INGREDIENTS:

¼ cup olive oil

3 tablespoons lemon juice

2 teaspoons honey

2 teaspoons Frontier Co-op Ground Sumac

½ teaspoon Frontier Co-op Garlic Granules

½ teaspoon Frontier Co-op Sea Salt

DIRECTIONS: 1. In a mason jar, combine the ingredients

for the dressing. Shake well and store leftovers in the refrigerator.

2. Use the dressing tossed with cucumbers, roasted vegetables or salads.

TIP: Swap out the honey for cane sugar to make this dressing vegan.

MAKES ½ CUP OF DRESSING

Lemon Sumac VinaigretteAN EASY WAY TO DRESS UP CLASSIC LEMON VINAIGRETTE, SUMAC LENDS A DELICATE TANGY TASTE. PERFECT FOR PAIRING WITH FRESH VEGETABLES AND SALADS.

INGREDIENTS:

FLATBREAD:1 store-bought or homemade pizza dough, at room temp 3 to 4 tablespoons olive oil 3 to 4 tablespoons Frontier Co-op Za’atar

GARLIC YOGURT:1½ cups Greek yogurt 1 clove garlic, grated 2 teaspoons lemon juice Pinch of Frontier Co-op Table Grind Sea Salt Olive oil, for serving Frontier Co-op Za’atar, for topping

DIRECTIONS: STRAIN THE YOGURT: Place a colander over a bowl and line with cheese cloth. Place the Greek yogurt inside and let strain while making the flatbread.

MAKE THE BREAD: Preheat the oven to 425°F and line two sheet trays with parchment. Roll/stretch the dough into two rough rectangles. Prick the dough a few times with a fork then brush with olive oil and sprinkle evenly with the za’atar. Bake until golden and crisp, 18 to 20 minutes.

ASSEMBLE THE YOGURT: Transfer the strained 3-4 tablespoons of yogurt to a bowl and stirring in the grated garlic, lemon juice, and salt. Spread into a thin layer on a plate or bowl and top with olive oil and a sprinkling of za’atar.

SERVE: Serve the za’atar flatbread with yogurt, olive oil, and olives if desired.
