WHAT’S GOING ON?

Thanks to the Who’d Have Thought It Inn at St Dominick for this recipe for Greek yoghurt brulee.

Ingredients: (makes 6)

• 60g sifted icing sugar• 1 vanilla pod or a few drops

of essence• I ltr Greek yoghurt• 6tsp honey• a sprinkle of roasted almonds• caster sugar• a few strawberries

What to do:

1. In a large bowl mix together the icing sugar, yoghurt and vanilla.

2. Divide your almonds between 6 ramekins and add a spoon of honey to each one.

3. Top with the yoghurt mix and set in the fridge overnight.

4. Add the caster sugar and lightly grill until the top is golden brown.

5. Serve while the top is still hot, with a few strawberries or other fruit of your choice.
