Producing quality is a very challenging task. And it becomes even more so when it means on a large scale , increasing the amount of

product to be launched on the market. A goal perfectly in line with a corporate philosophy aiming at full satisfaction of customer

MISSION Puglia is a region at the forefront in the process of industrialization South I trade with the ' port activities related to the eastern

Mediterranean and in fact have favored its economic development . The ports of Bari, Brindisi and Taranto are sites of major chemical

and petrochemical plants and large iron and steel complex . Mechanical, textile, food are scattered over the rest of the territory and in

the main centers . Agriculture , however, is still the main resource of the region. The population was able to overcome the problem of

lack of water with great irrigation works . L ' Apulian Aqueduct , for example, uses the river water from Campania. They grow

vegetables, fruit, grapes, olives, tobacco for these products is at the forefront of Puglia in Italy. Wheat cultivation in the plains of the

Tableland , has partly replaced herding. Tourism is growing, spurred by the beauty of the landscapes , mild climate and the historical

and artistic interest in different cities.

PRODUCTS The Puglia region of southern Italy for the first extension , occupies the eastern part of the Italian territory . And ' wet for more than

800 kilometers from the sea and is mostly flat and hilly . From north to south one another for different areas of the land and economy .

BENEFITS OF EXTRA VIRGIN OLIVE OIL A diet rich in animal fats ( whole milk , butter, cheese , eggs , fatty meats ) increases the amount of cholesterol in the blood, one of the

main risk factors of cardiovascular diseases. Vegetable oils have protective action instead . In particular, the extra virgin olive oil has ,

compared to other vegetable oils , the more beneficial effects. Not only for its characteristics , but also because it is the only product

with the push and the crushing of the fruit , without further processes of chemical and physical nature such as the use of solvents to

facilitate the extraction as in seed oils and conventional olive pomace .

It should be clear also that the conditions of extraction and purification of organic olive oils are certainly better than the refining of

conventional oils . In addition, seed oils (even organic ones ), especially when used in certain processes ( industrial use for frying ,

sauces, mayonnaise ) are partially bleached and deodorized with steam treatments that take away the smell too intense but also some

other substances valuable . The presence of tocopherols (vitamin E) and extra virgin olive oil polyphenols confer an important role in

antioxidant and anti-radical , limiting cellular aging

!The Puglia was inhabited by the Illyrians , and on the coast, by the Greeks , the region was conquered by the Romans after they reported the victory over the Samnites . We select for the production of our pasta , durum wheat semolina made by mixing fine grains grown in Apulia and ground in local mills . Our production lines are virtually unique : the machines used in our laboratories have been built and refined specifically for our needs. In this way we get the orecchiette unique in form, almost identical to those hand-made by grandmothers Puglia. Our goal , in fact, is to combine the most modern production methods with the ancient tradition . Our method of mixing and drying is designed to enhance the quality of raw materials taken : the flour is kneaded very slowly so that the particles of gluten are not "stressed" from too much pressure and sudden ; immediately the dough undergoes a process of pasteurization in order to ensure the product is microbiologically pure , and finally there is the important and delicate phase of drying . This occurs very slowly (12-18 hours) and very low temperatures ( 40-45 degrees) so as to obtain an excellent product , and with great cooking resistance .
