    Dear Members,

Very exciting times here as we continue to make progress and prepare for the historic renovation project. With a project of this scope there is a lot of planning and preparation that goes in. We will continue to keep you apprised of milestones. Hopefully you are receiving our twice monthly email updates on the project (the staff and I continue to get questions around what is happening when and why did we select this path).

Historically, the Club has used creative partnerships and investment structures over the years to renovate and advance the progress of the Club including when the building was originally constructed. In 1917, when the plans to erect the building were announced, the construction project was in partnership with the Ticonic Investment Company for a 90-year lease on the property, with the option to purchase the property within the first 50 years (which we did). The construction of the building was funded through a loan of $250,000 by the Ticonic Investment Company and further funded by the Membership, the Merchants and Manufacturers Association, and other commercial interests that resided in the building (retail tenants). Our current plan is of similar creativity, where we are partnering with a developer, who will complete a 30-million-dollar renovation of the building in partnership with the Club. There will be a new entity created to hold the real estate. The Club retains the right to purchase the building for fair market value after 5 years following the completion of construction. The Club will lease back the Club spaces (non-hotel room areas) that will be occupied, programmed, and enjoyed by the Milwaukee Athletic Club members, and their guests.

    Some quick updates:

    • The Club plans to operate in its current space through December 31, 2018

    • Pre-demolition and construction will occur with limited to no disruption with the day to day operations

    • New “Legacy” membership category and benefits coming in April – Includes benefits for existing members who commit to maintaining membership during the redevelopment.

    • We will have a temporary Club space for MAC members during construction (Yes, we will still have a club offering athletic, social, food & beverage and other great programs, services, and amenities). We have narrowed in on a few locations nearby the current Club location

    • Historic Tax Credit application has been approved and is on schedule with the required milestones

    • Developer agreements will be signed by February 28th

    • Proposals received by Management Partners, on March 15th

    • RFP for architects and designers out by March 1st

    • Proposals submitted by architects and designer’s no later than March 23rd. Data from focus groups and surveys will run concurrently, and will be evaluated in the selection process for these vendors

    • Board review and approval of all vendors/partners to date no later than the March 26th BOD meeting

    • A Member Survey is scheduled to go out no later than March 23rd to gain input and insight on the programming, services and amenities you want to see in your new re-imagined MAC. Watch your email for more details and times

    • Plan to attend the Spring Town Hall meeting. Tentatively scheduled for April 2018.

See you all at the Club!

    MarchMichael David Winery Petite Petit

TASTING NOTESLike elephants whose size is imposing, Petite Petit is large! A blend of 85% Petite Sirah and 15% Petit Verdot. The 2015 Michael David Winery Petite Petit pours thick, dark, inky goodness in the glass. It smells of blackberry, black cherry, plum, licorice, vanilla and more. It’s a big aroma but it’s just a hint of what’s to come when tasting. Taking a sip reveals a big, rich wine full of dense ripe fruit, spice, licorice, vanilla, chocolate, coffee, smoke and the list goes on. And while it’s loaded to the brim with big flavors it also manages to keep its balance, much like an elephant walking a tightrope. The whole thing resolves nicely on the long, dry finish which features lingering smoke and savory spice.

FOOD PAIRING NOTESWinemaker Derek DeVries loves to pair Petite Petit with a juicy prime rib!

    AprilMarkham Chardonnay 2016

TASTING NOTESWith a tradition of quality winemaking dating back to 1879, Markham has a proud history of producing exceptional wines from some of Napa Valley's most acclaimed viticultural areas. Grown primarily on Markham's Oak Knoll estate, this Chardonnay is perfectly balanced. Juicy, ripe flavors of pear and caramel apple pair with aromas of nutmeg, vanilla, and pineapple to create a smooth, polished wine with an undeniable tropical flair.

FOOD PAIRING NOTESPerfect with light and delicate food such as raw and lightly cooked shellfish like crab and prawns, steamed or grilled fish, fish pâtés, fish, chicken or vegetable terrines and pasta or risotto with spring vegetables. They also go well with creamy vegetable soups.

    Steak au poiveINGREDIENTS

4(6-8oz) Boneless Medallions, Such as Filet Mignon Kosher Salt 1 oz Whole Black Peppercorns, Plus more as needed, 3 TBSP Vegetable Oil 1 TBSP Unsalted Butter 2 Fresh Thyme Sprigs 1 Medium Clove Garlic 1/2 Shallot 2 TBSP Brandy or Cognac 3/4 Cup Chicken Stock 3/4 Cup Heavy Cream or Crème Fraiche 1 TSP Dijon Mustard

    DIRECTIONS

    1. Season steaks all over with kosher salt. Set steak on a wire rack. Set wire rack over a rimmed baking sheet and allow steaks to air dry uncovered in the refrigerator for 30 minutes. Meanwhile, crack peppercorns into rough halves and quarters, you can use a pepper mill or a mortar and pestle (wrap the peppercorns in a clean kitchen towel first to contain them).

    2. Preheat the oven to 375 F . Spread cracked peppercorns on a plate or in a shallow dish and firmly press one side of each steak into the pepper to encrust each steak in an even layer. Set each steak aside, peppercorn side up. Reserve any remaining cracked peppercorns. Exactly how much pepper adheres will depend on the dimension of the steak.

    3. In a large stainless steel or cast iron skillet, heat oil over medium-high heat until simmering. Add steaks, and cook (peppercorn side down), until peppercorns are well toasted, about 3 minutes, carefully turn steaks, trying not to break the peppercorn crust. Add butter, thyme, and garlic, to the pan. Cook while basting the steaks with a spoon, until steaks are completely seared on both sides. Remove from the heat.

    4. Transfer steaks to a rimmed baking sheet. Using an instant read thermometer, check the internal temperature of the steaks. If it reads 125 F., they are ready to be served medium rare. If you would prefer them done more transfer them to the oven and cook until the correct temperature is reached.

Southern Comfort Braised Short RibsChipotle Mashed Potatoes, Dried Cranberries, Brussel Sprouts, Southern Comfort Demi Glaze, Fried Leeks $13

    5. Pour off all but 1 tablespoon of fat from the skillet and discard the garlic, and thyme, add the shallot and any reserved peppercorns, return pan to medium heat, and cook shallots, stirring, until shallots are caramelized.

    6. Add brandy or cognac. Note: to prevent an unexpected flare-up of flames, you can turn off the burner, before adding the alcohol. Cook until the raw alcohol smell has burned off and almost completely evaporated.

    7. Add chicken stock and bring to a simmer, stirring and scraping up any brown bits in the bottom of the pan. Cook the stock until reduced by half. Whisk in the cream or crème fraîche, simmer, stirring often, until sauce has reduced enough to glaze the back of a spoon. Whisk in the mustard and season with salt and pepper.

    8. Arrange steaks on plates and pour sauce on top. Serve with french fries, mashed potatoes, or other sides of your liking. Enjoy!

The MAC is my home away from home as I am there just about every day of the week. From swim lessons with the kids on Saturdays to Frenchy’s core camp on Monday, Emily’s interval class on Tuesday, workouts of my choosing on Wednesday and Thursday (yoga, Josh’s strength and conditioning) and Spin or Barre on Friday, I make it a point to get there more often than not. James greets me and my family with a smile every day and our daughter even named her baby doll “Chuck”. My kids ask to go to “Wanda’s house” every chance they get so they can finish a craft project and be surrounded by her love. The babysitting services Wanda provides made me feel comfortable to either get moving or just take an hour for myself after each baby and I joke that she is the reason we had three kids so close together in age, that I would have the help I’d need to get through such a physically challenging time. In addition to the athletics, I’d like to think I have experienced all the MAC has to offer; our wedding in the Grand Ballroom, work meetings in the President’s room, lunches

Those of us who are savvy to the gluten-free and low-carb diet worlds have heard much in recent years about the awesome nutritional value of nuts, but why are we still so tentative to add these delicious and nutritious little morsels into our diets? Is it because some nuts are still getting a bad rap? Is it because we still consider them a salty snack food with a high fat content? Unfortunately this can be true…for the people who are purchasing "Smokey Flavor" or "Salted" packs that are filled with salt and extra unneeded calories! However, plain, roasted, or lightly salted nuts give your body a nutrient dense food filled with fiber, protein,

vitamins, antioxidants, and poly-unsaturated fats (aka good fats). It has been shown that within proper diets, nuts can actually AID in weight loss, lower cholesterol, and reduce inflammation! Nuts are delicious, versatile, widely available, easy to consume, and healthy when part of a balanced diet - so enjoy them! Just do your best to consume dry roasted, lightly salted options, and avoid the ones you find at your local gas station covered in flavoring!

The Men’s Tank (aka the casual dining area next to the men’s swimming pool on the 6th floor) is a well-known, almost legendary area of the MAC. Yet, what do members really know about it? The tradition of MAC members eating next to the swimming pool actually pre-dates our current building, as lunch was also served poolside at the Milwaukee Athletic Club location inside the Wells Building from 1902 until 1918. The tradition was going so strong, that it was then re-established in our current building, and has been going even stronger ever since. Located next to the men’s locker room, athletic facilities and pool meant it was the center of the MAC universe. Being located in a men’s only area gave a new meaning to casual dining, as a towel wrapped around the waist was considered totally proper. Disclaimer - today it’s still very casual but both men and women are invited - with shorts and shirt required.

That’s not all that has changed. Even just a few decades ago, Saturday Tank service saw Burgers and Gold Brick Sundaes as the most popular items. Nowadays, while soup-du-jour remains a mainstay, The Tank replaced its menu with a much healthier option – the salad bar.

Secrets from The Tank: Without a doubt, eating within close proximity of the pool led to comical circumstances.

Yes, members, fully clothed, have leaned back too far and fallen into the pool. Another classic moment came when a member eating lunch (who happened to be an ex-Milwaukee Brave), began to get annoyed with the lap swimmer splashing him during flip-turns. So he decided to grab a roll off the table and bean the swimmer right in the head from about 30 feet away. Hard to say what was more impressive - the throw, or the look on the swimmers face.

The tank is popular not only for a quick bowl of soup and salad. It’s the place to meet friends. More often than not a member arrives as a single, and soon after is sitting with a pack of friends. Isn’t that what a private Club is all about? You never know, you may be sitting next to some of the top executives in the city. It’s such a unique lunch experience, that you won’t find anything else like it in Milwaukee. If asked where the best place to network with other members is: the answer is, The Tank.
