This classic brown demi-glace, prepared with real sherry, will add complexity, depth and richness to many dishes. Available in ready to use and concentrated formats, we’ve taken the effort and time commonly associated with making this sauce out of your kitchen. A little can go a long way, adding flavour and character to soups, stews, sauces, pastas, risottos and stir-fries as well as traditional beef dishes.

Storage Instructions:

Keep frozen. Pouched in a 1.8 kg bag; product can be thawed in the bag prior to use.

Preparation Instructions:

Water bath directions: place pouches in 185-190°F/85-90°C water in steam jacketed kettle or water bath. Do not overcrowd. Allow water to return to temperature before timing. Heating time will vary depending upon the number of pouches to be heated. Frozen: 85-90 minutes. Tempered: 60-65 minutes. Turn pouch(es) 2-3 times during heating. Prior to serving, gently shake pouch(es). Heat to a minimum internal temperature of 165°F (74°C) and serve.
