Good Nutrition: Holiday Super Foods

It’s hard to believe the holidays are fast approaching. This year, instead of a feast featuring carbohydrate rich and starchy items, challenge yourself to try some exciting seasonal fruits and vegetables. Quick Tip: Remember to limit your serving of starches to once per day. Adjust serving size to ½- ¾ cup if you are less than a year post-op. Look for leafy greens, winter squash, cruciferous and root vegetables. All are nutrient dense, meaning they provide a wealth of vitamins, minerals and fiber and are relatively low in calories. Try the following tips and recipes with your friends and family. We have chosen 4 common holiday feast items and suggested some exciting alternatives. Give them a try and let us know your feedback. SPAGHETTI SQUASH: (Great replacement for pasta or potatoes) This winter squash is a low carbohydrate alternative to potatoes during the holidays. Per ½ cup serving, there is ~5 g carbohydrates compared to ~15 g per ½ cup of noodles or potatoes. They also provide a source of Potassium and Vitamin A. Feature them at your holiday feast and incorporate them year round as a pasta alternative. Simply cook squash and serve with marinara sauce, lean ground turkey and garlic. FRESH APPLES: (Great replacement for pie) Apples contain soluble and insoluble fiber. Research has linked apple consumption to reduced risk of some cancers, cardiovascular disease and diabetes.
Cooking fresh apples will intensify natural flavors and decrease the need for added fat or sugar. Enhance with cinnamon, nutmeg or clove. Season with rosemary, sage and thyme when serving baked apples with meat or poultry.
Quick Tip: Combine 4 peeled, sliced apples (Golden Delicious or Honeycrisp) with 3 Tbsp. water, 1 tsp. nutmeg, 2 tsp. cinnamon and 1 Tbsp. artificial sweetener. Spray large baking dish with non-stick spray. Place sliced apples in dish. Preheat oven to 350 degrees. Cover baking dish and cook for 30 minutes or until tender and firm.
CAULIFLOWER: (Great replacement for mashed potatoes) This cruciferous vegetable is a good source of fiber and an excellent source of vitamin C and folate. To retain flavor, store in cool, dry place and use within 2 days of purchase. To the surprise of many, mashed cauliflower is an excellent low-carbohydrate alternative to mashed potatoes. Check out the recipe for mashed cauliflower on page 3.
COLLARD GREENS: (Great replacement for green bean casserole) This non-starchy vegetable provides a source of Vitamin K, potassium, calcium, and fiber among many other nutrients. For low fat cooking method, omit ham hock.
Quick Tip: In a medium skillet, heat 1Tbsp oil. Sauté’ ½ cup chopped onions and 1minced garlic clove until vegetables are translucent. Add 1 lb. raw collard greens, cook down. For a citrus twist, add ½ cup orange or lemon juice. Adding an acidic ingredient, such as juice enhances their color and appearance.

Cauliflower Mashed Potatoes Serving Size: ½ cup Yield: ~6 cups or 12 servings Prep Time: 10 minutes Cook Time: 30 minutes Ingredients: 3 cups cauliflower florets 2/3 cup skim milk 4 tablespoons fat free sour cream or plain Greek yogurt Pepper and/or Garlic to taste. Directions: 1. Place cauliflower in a steamer. Insert in 4 quart pot, cover and steam for 10-15 minutes until
very soft. 2. Place cooked cauliflower florets in food processor and puree (or mash by hand with spoon). 3. Add milk, sour cream, pepper, garlic to cauliflower and puree until smooth. 4. Put mixture in microwave safe dish and heat for 2 minutes, spray with butter spray. Nutrition Facts (per serving): 30 Calories, 0 g Total Fat, 5 g Total Carbohydrate, 1.5g Fiber, 2 g Protein.

Roasted Spaghetti Squash Serving Size: ½ cup Yield: 6 cups or 12 servings
Prep Time: 10 min Cook Time: ~60 minutes
Ingredients:
1 large spaghetti squash
Black pepper, onion and/or garlic powder
Directions:
Cut 1 spaghetti squash half lengthwise, scoop out the seeds with a spoon. Place halves on baking sheet cut side up. Sprinkle with black pepper, onion powder and/or gar-
lic powder. Bake at 350 for about an hour or until the skin is easily pierced with a fork. Actual cooking time
will depend on size of squash. Next, using a fork, scrape out the flesh into spaghetti-like strands. Place in serving dish or re-
turn to hollowed spaghetti squash for a unique serving dish.

Everyone has a story to tell about an event that has occurred during their life. We know our bariatric patients have these unique stories to tell as well. This month’s featured patient is Scott Moe.
Meet Scott Moe: “My name is Scott Moe and I am a gastric bypass patient. I had the bypass in September of 2008 and I have lost 310 pounds and maintained that weight loss. This is my story.
I have been over weight since as long as I can remember in elementary school. I remember my parents then always having to buy clothes in husky sizes for me and then getting into a size 42 pants in middle school while the rest of the boys wore 30 and 32 waists. People always looked at me differently because of my size and treated me differently. The older I have gotten the bigger I have gotten and it has affected not only my living skills but my social coping skills, until right before my surgery.
I was very bad with starting and maintaining personal relationships. This inability came from my being so self-conscious about my weight. I came to a point in my life where these inabilities had to end.
I had been trying to lose weight for a very long time with very little success. I made the decision to get my surgery and to alter my life to be healthy on a long road of change that takes me to where I am now, six years out. Keeping off 310 pounds is a constant fear that motivates me.
I hope that this tool along with the others I am using now, which are diet modification and specific exercise times can give me the life changing move I need to have more quality years to spend with my family and loved ones.
I know I needed this surgery to help me shed the unhealthy weight and to make myself feel and look better. I have a loving family and friends around who supported my decision to do this. I have shown myself that I have the will power to make a major change in my life since I had my surgery in 2008. All this combined with the support I get from everyone, gave me more willpower to make this life changing decision.”

St. Mary’s offers several weight loss surgery support groups. These group meetings offer education, support, guidance, the opportunity to network with other members, share information and ideas, and learn about healthier lifestyles. Open to surgical weight loss patients who are considering a gastric bypass or sleeve gastrectomy surgery, just had surgery, or are five years out from surgery. This group is appropriate for patients after adjustable gastric band, gastric bypass and/or sleeve gastrectomy. Family members and friends are also welcome to attend this meeting.
Topics include nutrition education, information about taking care of your operation, problem solving, and coping strategies. All groups are led by qualified staff including; Nurse Practitioners, Registered Dietitians, Registered Nurses, and Physicians.
