snacks…snacks…IngredientsIngredients::• 1 muffin, cut in half• 2 mushrooms• Half cut zucchini and onion• 1 slice ham• 1/2 cup mozzarella• Some tomato paste,olive oil•  salt and pepper

DirectionsDirections::• Toast the muffin until golden and leave it to cool. Preheat the broiler.

Mix the tomato paste and spread over the muffin halves. Heat the olive oil in a frying pan and cook the onion, mushrooms and zucchini until they become golden.

• Add the seasoning and then divide the vegetables between the muffin halves and scatter the ham and mozzarella over the top. Place under the broiler and cook for 4 minutes.

SOMETHING QUICK AND SWEET

Ingredients:• 1 cup flour • 2 teaspoons sugar, nonfat yogurt, skim milk and water• 1 teaspoon baking powder • 1/2 teaspoon baking soda • 2 egg whites • Some cinnamon

Directions:• In a medium bowl, stir together the whole wheat flour, all-purpose flour, oats,

cornmeal, sweetener, salt, baking powder, baking soda and cinnamon.

• In a separate bowl, whisk together the eggs, yogurt, milk and water.

• Pour the wet ingredients into the dry, and mix just until moistened.

• Heat a skillet over medium heat, and coat with cooking spray.

• Pour about 1/3 cup of batter per pancake onto the skillet.

• Cook until bubbles begin to form in the center, then flip and cook until browned on the other side.
