%erent if you have to sit still outside for an hour. Lastly, always have a backup plan. It just makes sense.
3. Help. It takes so much more work to pull off an outdoor wedding because you are starting from scratch. Who will set everything up? Who will direct your guests when to be seated? Where will the wedding party come out from? Who will send everyone down the aisle? Who will clean everything up?

!e weather is an obvious consideration when planning an outdoor wedding, but there are many other things to plan for as well. !ere are more moving pieces with an outdoor wedding than one at a hotel or banquet facility. Don’t do it! Just kidding, I love outdoor weddings! However, you do need to keep several factors in mind: the weather obviously, your guests and their comfort (Summer = shade, fans, and water or all three, Spring or Fall = possible warmth, and maybe a warm cider) You just have to love Kentucky weather, you never know what you might get! And you need to make sure that your guests know what kind of shoes to wear, always state in your invitation *A Garden wedding, even if it is in a "eld - you just need to indicate that it is going to be outside. !ere are other indicators, but I have found that Garden wedding works best. And always, always have a back up plan! I am always amazed at the quality of work that so many photographers in our area posses. !eir talents are truly worth every penny you pay for their time. !e pictures are priceless and years from now your own children will relish looking at pictures of mom and dad from their wedding day. You will too!
I encourage my own brides to interview with at least two photographers. Sometimes we just make it to the "rst appointment and they have already made their decision. !ere is that certain bond and emotional connection you get with your photographer almost instantly. You need to have a comfort level with them knowing they truly believe and understand your style for the wedding day. No photographer shoots each wedding exactly the same way. Review their work and photography style. You want to feel a sense of con"dence and pride they have in their talents and ability. Pictures are priceless. You want to select a photographer whose style matches yours, of course, but there are two other main things I look for in photographers: how many shooters will be there, and how long will they be there. I love a photographer who has one or more assistants also shooting, because you get that many more pictures and perspectives. Iron Horse “Wedding Cuvée”, Sonoma, California, N/VIron Horse Sparkling Wines have been served at the White House for "ve consecutive presidential administrations, beginning with the Reagan-Gorbachev Summit Meeting in Geneva on November 20, 1985, which led to the end of the Cold War. !is cuvée is Iron Horse’s Blanc de Noirs, made from predominantly Pinot Noir. It has a beautiful, pale-peach hue. Joy Sterling, winery owner says, “Rich and creamy, like pure strawberries and cream, this is without doubt the most romantic of our Sparklings. It is dangerously easy to drink.” A favorite for many, Iron Horse is probably best known for this cuvée.
Alma Rosa Pinot Gris, Santa Barbara County, California, 2007Richard Sanford has been practicing sustainable farm growing for the last 28 years at several di%erent wineries, he is known for creating high quality wines and setting a benchmark for organic farming, sustainable agriculture methods, and environment-friendly commerce. Alma Rosa was created in 2005 and this wine is medium bodied with notes of white #owers and peaches. On the palate there are #avors of granny smith apple, lemon zest completed by a hint of minerality and a refreshing acidity
Hartford Court “Four Hearts Vineyard” Chardonnay, Napa Valley, California, 2006Hartford Family Winery was founded in 1993 and they specialize in single vineyard Pinot Noir, Chardonnay and Old Vine Zinfandel. “Four Hearts Vineyards” Chardonnay is located in the four key regions that form the heart of the Russian River Valley AVA; the Middle Reach, Laguna Ridge, Green Valley and the Santa Rosa Bench. !e soil is a mixture of ash and lava from ancient volcanoes plus alluvial gravel from rivers and streams. !is full- bodied Chardonnay has overtones of ripe apricot, hazelnut and almonds with notes of mineral on the well-balanced "nish.
Watts “Dos Amores” Meritage, Lodi, California, 2003Made from 65% Cabernet Sauvignon and 35% Cabernet Franc, these estate grown grapes are primarily from Los Robles Vineyard, named for the ancient oak trees preserved among the vines and situated on rolling hills of old red clay.
