    UMPLUI LA CUPTOR

    A doua sptmn alturi de Petru Stratulat la "DN 66", pe Radio Guerrilla (94.8 FM sau online, pradioguerrilla.ro) aduce a doua propunere special pentru duminic seara, dup trafic intens sau weekend la vitezneregulamentar. Nu foarte complicat i nici mcar prea mare consumatoare de timp, chiar dac ar trebui s le dacartofilor aproximativ o or s se coac n cuptor. n timpul sta putei face o mulime de alte treburi, c are mai dcare mai interesante...

    Ingrediente.Pentru 2 porii: cartofi (nu foarte mari, albi, finoi, sntoi, dac se poate cu form regulat) -buc; ceap roie - 1 buc; unt - dou linguri; brnz cu mucegai albastru - 40-50 g; sare, piper mcinat, ctevtulpini de chives (ceap de tuns, arpagic mic) - opional, pentru decor.

    Am splat nti cartofii foarte bine i i-am ters cu hrtie absorbant, de buctrie.

    I-am mpus cu o furculi, n cteva locuri, ca s poat s respire la copt, s nu cra pe. Apoi i-am pus n cuptornclzit n prealabil. I-am copt pn ce furculia a ptruns lejer n fiecare dintre ei, pn la mijloc. I-am lsat s rcoreasc puin.

    Apoi i-am tiat n jumti, pe lungime, i am scobit cu o lingur miezul. Cu grij,s nu deteriorez marginile i nifundul fiecrei "coji". Sigur c nu am scobit pn la capt, ci doar ct s obin o form concav, suficient de stabildin fiecare bucat de cartof. Am pus miezul ntr-un castron.

    Ct timp s-au copt cartofii, am curat ceapa i am tocat-o mrunt. Apoi am topit jumtate din cantitatea de unt am clit ceapa n ea.

    i am tiat bucele destul de mici din bucata de brnz cu mucegai albastru.

    Cnd am terminat de scobit cartofii, am adugat i restul de unt i am pus miezul de cartof n tigaie, tocat i mrunt. Le-am clit mpreun vreo cinci minute.

    Am umplut apoi cojile de cartof cu amestecul din tigaie, mprind cantitatea n mod proporional pentru fiecascoverg de cartof. Am pus deasupra bucele de brnz.

    Le-am copt nc un sfert de or n cuptorul deja ncins, pn ce brnza s-a topit i, pe alocuri, a devenit purumen. Cu bucelele de chives au artata de un milion de puncte.

    Desigur, v putei lsa imaginaia s zburde din punctul de vedere al umpluturii, putei face variaiuni infinitputei aduga carne de pui, pete, ficat, praz, alte legume, alte tipuri de brnz i aa mai departe. Important e s nuitai c asta e o propunere pentru duminic seara i c ar fi bine s ncepei sptmna mai "uori", mai relaxamcar din punctul sta de vedere.

    Socoteli. Timp: preparare - 10-15 minute. Coacere - aprox. 60 de minute. Bani: aprox. 2 RON / porie

    Cartofi copti umpluti cu branza

    Ingrediente

    7 cartofi galbeni 200g telemea de capra 50g urda 1 lingurita unt 2-3 linguri iaurt sau smantana saresipiperdupa gust cascaval ras sau parmezan

    Portii: 0 Timp de preparare: sub 30 minute

    Mod de preparare

    Spalam cartofii bine,apoi ii asezam in tava si ii bagam la cuptor la 180gC la copt .

    Dupa ce sunt gata,ii scoatem,ii lasam sa se raceasca 2-3 minute,apoi ii taiem in doua pe lungime si cu ajutorul unelingurite scoatem trei sferturi din miez.

    Se paseaza foarte bine branza,apoi se amesteca cu iaurtul sau smantana,untul,si miezul de la cartofi.Se

    omogenizeaza bine si se condimenteaza dupa gust.Cu acest amestec se umplu jumatatile de cartof ,iar desupra sepune cascavalul ras,si se mai dau la cuptor pentru 5 minute sa capete o culoare aurie

    Reteta in imagini

    Retetele astea sunt luate de pe un site italian ca sa pot avea cantitati exacte eu insa fac mereu din ochi si cu

    ce am in frigider , asta e partea frumoasa a artei culinare ca ai mina libera sa inventezi retete ...

    1. cartofi umpluti cu ton din conserva si ou

    4 cartofi, 2 cutii de ton de 80g, 2 oua, 2 linguri de parmezan ras ( tu il poti inlocui cu cascaval mai sarat),

    pesmet cit e nevoie, patrunjel tocat, 1 frunza de dafin, 1 cuisor, sare, piper, unt/margarina.

    Speli si cureti cartofii, pui la fiert in oala in apa cu frunza de dafin si cuisorul.Cind sunt fierti pe jumatate ii

    scurgi si ii lasi sa se raceasca .

    Separat pregatesti umplutura : 2 linguri de pesmet,tonul, ouale crude, patrunjelul, sare, piper, parmezanul.

    Amesteci bine si ai grija ca umplutura sa nu fie prea lichida , in cazul asta mai adaugi pesmet.

    Cartofii ii scobesti de miez dar in asa fel sa iti ramina peretii grosuti. Si ii umpli cu umplutura . Pui desasupra

    un virf de lingurita de unt si ii bagi la cuptor pt 20 min la 180 grade (mediu).

    Poti sa inlocuiesti tonul cu carne tocata calita un pic in tigaie.

    2. cartofi umpluti cu diverse...

    4 cartofi de preferat rosii,2 ciuperci champignon mari,1 ceapa mica,1 lingura de concentrat de rosii,1/2

    ceasca de umplutura (ton din conserva ,friptura de pui , carne tocata calita , resturi de friptura la

    gratar,cirnati de la care arunci matul- doar umplutura, cremvurst taiat bucatele, brinza amestecata - pe asta

    nu o mai calesti o adaugi in sos cind dai tigaia la o parte de pe foc, cuburi de vinata prajite sau griliate ),

    coriandru , cascaval,

    1/2 pahar vin alb sec,unt,sare, piper

    Cartofii ii fierbi in apa cu coaja cu tot pina cind sunt aproape fierti dar ramin inca tari . Ii scugi de apa si tai

    un capacel( pe lungime ) apoi incepi sa scobesti in interior asa cum zice pepenash in reteta ei, sa ramina p

    peretii interiori ceva cartof cam de 5 mm ... Si pui cubulete de cascaval inauntru pe fundul acestor barcute d

    cartofi care rezulta ( nu pui mult .. acolo citeva cubulete).

    Separat prepari umplutura : ceapa tocata marunt se caleste in putin unt cu sare, piper si ciupercile tocate si

    ele . Dupa citeva minute se adauga vinul si se lasa iar sa scada. Adaugi concentratul de rosii, carnea tocata

    puiul / tonul ... sau lasi numai cu ciuperci dupa cum vrei ... si mai lasi un pic sa scada ...

    Umpli cartofii cu umplutura asta ( peste cubuletele de cascaval care deja erau in cartofi ) si adaugi deasupra

    alte cubulete de cartofi. Dai la cuptor pe o tava unsa cu ulei ( sau pe care ai pus hirtie de copt) pt cca 20

    minute la 180 grade .

    Daca nu esti pe graba cind pregatesti reteta lui PEPENASH este mult mai gustoasa , deci cartofii copti in

    coaja insa dureaza mai mult sa ii coci asa la cuptor decit sa ii fierbi in coaja sau chiar fara coaja . Dev in

    functie de timpul tau sau daca ai sau nu microunde ca atunci totul e mai rapid ... alegi reteta si modul de

    preparare ...

    Cartofi prajiti umpluti

    10-12 bucati cartofi mijlocii,100 g unt, cascaval ras,

    150-200 g carne afumata si macinata,200 ml smantana,

    sare, nucsoara razuita.

    Cartofii se curata cu o perie in mai multe ape.

    Cu coaja, sau curatati de coaja, se coc intregi in cuptor.

    Cand sunt moi, se taie partea superioara, se indeparteaza mijlocul si se zdrobesc.

    Cartofii zdrobiti se amesteca bine cu 70 g unt, cu cascaval, cu carnea afumata si cu condimentele.

    Se umplu cartofii gauriti cu aceasta compozitie.

    Cu untul ramas se unge vasul termorezistent, cartofii umpluti se asaza unul langa altul si se prajesc pana

    cand devin rumeni.

    Nu stiu daca au mai fost retete cu cartofi copti umpulti...eu pun si varianta mea.

    Am folosit 3 cartofi mari pe care i-am spalat bine, i-am intepat putin cu furculita, i-am impachetat in folie de

    aluminiu si i-am bagat la cuptor pentru 1h. In acest timp am taiat cubulete niste sunca.

    Pentru mine am folosit cascaval ras iar pentru sotz branza gorgonzola (blue cheese).

    Dupa ce am scos cartofii de la cuptor, i-am lasat putin sa se raceasca (dar nu prea mult ca sa-i lucrati usor) atat cat

    sa poata fi manuiti. Am taiat un mic capacel

    si i-am scobit incetisor cu ajutorul unui cutit si a unei linguri.

    Alaturi am pastrat continutul intr-un castronel.

    Am impartit compozitia si am amestecat cu unt (cat vreti), sunca, putina sare si separat branza.

    Am umplut apoi cu lingurita cartofii si i-am mai dat la cuptor ~1/2 h, pt a se topi branza si untul.

    Se servesc drept garnitura sau ca atare.

    aveam prin casa. Eu tai cartofii in doua si umplu fiecare jumatate. Umplutura de data asta a fost facuta din miezul

    Portii: 4 Timp de preparare: peste 120 minute

    Mod de preparare

    Ciolanul se aseaza intr.o tava. se impaneaza cu cateiusturoisicuisoare. Se baga la cuptorul preincalzit in primele10 min la foc iute apoi se pune folie de aluminiu si se reduce focul. Se lasa asa vreo 2-3 ore sa se patrunda bine si

    sa se rumeneasca frumos.

    Dupa ce e gata , trecem la cartofi ii curatam de coaja , si ii crestem dar nu pana jos, se pun in folie de aluminiu si l

    cuptor cu ei la foc mai iute. ii intepam cu o scobitoare si daca trece testul scobitorii sunt gata. Ii scoatem din tipla s

    intre crestaturi punem bucatele de branza.

    Mod de preparare:

    Spala bine cartofii. Se infige furculita in cartofi in cateva locuri. Puneti cartofii la cuptor si lasatii sa se coaca pana cand dev

    moi, circa 20 de minute. Intre timp, prajiti carnea intr-o tigaie, intorcand-o pe o parte si pe alta sa se patrunda bine, circa 3

    minute. Mutati-o intr-un bol mare.

    Dati focul mai tare si puneti in tigaie apa si broccoli, acoperiti cu un capac si lasati pana devine moale, circa 4-5 minute.

    Stoarceti bucatile de broccoli dupa care punetii in bolul cu carnea.

    Taiati cu grija partea de sus a cartofilor, o treime din ei. Cu o lingurita scobiti interiorul cartofilor, punand miezul intr-un bo

    Puneti cartofii intr-o tava. In bolul cu miezul cartofilor adauga 1/2 cana din branza Cheddar, smantana, sare si piper si

    zdrobiti si amestecati pana devine o pasta omogena. Adaugati amestecul obtinut peste carne si broccoli, adaugand si ceap

    taiata marunt. Amestecati bine compozitia. Umpleti fiecare cartof cu acest amestec presarand pe deasupra branza ramasa

    Puneti la cuptor sau la cuptorul cu microunde pana vedeti ca se topeste branza, circa 2-4 minutese consuma fierbinte

    Nota:Branza Cheddar este una dintre cele mai consumate branzeturi din lume. Ea este originar din Anglia dar astzi

    este produs in numeroase tri de pe glob. Branza Cheddar original este in form de tob cu diametru de 38,1 cm(15 inci), cu coaj natural la margine. in mod normal culoarea variaz de la alb la galben palid. Unele sortimente

    de branz cheddar au adgati coloranti care ii dau un aspect galben-orange. Branza Cheddar este intotdeaunaprodus din lapte de vac si are o textur usor framicioas dac este corect preparat. Dac branza este preaproaspt atunci textura este mai fin. Cu cat trece timpul gustul devine tot mai bun.
