After a long and harsh winter we are finally approaching the beautiful Yom Tov of Pesach, ubh,urj inz. The Team at Evergreen has been hard at work for many months planning every detail to help you, our dear customer, enjoy an easier preparation period for the Chag. Every effort was made to combine convenience, fair pricing and of course a meticulous high standard of Kashrus. Our management has taken every step necessary to ensure that you won't have to leave Monsey to do your full Pesach shopping. From the moment you start planning your Yom Tov, Evergreen is here for you.

When you shop at Evergreen during this pre-Pesach period, you will notice some changes Lekovod Yom Tov. Our produce department has been fully cleaned, restocked and rearranged to allow full access to your special Yom Tov items. As always, you will find the freshest and best quality fruits & vegetables, available by the pound or by the case with the value pricing you have come to expect from us. Our meat department has been totally turned over with new keilim and new equipment and every chumrah has been followed to the highest standard of kashrus for Pesach. Beginning Shushan Purim, we are fully stocked with a broad array of cleaning supplies.

PEACH PREPARATIONS AT EVERGREEN MEAT DEPARTMENT
1 The walls and floors including the refrigerators and adjacent rooms were washed with the most powerful cleaning chemicals.
2 The meat cutting boards were replaced with new ones.
3 All knives, sharpeners, etc., were replaced with new ones.
4 The Band Saw went through a thorough cleaning and for additional โChumraโ it was also Kashered and the saw blades were replaced with new ones.
5 The plastic buckets, lugs and lids used for meat storage were replaced with new ones.
6 The plastic trays which hold the smaller foam trays were replaced with new ones.
7 All parts of the meat wrapper machine which come in contact with the product during packaging were replaced with new ones.
8 The meat grinders were cleaned and Kashered with a Libun.
9 The Grinder Plates and Blades were replaced with new ones. We also Kashered them to conform to the extra stringencies which apply to Pe-sach.
10 The table frames and racks were washed and kashered with a Libun.
11 All showcases were thoroughly cleaned and no Chometz product will be on display until after Pesach.
12 Equipment used for pickling was replaced with new ones and are not used for anything else.
13 The pickling tumbler was washed very carefully and then Kashered with Libun.
14 Foam trays, napkins, plastic wrappings and nettings used were re-searched to ascertain that they are Kosher LโPesach.
15 The butcher twine used to tie meat was manufactured by us in a com-pany which makes a special run for Pesach with Hashgocho Tmidis (The same twine is used in Pesach Matzo bakeries).
16 All soaps used for cleaning were researched to assure they are Kosher LโPesach.
17 We have discovered that the Peach Paper used year-round is treated with substances containing Chometz and is not used for Pesach at all.
18 We bought completely new towels/rags, and in addition they were washed in hot water to remove any possible starches in them. This is because the towels which come in contact with meat are usually rented from companies who also supply towels to other stores which produce โChometzโ (Bakeries, etc.) and are then washed together in one load of

up to 600 lbs, meaning there is a great chance that these towels were used for Chometz before.
19 Our skewers are from one manufacturer which we made sure that they are pure wood and not coated at all. They come with a Pesach-Hashgo-cho by a prominent Rav.
20 All employees put on a new apron daily so that their coats should not touch the meat. They must also wear gloves at all time, as well as plastic sleeves to cover their arms so their coat-sleeve doesnโt come in contact with the meat.
21 We implemented not to put any meat boxes on the tables as is custom-ary all year round. Instead, we take out the meat from the boxes and put them directly on the tables without the box. The reason being because during delivery the outside of the box may have come in contact with something which is not Pesachโdig.
22 Any piece of meat or chicken that slipped off the table and dropped on the floor is removed by the Mashgiach and is not used at all.
23 The dining room for the employees is on the 2nd floor and our Mashgiach Temidi assures they wash their hands and mouths before going back to work. The coats and aprons stay in the meat room and they put on new gloves and sleeves every time they enter the working area.
24 The pickling spices are Kosher LโPesach under supervision of the Nirbatur Rav Shlitโa.
As we do year-round, there is a Mashgiach Temdi in the meat room from morning to evening and he checks all meat products coming in to make sure that they have the correct kosher seals and that they are Kosher for Pesach. He also makes sure that the tables and the knives are washed between processing meats from different companies and Hashgochos, which is the procedure year round, not only Pesach.
It is important to note that the Mashgiach Temidi in the meat room has no other job except supervising the meat room all day long.

As you prepare the Pesach Seudah in your own kitchen we thought we would share with you some original ideas from ours.
PAN SEARED CARP IN
PINEAPPLE CHUTNEY
8 Slices Carp
2 Cups Lemon Juice
2 Teaspoons Salt
ยพ Cup Sugar
Marinate carp in lemon juice, salt and sugar for one hour. Heat frying pan until very hot and add sliced carp. Allow carp to fry 5-6 minutes on each side.
Pineapple Chutney Sweet & Sour Carp
2 cups chopped fresh pineapple
ยฝ cup sugar1 tsp. salt

Cook all ingredients in sauce pan on medium flame until thickened. Spoon chutney over carp and serve warm.

In a 6 qt. pot, caramelize onions with 1 ยฝ cups sugar.When onions are caramelized, stir in lemon juice, salt and ยฝ cup sugar.Add 2-3 cups water.When the water reaches a boil, add fish and allow to simmer for 2-3 hours.
(This recipe also works great with salmon. Reduce cooking time to 30 minutes.)In addition to larger bones that are easier to detect, carp are known to have many small bones. When cooking carp, (as with any fish,) the fish will shrink a bit, allow-ing the small bones to stick out from both sides of the thicker part. After cooking, while the fish is still warm, the bones can easily be removed. Be sure to take out the bones from both sides and the long part of the fish.

Cake Cream
12 egg whites1 cup sugar
1 lb. ground almonds
Beat egg whites until stiff. Add sugar and almonds. Divide two lined cookie
sheets and bake on 350ยฐ for 45 minutes.
12 yolks (above)2 cups sugarยฝ cup oil5 tbsp. ground coffee, mixed in a drop of hot water
Beat all ingredients then double boil until thick and creamy.
Assemble cake in layers: Cake, cream, cake, cream.

Ridding the House of Chometz on Pesach: A short synopsis of Hilchos Pesach by Rav Chaim Meyer Wagshal, t"yhka, Rav Hamachshir - Evergreen
This is a brief review of the practical aspects of .nj rughc from homes without engaging in an in-depth discussion as to the reasoning or importance of this holy Mitzvah.
The Mitzvah of Beiur Chometz is comprised of two general specifics:
ihsv rehgn, one has to inspect the entire house to check whether there is any Chometz food and dispose of them. This applies even to small crumbs smaller than a ,hzf if it is edible.
The trnuj and dvbn of โohause ktrahโ discussed in lurg ijkua is as follows:
โIn addition to checking the house for Chometz, one is also required to wash and scrape off any Chometz on any object or in any place, even if it is not edible.
One should wash all areas that have come in contact with Chometz even if no Chometz if presently visible.
A person in poor health or a woman who had just given birth, is not required to be rhnjn on item โ2โ because of their limited strength. They are only required to fulfill Item # 1.
Chometz which remains stuck to utensils or pots after washing them, should be dealt with by either of the two following methods:
Pour a strong cleansing chemical, such as bleach or โEasy Off.โ
Sell those items as part of the Chometz sold to a non-Jew. (In essence, one does not sell the pot or utensil, but rather the Chometz which is adhered to them. Selling the pot itself might necessitate vkhcy after Pesach.)
Any area where Chometz is not brought into during the year does not require to be cleaned or checked for Chometz.
An attic or cellar where it is possible that Chometz was brought in or if they contain stored items which contain Chometz)(i.e. suit cases, etc.) needs to be checked for Chometz.
Chometz which is hidden, in a wall or in areas which are not accessible unless taken apart, etc., does not require any checking. It becomes kyc when we say โtrhnj kf.โ
Equipment which is usually not disassembled during the year, such as a toaster, gas range, mixer, etc., does not need to be disassembled to look for Chometz or cleaning.
Silverware and kitchen china pots as well as the cabinets where they are stored and which are sold to a non-Jew do not have to be washed. It should, however, be checked for visible, sizeable crumbs which are edible and the area in which they are stored should be sealed with tape or tied.
Telephone and Recipe books, Benchers, etc. which are used during the year with hands which have Chometz on them, should be checked for visible, sizeable

crumbs which are edible and should be stored during Pesach together with other โChometzโ products and equipment that are sold and stored during Pesach.
Toys which are to be used on Pesach should be washed well and cleaned. However, toys which are porous or have holes where Chometz could have gotten into and it may fall out during Pesach, should not be used during Pesach.
Outdoor garbage bins should be cleaned from Chometz and washed well. After the burning of Chometz, no Chometz should be deposited into garbage bins. Instead, bags of garbage containing Chometz should be put next to the curb repv without putting them into the bins.
Kitchens which are used for Chometz year-round and will be used for Pesach should follow these procedures:
CABINETS: Should be washed, cleaned and covered with paper. Aluminum foil should be taped underneath the cabinets where hot Chometz could have had steam rise onto the underside of the cabinets. This is important since the steam might get into hot Pesach food being used under the cabinets during Pesach.. The counters should be covered with two thick layers of paper, aluminum foil, or lined with heavy rigid plastic liners .
REFRIGERATOR: Should be lined with aluminum foil on the inside walls, top and bottom of shelves where steam might have reached during the year. This is eespe-cially important in those areas in the refrigerator which are not easily accessible or have small holes. They should be covered to prevent any Chometz which might have penetrated to come out during Pesach. The aluminum foil should be affixed well so that it does not come off during Pesach. It is advisable not to put hot food in the refrigerator during Pesach.
GAS RANGE: If one wants to kasher a gas range for Pesach it should be discussed with a rav. If one wants to put a Pesachโdige gas range where the Chometz used to be during the year, they should cover the underside of the hood with thick alu-minum foil and make sure it wonโt tear during Pesach. (This, because the kughkc of Chometz present under the hood from the year-round cooking should not enter the Pesach food when the steam from the Pesach cooking reaches the underside of the hood).
SINKS: If one wants to use a Chometzโdige sink for Pesach, they should clean the sink very well from possible stuck Chometz and they should pour a strong soap or chemical into the drain so that the Chometz in the drain should become odpb. Dis-cuss with a Mora Hoโroah how to kasher the sink and then line it with a tin or plastic sink liner which itself is shaped like a sink.
SUMMARY: The Halochos for Pesach are very extensive. If one has any Sheiloh they should con-sult their Rav and not make a decision on their own.
