me or see me everyday and compliment me about that. It’s a very happy momentand a wonderful feeling.”

The longtime educator received a bachelor’s degree from Texas ChristianUniversity in 1949 and a master’s degree from Texas Western College (now, theUniversity of Texas at El Paso) in 1961. Brown, who was born May 28, 1929, inDel Rio, Texas, graduated from Sanderson High School at the stunning age of 15.

He earned his first teaching job in 1949 at Fabens High at the young ageof 20.

Brown joined EPISD in 1952 as a coach and teacher at El Paso High. In1955, he was a member of the first teaching crew at Burges High. The school iscelebrating its 50th anniversary this year.

Brown went on to assistant principal positions at Bassett Middle andAndress High in the 1960s, later becoming the principal at Andress in 1969, wherehe remained as the school’s leader until 1981. He was then appointed as EPISD’sAssociate Superintendent for the Northeast Area, eventually retiring in 1990 after38 years with the district. It was then, that Brown’s wife, Jacqueline Brown, alsowell known in the education field,vowed to her husband that one day a school wouldbe named after him.

“That was her goal since my retirement; she said it was her sole project,”Brown said.

Jacqueline Brown passed away last year, but not before submitting apacket overflowing with numerous submissions from across the city and country,showing support for “Hut”Brown.

“My wife shares in this honor with me; it was her project,” Brown said.“I’mhaving a tree planted at Burges, where she was well known, in her honor. Now,that’s my project for her.”

Today, Brown continues to volunteer as a “children’s storyteller”withschools in the area and after 41years in the field, he is still a strong advocate whenit comes to teaching.

“My advice to teachers today is to be positive about everything,” Brownsaid. “Have a positive outlook and it will be that much more rewarding.”

Thank you all for your kind comments about lastmonth’s column. Based on the response, we are goingto schedule a TABC certification class for the AustinGreat Peppers Meeting on Thursday, September 7.The class will be held from 12-4 PM and will be limitedto 50 participants. Now, let’s get back to talking about the rules. This month, I’ve been ponderingpalate cleansers. According to CASI Rule II.E.8., “Beverages and bite sized snacks(e.g., crackers, cheese, celery, grapes, etc.) must be supplied to judges to allow themto cleanse their palates between tastes of chili.”

At many cookoffs, the examples above are exactly what we see on the judging tables.At some cookoffs, cheese has not been put out because of the cost. I’ve seen othercookoffs where flour tortillas and sour cream were the palate cleansers of choice.Recently, there was a cookoff where each judge was provided a little bag of highly-spiced crackers along with the celery and grapes. Four of the ten judges ate the crackersflavored with garlic and cayenne between chili bites.

I’m a firm believer that there is no secret strategy to winning the judges. I feel like thereare so many great cooks, the only thing you can do is cook your chili and turn it in. Fromthat point, it’s either your day or it isn’t.

However, at the risk of over-thinking the judging process, how about those palatecleansers? Should they be as neutral as possible? Should you use only unsalted or lightlysalted crackers? Should you avoid any strongly spiced food or beverage? Do you thinkthe variety of palate cleansers is good or bad? If a judge samples a chili and eats cheese,then samples another chili and eats celery, and then another followed by a grape, is hejudging each chili with the same perspective?

Let’s ponder together. I look forward to hearing your thoughts.

Scholarship Recipient Update

My first college semester at Texas Tech has come to an end, andthere is no way I could have attended my dream school without your support.I enrolled in sixteen hours this first semester, but I tested out of sophomoreEnglish so I ended up taking thirteen hours. Now I am officially a sophomorewith forty-two hours and have enrolled in fifteen hours for the springsemester.

This past semester, I worked as a student assistant in the Texas TechLibrary Dean’s Office. I was fortunate enough to meet several of the peoplethat are trying to secure the Bush Presidential Library on our campus.Unfortunately, I will not be able to continue working because of my schedule.Since I had to register as a freshman for sophomore classes, I had to take theodd afternoon times that were left.

I can’t thank you enough for this wonderful opportunity you havegiven me. I cannot wait to go back to Lubbock to start this next semester andwork on raising my grade point average. This summer I plan on taking classesat Midwestern State University.

TABC Certification Course

The Texas Alcoholic Beverage Commission “Seller/Server TrainingCertification” course will be offered at the Great Peppers’ Meeting. This four-hour course will be on Thursday, September 7, from noon to 4:00 p.m. The laws and liability concerning alcohol have changed over the past fewyears and the information this course provides will certainly be beneficial tothose who attend. It is not just about “paid employees” serving beer and drinks,but also those who are involved in serving at “events”. This includes acting ashead judge at chili cookoffs and those serving judges the beverages. Those ofus who already attended this course were very “enlightened”, and it certainlymade us aware of some potential situations that can be avoided. The course costs $25.00 (payable the day of the class) and is LIMITED inclass size. If you want to take this class, please let me know as soon as possible.

NOBODY TOLD ME Murmurs from Mama Sue

Thank you for the nice comments Ireceived on last month’s article. Several ofyou told me that you smiled when you read myarticle. This is what I want you to do.If I make one person smile, then the article iswell worth it.

Had a rousing good time at TexasLadies State. We went in Thursday and

started getting everything ready for the “Ultimate Girlfriends Weekend.” There isa lot of preparation for any cookoff, but there is also a lot of last minute “stuff” thatcan only be done after arrival. My hats off to all the guys who worked so hard toensure that we ladies would not. The goody bags were great and you will be seeinga lot of those cutting boards around when we are wearing our pink nightshirts.

A big thanks to our Texas Ladies State Board and all the hard work thatis done during the year to lead up to the big event. And our Board Members lookedvery dashing in their “Pink Button Down Shirts”. Thanks, guys, cause we all knowreal men can wear pink.

A special thanks to the Wichita Falls crew headed by Kevin Wooster andthe rest of the “Gaines Gang” in their neon green shirts. The food was deliciousand, as usual, no one went away hungry. Fish, homemade fries (yummy), hushpuppies, and so much other stuff. Thanks, guys and ladies. And they are comingback again next year. Yippee…..Yippee…….Yippee……

Thanks, also, to Jimmy Taylor and his judging crew and all the fellas thatmonitored, beer boys, beer guardians, and Bucky and Darrell and their tallyingcrews. Clyde Rogers and his crew at the Silent Auction, thanks a bunch. DaveRichardson and your Calcutta bunch, kudos to you all. John Goforth, thanks forbeing referee and helping in other areas. Lynn and Nigel, you have this aura thatmakes some of us want to dance all night long, whether it is with someone or no one.And a great big hug to all you ladies who came to this wonderful event.

Saturday morning, we arose to a great day in a beautiful park and ready tofire up those stoves. We had given away our trinkets to each other, had celebratedat Nadeau’s cocktail hour, enjoyed the wonderful cooks’ party and the dance a thon,and toasted Gayle Cook goodbye. But now was the biggie.

We started cooking what we hoped would be the Best of the Best and thatwe would walk away with a tiara that day. After we got started, flames were turneddown low as we had a big Houston party to attend at high noon. Thank you fancyHouston ladies for all the good food and the wonderful drinks. We were having sucha good time, it was difficult to leave.

There were 162 chilis judged and the tension was mounting. I was so happyto see so many of the judges had arrived. This was my 8th year to solicit judges andthis year was the first that I received a thank you in the mail. A judge from Austinmailed me a thank you note and asked me to please continue to invite him. He saidhe was on semis and said the chili all was outstanding. He will be invited back, forsure.

The last lady to walk on the stage and our new Texas Ladies Champ 2006is Connie Schrade. In case you don’t know, Connie and Robert arrived with their2-year old granddaughter. Connie cooked her pot of chili and watched over hergrand, because Robert was in the judging area the entire time. He was our Co-Chairthis year. Can you imagine the stress?

In Texas politics, Carole Keeton Strayhorn describes herself as one toughgrandma. Well, Carole, meet Connie Schrade, who watched over her granddaughterand cooked a pot of chili that topped 161 other pots. Now that is a tough grandma.Congratulations, Connie, our new champ. And thank you Dana, forrepresenting us so well during your term. Congratulations to all of you other ladieswho were on that stage. It is pretty awesome.

A young chili cook told me that he just didn’tunderstand why anyone would want to compete inShowmanship. After all, this thing is called a “ChiliCookoff,” not a variety show. What’s showmanshipgot to do with cooking chili?

I guess he’s got a point. Most of the best chilicooks who I know don’t compete in showmanship.And, most of the really good showmen don’t cook thebest chili. I’ve got to be really careful about saying

things like that because my wife regularly whips me in both show and chili.Nevertheless, many of the large show teams at TICC apparently don’t cook there.And the TICC Champion usually doesn’t enter Showmanship.

Showmanship is a good thing for the whole world of chili contests. Perhapsmost importantly, Showmanship contests make the whole experience more fun forthe visitors and tasters. Providing an avenue for participation for our spectators givesthem another reason to visit and stay around for a while.

Tasting chili is nice and it is enlightening, but it has a bit of a serious side.Tasting lets a person discover the diversity of chili flavors, and it shows the taster thatcompetitive chili does not have to be unbearably hot, nor does it have to have someindescribable ingredient. We’ve all heard that old joke about the guy who was askedto judge a Texas chili contest and singed his tonsils on the first sample. It was funnythe first time you heard it, but it doesn’t really reflect the world of chili competition.It does reflect the view of many visitors to cookoff sites.

On the other hand, Showmanship is non-threatening. It’s a friendlier way ofenjoying a cookoff. It gives the more timid visitor a chance to have fun and perhapsmeet a few cooks, or talk to someone who has actually tasted some of theseconcoctions that we call chili. After that visitor learns that we are not sadists bent oninflicting pain on all who approach, he, or she, can then take a chance on a taste. Mostregister some surprise, and exclaim “Hey, that’s pretty good!”

Showmanship is for our visitors. It doesn’t help the taste of the chili, and itdoesn’t enter into the point chase for qualification for Terlingua cooks. Of course,you can accumulate points toward the Showmanship contest at Terlingua and that isa pretty tough competition in its own right. The Large Show Teams at TICC arefascinating and amazing. Most are really good at what they do. Most have spent ahuge amount of time, and considerable money, developing their routine. They put ona good show that is certainly worth watching.

The Small Show Teams may not be quite as elaborate, but they still make thecontest more visitor friendly. Those individual showmen that rove about the Old 320make the visitors feel good about being there. They invest more than a little time anda lot of talent into their act. They entertain the visitors, and that is a good thing.

The local cookoffs don’t see many large show teams, and the small showteams tend to be a bit more sedate. Still, the visitors seem to enjoy looking at thecollections of “stuff” and listening to the singers and guitar players. Showmanshipgenerates some excitement and that, too, is a good thing. A chili cookoff should bea festival, full of fun and excitement. Without Showmanship, one might say we wouldbe pretty sedating, maybe even boring. Children, particularly, might find a show-lesscookoff terribly boring. And children are the next generation of cooks, and we needto cultivate them.

Showmanship is not for everyone. First, you must be willing to make a foolof yourself, and you must enjoy seeing people laugh. You must be willing to put fortha serious effort to entertain people. If you can’t sing, maybe you can do magic. Ormaybe you can do stand-up comedy. Maybe you can show off your collection ofstuffed dinosaurs.

Whatever you do, Showmanship adds a dimension to our hobby. Whateveryou do, it removes a bit of the serious competitiveness of our hobby. Mostimportantly, it increases the enjoyment of our spectators. And that is a good thing.

Ladies Show back to back. A big hand to you other ladies who did show. I just want all of you to know how much I enjoyed visiting with you. Someof you I don’t get to see real often and we have a lot of catching up. As you saw,our attendance was down this year, so start saving your gas money for next year;would like to see 200 or more of you ladies in 2007. Certainly hope I am there.

We were pleased to have Nancy Coultas and Sandy Garner from Arizona,Nancy Bremer from Maryland, and oops, I almost forgot Renee Moore fromAlabama, since I always think of her as a Texas girl.

Now, ladies, where else can you go and have such a good time and see somany of your chili girlfriends, dance until the cows come home, and party afterparty, with a bunch or a few? So start planning for next year in Seguin, Texas, onApril 21, 2007. Go mark your calendars right now.

A side note to my fellow Texas Ladies Board members. You overwhelmedme with the Yellow Rose of Texas Award from the Governor of the State of Texas.I am so very proud of this honor but equally as proud that you thought I was worthit.

Cowtown, Virgin Pod Team Up For CowboysUnder The Palm Trees.

Whether it’s buckaroos and bikinis or Lone Star and Cuba Libras,Cowtown’s recent announcement of their grand prize for the 1st place chili winnerof their 30th anniversary cookoff on June 17th has created quite a buzz in the chiliworld. In case anybody missed it, the announcement stated that the Cowtownwinner would receive round-trip airfare for two to St.Thomas, Virgin Islands andhotel accommodations for two nights at the Bolongo Beach Resort, and representCowtown Pod at the St.Thomas V.I. cookoff August 20 on Bolongo Beach. Theannouncement represents the culmination of planning that had started monthsbefore at the Great Pepper’s meeting in San Angelo.

It was at one of the hospitality suite get togethers that Cowtown GreatPepper Dale Reinecker introduced himself to Virgin Pod Great Pepper EricAckerson. During the course of the evening they discovered they had a lot incommon: both had attended the University of Kansas and were Jayhawk fans.

The conversation turned to the differences in cookoff venues between thetwo pods such as gravel and cement for Cowtown, beaches and surf for Virgin.Acknowledging that the Virgin pod clearly had the upper hand on venues Dalementioned “yea, bet you guys get a lot of sand in your chili and use seaweed spicesand float rum balls in your pots. At Cowtown we represent the cowboy spirit ofcattle trails, roundups and true chili.”

To this Eric replied, “Our island spices are pretty good, and we do pay ourrespects to Captain Morgan, but we really let the 4 Bs guide our philosophy, thosebeing beaches, beer, babes and bikinis. What ya think about that!”

This kind of banter went back and forth over several more brews and theidea of some type of Cowtown vs. Islanders chili challenge was formed. It wasagreed that Eric would work on hotel accommodations at his end and Dale wouldwork on plane tickets from D/FW. Over the next few months the arrangementsstarted coming together and were finalized in late February.

Now the Cowtown cooks are sharpening their recipes to try and win thegrand prize and the Virgin pod is looking forward to hosting the Cowtownrepresentative and showing them what island-time chili is all about.

So what if the Cowtown cookoff winner is not a Cowtown Pod member?Never fear, they will be by the time they leave Cabela’s!

I have decided to seek another term as a Director of CASI. After nine yearsof service, I believe there is still much I can contribute. My primary responsibilitieshave been the establishment and coordination of sponsors for our organization,and the procurement and placement of vendors at TICC. I have retained theseduties in this current year while serving as the CASI President. It has been anhonor to represent this great organization and work toward its betterment.

I am proud of the progress in these areas. Many new concepts have beenbrought to the table the last few years, and our growing financial needs havemade this job more important than ever.

Ezell Announces for Re-Election

IS HISTORY MADE OR REPEATED?The Food Network producers knew the best chili is not ‘made in New York City.’That’s why they packed up and headed to Texas. For an episode of their series,“What’s Your Culinary Claim to Fame,” they traveled to Houston to film our owntwo-time TICC champ, Cindy Reed Wilkins.

The Houston Elks Lodge was host to the event on May 12th. Starting at 7:30 in themorning, Cindy & Bruce, along with many chili friends started setting up thepoolside “stage area” with flags, banners, tables & chairs, and serving tables asdirected by the production crew.

At 11:30 Cindy started preparing to start cook her chili when an unexpected guestarrived – celebrity chef, Bobby Flay from New York City. Bobby told Cindy he wasthere to taste her two time award winning chili and also to compete “head to head”with her to see whose chili was the best. A truck pulled in with two huge stainlesssteel grills (Bobby always cooks on a grill) along with a car with a couple ofassistants and all the items he needed. Bobby received some of the basic rules forcooking chili and they were quickly underway. While they were cooking thecameras recorded every move they both made and guests enjoyed the food andbeverages available at their poolside tables.

At 2:00, Bobby Flay presented a “green chili” he made for the people to try. It didn’tlast long and all agreed it was pretty tasty. At 2:16, Cindy and Bobby turned theirchili in for the judging in their CASI style judging cups complete with CASI tickets.The judges were selected. Bobby felt that Cindy knew too many of them, so hearranged for the Food Network to obtain a couple of “Independent Judges”. Joe& Shirley Stewart appeared minutes later. They had just moved to League Cityfrom California in the past year. Joe and Shirley each sported to huge Texas StyleBELT BUCKLES that read “1979 ICS WORLD CHAMPION”. While they werejudging, the guests were busy tasting Cindy & Bobby’s chili to see whose the bestwas. The judges handed over their judging sheets to Ralph Hay for tallying, andwhen the results were announced - THEY TIED!!!! It was just like Terlingua 1967when a man from Texas, Wick Fowler, was challenged by a man from New York,

Bucky Seeks Another TermTwo years are up already. No way!! It seems I just took office. The

past two years have definitely been an eye opening experience in theoperation of CASI, and the performance of the CASI Board members. Muchmore perhaps than I ever imagined.

My term expires this year, and after giving this much thought, I havedecided to once again ask for the support of all of the Great Peppers and theDirectors in my decision to seek another term of office. I remember tellingeveryone at the candidate’s caucus two years ago, the job I was leastqualified for was the editor of the Trails. After taking over as editor from JimStatezcny, I found that I could handle the job, and have enjoyed doing thepublication each month. It brings out a creative side I didn’t know I had. The15th deadline is quite hectic, but so is my every day job.

Hopefully I have represented you well and earned your trust duringmy tenure. I will always do what I feel is in the best interest of the membershipand CASI and promise to do the best I can to insure that CASI will continueto be an organization we can all be proud of.

As High Desert Pod ScholarshipChairman, I was honored to represent CASI atthe ceremony. I prefaced my presentation withan explanation of CASI’s goals and charitablecontributions as we “make a difference throughchili.” I pointed out that Rebecca is thegranddaughter of chili legends Myrl and NancyCoultas and how thrilled this old chilicook was tomeet such a successful young person who enjoyschili competition and may follow in Myrl andNancy’s footsteps. Young achievers like Rebeccaare the bright future of CASI.

Mindy Sherman, the Benson High Schoolcounselor spent several minutes after mypresentation telling the audience what a greatcontribution CASI and High Desert Pod makeand recommended they attend any chili cookoffto enjoy our delicious and fun way of raisingmoney for charity and scholarships.

2006 CASI GREAT PEPPERSMEETING-SEPTEMBER 9, 2006

I had been coasting along, minding my own business, totally confident that things wereprogressing smoothly when Editor/Publisher Bucky reminded me that no information hasappeared in the TRAILS about our upcoming G.P. Meeting. So here goes.

Our committee has been working diligently for more than a year in preparation for our annualconvention. First of all we have made arrangements with the “Red Lion Inn” which will becomeThe Crown Plaza soon and is located at the Northeast corner of the intersection of IH 35 &Hwy 290 for our meeting place. The rooms will be $71.00/night plus tax. We haveapproximately 50 rooms left and will be unable to reserve any more until these are nearly gone.Reservation deadline is August 17, 2006. The National champion Longhorns play Ohio State in Austin on that same weekend which willmake rooms at a premium.
