May 9 Blue Responsible Pizza Project Reflection In this unit, I and my group are assigned to design a pizza which is organic and healthy, and making sure that the source of the food I eat are reliable and that I know where it comes from. This unit started with us, students, watching a movie called “Food Inc.”. This movie is about how the products in the super market came to be. After watching the movie, I and my group (Ann and Sasha) decided that we would make a pizza which doesn’t include any preservatives. We came up with the idea of the Parma ham and Rocket pizza because we thought that it would be such a good mix together. Our goal was to include non-preservatives ingredients, all the ingredients must be fresh, the pizza must include protein nutrients, it must have at least two kinds of cheese and it must be healthy. However, we had we still had some problems such as when we were find ingredients, it was quite hard to find the ingredients without any preservatives, so we had to go to many supermarkets to find the ingredients that doesn’t include any preservatives. But other than the problem, we worked very well together. Ingredients used in the pizza: Ingredients to make the pizza dough: Ingredients and explanation: 160ml of warm water we measured 160mL of tap water into a glass measuring cup, then microwaved the water for 30 seconds to make it warm enough for the yeast to grow. 3.5 g of dried yeast yeast will help the pizza dough expand and grow; but only if the other ingredients provides moisture, warmness, sugar (food) and oxygen. Responsible Pizza Project Reflection1 teaspoon of sugar By adding sugar into the warm water, sugar will give yeast food, which allows yeast to grow. 1 tablespoon extra-virgin olive oil Adding olive oil to the mixture of yeast, water, and sugar will create moisture to both the mixture, and the pizza dough when the ingredients will be mixed together. 250 g of white bread flour or pizza dough flour We used Farina pizza dough because it gives us the crispy and soft texture of the pizza dough after it is baked, and gives healthy and a great quality pizza.

1 teaspoon of salt By adding a teaspoon of salt to the pizza flour, it will make the dough a little saltier, which makes it more delicious and not too bland.

Specified Toppings (Extra): Ingredients and explanation: Parma ham This Parma ham includes no preservatives. It is also imported from Italy, which made us trust the quality of the ham. Prego tomato paste We chose to use Prego tomato paste because the texture of the taste in the paste was sweet, sour, and salty and the same time. It is also made 100% from tomatoes, which is reliable and healthy. Picture:

Kraft Mozzarella cheese Kraft is a well-known brand for tasty and stretchy cheese, which is very perfect for making a pizza with Kraft Mozzarella cheese.

Olives We chose to buy fresh olives to make sure that there are no preservatives included to make the olives expire slower than usual.

Onions We bought fresh onions from the supermarket to make sure that no preservatives are included.

Rocket leaves We picked out the rocket leaves from the salad bar of the super market, which means that it is fresh and new every day.

Oregano The Oregano leaves that we picked out are imported from Italy, it has no preservatives included, as written on the packaging of the leaves.

Mild Cheddar Cheese We bought the cheddar cheese as a big chunk and we grated it ourselves. The cheese is still fresh and is newly bought the day before making the pizza dough.

To make a healthy pizza, the ingredients included in the pizza itself must be healthy too. Obviously ingredents which includes no preservatives must be much more expensive than normal ingredients that would expire slower than normal and has many substances in the product that we dont want in our body. We have approximately came up with the ideal cost of this pizza, which includes no preservatives and only include fresh ingredients. The cost of all the ingredients (the exact amount such as 1/3 etc.) that we used are: Parma Ham (260 baht out of 260 baht) Tomato paste (113 baht out of 150 baht) Mozzarella cheese (220 baht out of 220 baht) Farina Pizza Flour (26 baht out of 80 baht) Yeast (8 baht out of 20 baht) Olives (60 baht out of 75 baht) Onions (3 baht out of 35 baht)

Total: 574 Baht I have learnt so many interesting facts and techniques in this unit. First of all, the fact that amuses me the most is corn is included in 90% of all supermarkets products, it can be made into a syrup that is sweeter than sugar. I have learnt how to properly bake such a delicious pizza and learnt how to choose appropriate ingredients from the supermarket and to be aware of what I am eating and if it would affect me in the future. Most importantly, I learnt that the food that I ate everyday has been processed into more than 50 steps before it comes to me. I used to think that the chickens I eat are killed, then fertilized and then put in a package to sell into a supermarket. But, no, the chickens that I eat everyday was actually fed with hormones (and when I eat the chicken, the hormones would also affect my body and how it functions), and killed in herds and dragged off into a car, ready to be process into more than 50 ways before it is packed, ready to be sold in a supermarket. This strongly affects the way I choose the food that I eat by making healthier choices and knowing where the food comes from. The things that I have learnt from making a pizza is how to knead a dough properly, how to knead the dough properly, the tricks of getting th dough right (soft and crispy at the same time), how to make the yeast grow, and basically how to make a pizza! Ive never properly learn how to make a pizza before and this is the first time I properly made a successful, delicious and a healthy pizza by choosing the choices of food that includes no preservatives and is very fresh. Relating this unit to the IB Learner Profile and ATL Skills: Risk taker Finding a healthy ingredient without preservatives, finding out the source of that specific ingredient, and then making sure that it is from a reliable source and that it doesnt include any preservatives. Inquirer & Researh Researching more into the reliable sources of the food in the supermarket and learning how to make a healthy pizza. Knowledgable & Thinking skills Knowing which sources of food is reliable and which isnt, knowing how to make a pizza and remembering the recipe of the recipe by heart. Balanced Experimenting with the taste of the pizza by adding toppings that will go together well and wouldnt taste bad together and kneading the pizza dough in just the right condition. We tried to make the pizza dough in the most perfect condition; not too hard, not too soft, just right. Principled Buying all the ingredients that does not include preservatives and being to honest to ourselves and our teammates to make sure that the product in the supermarket doesnt include any preservatives. Caring & Self management Buying all the ingredients on time so we dont disappoint our teammates and looking further into how the food proccessed in the factory can affect our body (caring about our body and choices).
