About UsIn 2004 Giorgio Linguanti arrived on the shores of Port Phillip Bay. In only four years, this young Sicilian went from not speaking a word of English to opening his own cheese company, winning an award at the Royal Melbourne Fine Food and since then he has won numerous awards.

Giorgio grew up in Italy and before migrating to Australia, his career was in advertising. During the two years prior to coming to Australia he worked in a small shop selling regional food products typical of the Aeolian Island (off the north-east coast of Sicily), which included organic capers, jams and tuna in oil. This sparked his interest in food.

It was August 2004 when Giorgio migrated to Melbourne and without a word of English, got a job in a cheese factory where his interest and passion for making cheese ignited. “It looked challenging” Giorgio confesses.

After his experience in two different cheese factories, Giorgio started his own business ‘That’s Amore Cheese’, in 2008. He began with just one product – Bocconcini Leaf, which was a huge hit with the Italian Restaurants. Before long he was also making Burrata and Smoked Scarmorza. Chef’s admired his artisan skills in handmade cheeses and were very excited by his products.

Giorgio’s business grew rapidly and in 2010, That’s Amore Cheese took over Donnybrook’s cheese factory. In the same year he opened his shop, ‘La Latteria Mozzarella Laboratory’ where his cheese is made every day in the shop. Giorgio’s cheese laboratory allows him to experiment with new products so that there is always something new to offer.

Thanks to his passion and love, Giorgio’s business has experienced exceptional growth. In April 2015, That’s Amore Cheese moved into a larger facility in Thomastown, accommodating a beautiful Retail Outlet & Café.

In 2016 That’s Amore Cheese approached the export market and is now supplying cheese to more than 10 countries and started its first international Mozzarella Lab in Singapore.

Two years later in 2018, That’s Amore Cheese launched two sister brands: Cannoleria by That’s Amore Cheese that specialises in ricotta cannoli and That’s Amore Gelato that specialises in artisan gelato.

Today That’s Amore Cheese has a team of 100 staff and a made makes more than 40 different types of cheese.

Awards & CertificationsDairy Australia awarded That’s Amore Cheese Buffalo Ricotta Champion in the Goat’s/Sheep’s/Buffalo Cheese category in 2019. Our Divaoletti were awarded Champion in the Flavoured Cheese category in both 2017 and 2014. While for two consecutive years (2012-13) it was named Champion of the Fresh Unripened cheese class for its Burrata, our delicious money bag style cheese filled with strings of stretched curd and cream.

That ’s Amore GelatoThat’s Amore Gelato is a new sister brand that specialises in artisan Gelato and exclusive handmade frozen desserts.

Following traditional recipes, That’s Amore Gelato brings the true flavour of Italy. We take pride in using only our local farm fresh milk and Italian recipes to deliver high quality gelato products.

We have a wide range of delicious Gelato flavours, as well as a range of mouth-watering mono-portion frozen desserts and pastries, including: gelato cake, tartufo and semifreddo.

That’s Amore Gelato is available for food service, with a large catalogue of products to choose from. Our range is also available at our Retail Outlet in Thomastown.

Well-known Gelato Chef, Alessio Tavella, brought That’s Amore Gelato to life. Back in his home-town of Calabria, he grew up watching Master Gelato Chefs perfecting their craft. That ignited his passion. A few years on from working in some of Australia’s most well-known patisseries, he decided to embark on the That’s Amore Cheese adventure with Giorgio Linguanti, creating That’s Amore Gelato.

Cannoleria by That ’s AmoreIn 2018 That’s Amore Cheese launched a new brand called “Cannoleria by That’s Amore Cheese” where we specialise in cannoli, delicate tubes of golden, crunchy pastry filled with deliciousness.

At Cannoleria we freshly fill cannoli using only the highest quality ingredients and our traditional in-house made ricotta.

Not only do we offer tradition Sicilian Cannoli, we also experiment with flavours inspired by seasonal produce, using only natural ingredients. Our flavours range from from traditional ricotta to limoncello, tiramisú, nutella, peanut butter and mandarin. We always have something totally innovative to offer!

Cannoleria opened its first cannoli-dedicated store on July 13 2018 at South Melbourne Market and a second store just one year after at Preston Market. The cannoli carts also pop-up on weekends in several Melbourne Shopping Centres and Food Festivals. So, no matter where you are, you can get your cannoli fix! Our Sicilian Cannoli Carts are great for private and corporate events.Treat your guests to cannoli like the true Sicilian way.

Mozzarella Lab is a new and innovative global project that gives other businesses the opportunity to make fresh mozzarella and many other fresh cheeses on site using That’s Amore Cheese high-quality ingredients and expertise.

Mozzarella Lab can be a simple mozzarella station within your own venue or a fully fledged cheese production, where you produce your own in house fresh cheese for the general public and food service businesses.

We will provide the expertise, ingredients, machinery, equipment, training and ongoing support required for you to successfully establish That’s Amore Cheese in your own country.

Another one of That’s Amore Cheese’s great achievements is the creation of That’s Amore Retail Outlet in Thomastown, which opened on the 27th August 2015.

Education & CommunityCheesemaking it’s our passion, and we want to share it with everyone.

At That’s Amore Cheese our focus is on both educational programmes and various community-based projects.

Our educational programme consists of cheesemaking classes, live demonstrations and unique master classes.

Our overarching goal is to expose the wider community to genuine Italian artisan cheese, and showcase traditional techniques and recipes. During our classes, we take participants on a fun and educational journey where we demonstrate the tolls and benefits of producing delicious handmade cheese at home.

We guarantee that you will never forget the moment you first taste a slice of cheese you’ve created with your own two hands and share it amongst your family and friends.

We truly believe a strong connection with the community is vital and as a result have made a real concerted effort to support numerous different community programs whenever possible. One such example is our current bed sponsorship partnership with The Royal Children Hospital Foundation.

We are also currently collaborating with the Stephanie Alexander Kitchen Garden Foundation, which supports pleasurable food education, as well as other smaller causes and fundraising events in Melbourne.
