1. Most refrigeration systems in thekitchen are air cooled and they dependon their ability to exhaust their heatenergy into the room in order to refrigerate properly. Your air-cooled systemwill not function efficiently in tempera-tures over 95ºF room temperature.

2. Regular cleaning of the condensingunit to remove trapped lint and debriswill go a long way to ensure your equipment operates trouble free.

3. Door gaskets wear out through use,however their service life is greatlyextended if they are wiped down occasionally and food matter is notallowed to collect along the gasket.

4. Leaving a leaking door gasket unattended wastes energy and willcause premature failure of your com-pressor causing a very expensive repair.

5. Do not allow food to pile up insiderestricting air flow from the coil causingtemperature problems. Air circulation

within the cabinet is very important forproper cooling.

6. All freezers are set up to go thru adefrost cycle some time during the day.If you find your freezer thermometerabove freezing, wait 15 minutes to see if it changes. It could be you have justcaught the system during a defrost cycleand in a few minutes will return to normal freezing temperature before anyproduct has begun to thaw.

7. All refrigerated cabinets should have athermometer inside (if not already builtin) to allow you to monitor the holdingtemperature. Systems rarely fail withoutany warning, therefore any change intemperature should give sufficient noticeto have the system checked before complete failure occurs or product is lost.

Manufacturer warranties cover system/component failure but accept noresponsibility towards lost product. That is your responsibility and generally covered by a separate business insurancepolicy.

Size the ice maker head:

To determine the capacity needed, firstcalculate the largest day’s usage duringthe week. This will represent the maximumdaily production required. This figureshould then be increased by 20% toallow for usage changes, businessgrowth and environmental factors thatcan cause increased ice loss throughmelting. Then size the bin:
