Vast landscapes, brooding storms and an abundance of wildlife; Dartmoor covers some 368 square miles and is oneof the UK’s last remaining true wildernesses. Beautiful scenery abounds and every season brings its own delights andcolours.

It is the perfect place to get away from it all. Time stalked tors - Dartmoor’s dramatic exposed granite hilltops -dominate the skyline and snake right across the National Park.The night skies are crystal clear and perfect for star gazing.

The high ground of Dartmoor forms the catchment area for many of Devon's rivers.As well as shaping the landscape,these have traditionally provided a source of power for moor industries such as tin mining and quarrying, the scarsfrom both can be seen right across the moor. Some of the Bronze Age hut circles are over 3,000 years old and thereare ruined 18th century engine houses scattered across the moor.

Farming is the main industry now.As well as the herds of Ruby Red cattle and hardy sheep grazing freely, the famousDartmoor ponies are a familiar and much loved sight. At almost every turn there are stunning views and theopportunity for an invigorating walk. Rock climbing, trekking, fishing or kayaking down any number of rivers like theDart orTavy are also very popular with more active visitors.

The diversity of Dartmoor provides an abundance of great days out and special places to explore.There are plentyof interesting towns encircling Dartmoor that provide a pleasant respite from the wild, untamed moorlands.Tavistockis a charming ancient stannary town brimming with shops and reputed to be the birthplace of Sir Francis Drake.

The Campaign for the Protection of Rural England rate it as the Best Market Town in the country and its Victorianarchitecture attracts a discerning food and art loving crowd. Other towns worth visiting include Buckfastleigh,Ashburton,Chagford and Mortonhamstead. Princetown, the highest settlement on the moor, is famous for its legendary‘Jail Ale’ and imposingVictorian Prison.There are also plenty of NationalTrust properties located near to these townsincluding the dramatic Lydford Gorge, Castle Drogo, Buckland Abbey and Cothele House.

East Devon remains somewhat of a well-kept secret, andone of my favourite places is Budleigh Salterton – whichis something of an undiscovered gem.

The beach is a lovely stretch of pebbles, flanked by distinctive redcliffs on one side and the River Otter on the other, with a quaint butpractical high-street that runs parallel to the sea.

First things first, don’t be put off by the pebbles, which for one thingmakes it a great beach for swimming. It’s not unusual to spothardened Budleigh swimmers braving the water most days,regardless of weather, and it is a popular spot for festive Christmasand NewYear’s Day swims - fun to watch even if you’re too chickento join in.

Kids don’t seem to mind the pebbles either, and building pebbletowers is almost as much fun as sandcastles, plus the lack of sandmakes it much more food-friendly so its great for picnics and BBQs.

In winter Budleigh can be a sleepy kind of town but as summerapproaches Budleigh transforms in to a bustling little place, full withfamilies who have enjoyed holidaying there for generations, and nowbring their little ones to enjoy much the same delights as they did.

And it’s this combination of old school charm and Budleigh’s slightlyeccentric locals that helps entice visitors to return, time and timeagain - which is wonderful, but please just don’t go telling everyone…

Walk from Budleigh beachalong the River Otter toOtterton Mill – and reward yourself with a cream tea.

Budleigh has a great little high street full of independentretailers - so avoid the supermarket and ‘shop local’ atthe butchers, fishmongers and bakery. There’s also agreat selection of boutiques, gift shops and art galleries– tryThe Brook Gallery, and Plume.

The Creamery – put simply, the best ice-cream around.

Relatively new and a real addition to the high street – try Ocean House, a great café, with modern décorand great for lunch or coffee.

For the freshest fish go and see gorgeous ‘Dave The Fish’ - look out for his distinctive flag flying on thebeach.

Roast Rump of Spring Lamb with Braised Neckwith Crushed Jersey Royal New Potatoes,

Aubergine Purée & Fried Capers

You will need

2 spring lamb rumps

2 spring lamb necks

2 aubergines

1 onion, chopped

1 carrot, chopped

2 cloves of garlic

1 sprig of rosemary

400ml of lamb or brown chicken stock

500g Jersey Royal new potatoes, cleaned

100g capers

sea salt

olive oil

chopped parsley

salt and pepperServes 4Cut the aubergines in half lengthways. Score with a knife and sprinkle with sea salt,leave for one hour.Dry with kitchen towel, drizzle with olive oil and cook in a pre-heated oven at 150C/300F/Gas 2) for 2 hours. When cooked, scoop out themiddle and blend in a food processor until smooth. Season with salt and pepper.

Season the spring lamb necks with salt and pepper and fry in a heavy-based fryingpan with olive oil until brown all over. Transfer to a casserole dish and add theonion, carrot, garlic, rosemary and stock. Bring to a simmer. Cover and transfer toa pre-heated oven at 140C/275F/Gas 1 and cook for 2 hours. When cooked,remove the necks, pass the stock through a fine sieve into another pan, skim off anyfat, return to the heat and reduce to sauce consistency. Keep the necks warm untilneeded.

Turn the oven up to 200˚C, 400˚F, Gas Mark 6. Season the rumps with salt andpepper. Fry in a heavy-based pan in olive oil until brown all over. Put the rumpson an oven tray and cook for 14 minutes, turning them half way through cooking.Once cooked, take the rumps out of the oven and rest for 10 minutes beforecarving.

Put the potatoes in a pan and cover with salted water, bring to the boil and cookfor about 15-20 minutes, drain and peel. Roughly crush the potatoes with theback of a fork, drizzle with olive oil and season with salt, pepper and parsley.

Heat some olive oil in a heavy-based pan, add the capers and fry for about 30seconds. They should start to puff out and crisp up a little.

Arrange the potatoes on the plate, cut the lamb necks in half and place on top.Slice the rump, spoon on the aubergine purée, sprinkle the capers around theedge and pour on the reduced stock/jus. Serve with spring greens, young leeks andbroad beans.

CHEF’S NOTEJersey Royals, or possibly Cornish Earlies, are the only new potatoes available when spring lamb is in season, but local orWest Countrynew potatoes could be substituted.

Head Chef Hadleigh Barrett has beencooking top notch local ingredients at CombeHouse Devon for several years. He isparticularly keen to serve spring lamb,properly hung at the appropriate time, andsources his locally from East Devon farms.Early spring lamb has a delicate, pale andtender meat with a fine grain and whitecrumbly fat to keep it succulent.

Ken and Ruth Hunt, owners of CombeHouse Devon, an award-winning countryhouse hotel, have been passionate about theprovenance of the produce that makes itsway into the kitchen from the day that itarrives at Combe. More than a decade later,they have a dedicated team of local suppliersand the hotel’s walled garden produces 40per cent of the fresh vegetables, soft fruit andherbs used in the kitchen - from chervil andbasil to broad beans, redcurrants andgooseberries.

Walnut Crusted Pork Filletwith black pudding mash

This is an excellent dish for entertaining friends and it is always verypopular at our restaurant. It really champions the excellent Pork we havein this country and especially in the South Hams in general.The walnutherb crust would also work well with a rack of lamb or a goats cheese.

You will needI Large PorkTenderloin

1kg Pork Belly, skin scored (for the crackling)300g Black Pudding

900g Maris Piper Potatoes120gWalnuts, crushed

15g each of Parsley, Sage andThyme, finely chopped½ a Savoy Cabbage½ aWhite Onion

50ml Cider Brandy (or you can use a dry cider)400ml Double Cream1tbsp English Mustard

Rapeseed Oil and Butter, for frying1 egg, beatenPlain FlourSalt & Pepper

Serves 4 Heat the oven to 200c

Trim the fat off the pork belly – the meat can be slow roasted foranother meal. Slice the fat into long strips 1cm wide, season with saltand pepper and cook in the oven until crispy (approx 25 mins).

Boil the potatoes in salted water until soft, then drain and keep warm.Finely slice the cabbage and blanche in salted boiling water for 2minutes then immediately plunge into iced water, drain, pat dry andset aside for later.

Whilst the potatoes are boiling, roast the walnuts for 5 minutes thenmix with the herbs. Cut the tenderloin into 4 even pieces. Roll in someflour then the beaten egg, then firmly into the walnut mix. Pan fry thepork in the oil until it has an even colour all over, then pop in the ovenfor 12-15 minutes.

Remove the skin from the black pudding, break into pieces and fry ina pan for a few minutes.Mash the potatoes, and add butter, cream andwhite pepper to taste. Mix the mash with the black pudding.

Using the pan you fried the pork in, add some more oil, then add thefinely sliced onion and a pinch of salt. Cook until the onions are soft.Add the cider brandy and deglaze the pan (take care as there may beflames!). Add the cream and cook until slightly reduced and add themustard to taste. Pass the sauce through a sieve.

Pan fry the savoy cabbage in butter.You are now ready to plate up!

Brixham Pollockwith parsley, caper and egg sauce

This is a good old fashioned recipe that my nan used tocook for me although I’m not sure whether she ever usedPollock. This dish works with any white fleshed fish so makeuse of whiting, haddock, even smoked haddock or gurnard.Everyone I’ve cooked this dish for absolutely loves it, it ispure comfort food and ideal for those who think they don’tlike fish.

You will need800 g Pollock fillet, skinned

400ml milk50g butter

1 onion, finely sliced2.5 tbsps flour

Good handful of choppedparsley

1 tbsp finely chopped capers1tsp English mustard2 hard boiled eggsSalt and pepper

Serves 4To make, poach the Pollock fillets in the milk very gently for6-7 minutes then remove from the heat. Soften the onionsin the butter until soft and translucent, add the flour andcook for a minute or two. Slowly pour on the milk untilyou have a sauce of double cream consistency. Add theparsley, capers and flake in the fish. Peel and slice the boiledeggs, add them to the sauce, season with salt and blackpepper and serve with creamy mashed potato and peas orbroad beans. A nice little twist on this is to add a few bitsof bacon.

“I have only been living in Devon for 4years but holidayed here every year asa child and have had a long associationwith the fishing community – thefishermen and buyers - since openingmy first fishmongers in Bath over 14years ago. I have to say I absolutely loveit here. I’m always amazed at the everchanging scenery outside of my windowhere in Brixham and when I drive intothe South Hams looking for a goodwalk or a pub there is a new discoveryevery time. I moved to Brixhambecause of my love of fish and thebeauty if the town, true it needs a littlework and a few more traders but theywill come, the community here isfabulous and if the plans for theredevelopment of the town all go aspromised then it will be the gem ofTorbay and probably Devon. What ismy view like? Well as a fishmonger andseafood restaurateur it couldn’t bebetter really. My office in the houselooks directly over the water to theBrixham fish market. In the earlymornings, through the mist or first ofthe sunshine, I can see the day boatsand beam trawlers coming in to theport to land their catch. Between themarket and my house is the marina withall the beautiful yachts and little woodenboats moored in neat rows, the gentlerhythmic ringing of the halyards againstthe masts and the splash of water risingand falling as the swell increases fromthe boats crossing the deeper waters. Itravel over to my restaurants inDartmouth,The Seahorse and RockFishSeafood & Chips using the ferrycrossing the water between Kingswearand Dartmouth – what better way tostart the day?

Hogs PuddingYou will need

500g fatty pork mince (belly pork or shoulder)50g pearl barley50g bread crumbs

sprigs of thyme (chopped)sage leaves (chopped)16 tarragon leaves

200g pigs caul for wrapping the puddings (a good localbutcher will be able to get this for you)

salt and pepper, English mustard, lard and butter

Serves 4

1. Cook the pearl barley in salted boiling water until soft, drain andallow to cool

2. Place the pork mince into a bowl and add the cooked pearl barley,the bread crumbs, and chopped thyme and sage leaves and mixthem together thoroughly

3. season the mix well with salt and pepper then cook a small pieceof the mix in a heated frying pan with a little oil in order to tasteand check the level of seasoning, adjust as necessary

4. When the seasoning is to your taste shape the mix into 16 smallballs (approx 50g each)

5. Place some pigs caul on a chopping board and open it up until youhave a neat and flat sheet

6. Place a ball of the mix onto the caul with a tarragon leaf on top,cut around the base of the ball with a sharp knife leaving sufficientcaul to be able to pull it up and around the ball so that the balland tarragon leaf are completely wrapped in the caul

7. mould the wrapped ball of mix in your hands to ensure that thecaul is firmly in place and repeat steps 6 and 7 for each of theballs of mix (the hogs puddings)

8. Leave the hogs puddings in the refrigerator overnight to marinade

9. Take the puddings from the refrigerator and fry them in a panwith a little lard and butter, turning frequently until they are goldenall over, making sure that they are cooked all the way through

10. Rest the cooked puddings on a tray (a few minutes) to allow thejuices to come out, pour away the fat from the frying pan, addthe juices from the tray and whisk in a little English mustard anda knob of butter over a low heat until the resultant gravy becomesshiny

11. Serve the puddings with the gravy poured over together withsome parsnip mash and buttered cabbage

Exmoor is an area of outstanding natural beauty: wild moorland

stretching for miles which drops dramatically into the sea. The

coastpath is spectacular and encompasses the fascinating villages of Lynton and Lynmouth, Coombe

Martin and Mortehoe.

Walkers & dog lovers can stroll over Braunton & Northam Burrows and the North Devon Coast

Path designated as part of the Heritage Coast and situated within the only UNESCO Biosphere in

England.This is also ideal bird watching country with coastal habitats, marshland and moors within

easy range.

Nature enthusiasts can book a trip to Lundy Island, an unspoilt gem off the coast of Bideford. Only

20 minutes away, nestled in the cliffs, is the quaint fishing village of Clovelly, a private village with a

cobbled street which meanders down to the harbour.

The Hartland Peninsular & Hartland Abbey are also nearby whilst Arlington Court, home of the

Chichester family lies about 45 minutes drive away on Exmoor.

North Devon offers a wealth of lovely gardens from the famous RHS Rosemoor Gardens in

Torrington to Docton Mill and Marwood.The Eden Project andThe Lost Gardens of Heligan make

a wonderful day out although they are about 70 miles away.

Sportsmen are also well catered for in the area with the oldest Golf Links course in England only

a mile away atWestward Ho! and a variety of other courses nearby. Surfers can tackle the waves

locally and there are lessons available for those who would like to learn. You will not be bored!

There’s also the chance to get close to penguins, sealsand puffins at Living Coasts,Torquay’s marine coastal zoo.

With its long stretch of coastline and blue, open water,The English Riviera is, understandably, a boat-lovers paradise.Torquay’s marina and Brixham’s harbour are popular with visiting mariners and even landlubbers can enjoy a whole host of boat expeditions and fishing trips along the coast, stretching toDartmouth.
