Doris for a cheering cuppa is only okay if you’re not secretly

planning to guzzle all her jam tarts while you’re there.

Another good idea is to keep a Happiness Journal, and write

about one single thing each day that’s given you pleasure. I’m

seriously thinking of doing this, so here’s my first entry.

“Today I chatted to all our lovely readers of Essentially Worthing

– and wished them a cheerful month.”

Keep smiling!

How “aitch-ay-pee-pee-why” do you

feel today? In these grim days of VAT

increases, government spending cuts and

unpredictable weather, happiness seems

an elusive commodity – and there’s been a

great deal of media advice recently on how

to cheer up and locate that inner sense of

joy which must be lurking somewhere, if

only we knew where or how.

It’s not easy. I’m not really a fan of the

Random Laughter technique – suddenly bursting into a fit of the

ho-ho-hos, three times a day and for no apparent reason. It may

get your diaphragm and inter-costal muscles working (so far, so

good) but try it when you’re on your own in a public place, and

you could get some very strange looks from passers by.

Let’s avoid this route to a padded cell, and think of something

more sensible. As happiness techniques go, I rather like the sound

of aiming to do three different acts of kindness every day. It’s a

tall order for some, especially as these kindnesses should contain

absolutely no ulterior motive. So, popping over to Great Auntie

Consistently deliciousFood with a great pedigree in the heart of town

Indigo, at the Ardington Hotel in the Steyne, is one of those restaurants where you know you will receive attentive service and great food.

Much of the credit must go to Head Chef Ben Miller and his excellent culinary training which started under the expert guidance of his father who was Head Chef at the Ritz.

Having worked his way around the kitchens of London and the Far East, Ben arrived at Indigo ready to present his own creations – simple in construction but refined in flavour showing a

real expert understanding and respect for ingredients and how they blend together.

Spring heralds the beginning of the food calendar with plump local sole in season as well as crab. Ben will be matching these two jewels of the sea, in his own inimitable style, with a delicious Champagne sauce.

Chateaubriand at Indigo is legendary. Carved at the table for two, 18ozs of the finest cut of prime English beef with fabulous hand cut chips and a choice of sauces is a definite must for lovers of red meat.

Indigo is open for lunch and dinner every day, and for Monday to Friday lunch they offer an excellent fixed price menu from £10.95 per person.

If you enjoy food we know you’ll enjoy Indigo. To book a table call 01903 230451 or visit www.indigorestaurant.info

Batter by farIt’s Pancake Day on Tuesday

March 8. If you’re a fan of

this tempting dish, you’ll

already have your favourite

topping sorted out well

in advance. (We love the

traditional lemon and sugar –

but each to his own!)

Here’s our recipe for the

perfect pancake batter.

Sift 100g plain flour with a pinch of salt into a bowl. Make a well in the centre and break in an egg.

Stir together 300ml milk and water. Add 2 tbsp of liquid to the flour, mix until combined, then beat well.

Add the rest of the liquid a little at a time, and beat gently until the batter is smooth. This will make about 4 thin pancakes.

Pour just a little at a time

into a hot oiled frying pan,

and fry gently on both sides

until golden. Toss if you’re

feeling brave!

Purple Sprouting Broccoli with Mustard and Tarragon Hollandaiseby Jane Baxter, from the Riverford Farm Cook Book

Serves 4

400g purple sprouting broccoli, trimmed250g unsalted butter3 egg yolksjuice of 1 lemona pinch of cayenne pepper2 tsp wholegrain mustard1 tsp chopped tarragon1 tsp chopped chivessalt and freshly ground black pepper

To make the sauce, melt the butter slowly in a pan, then remove from the heat. Put the egg yolks, lemon juice and cayenne in a bowl set over a pan of simmering water, making sure the water doesn’t touch the base of the bowl. Using a balloon whisk, whisk until slightly thickened, then whisk in the melted butter a little at a time until it has all been incorporated. The sauce should be thick and glossy. Stir in the mustard and herbs and season with salt and pepper. The sauce will keep in a warm place for about an hour.

Cook the purple sprouting broccoli in a large pan of boiling salted water until just tender. Drain and refresh in cold water, then dry well. Heat on a ridged grill pan (or a barbecue) until very hot, then place the broccoli on it. Cook, turning occasionally, until slightly charred. Arrange on a serving dish and drizzle over the hollandaise sauce.

If you’re serving Mothers Day lunch at home, try this as a fabulous starter.

Playing naturallyWorthing’s children know what they want, as Wendy Greene

discovered

We all know that grown-ups know best, don’t we? Well no, actually, in some cases it seems they don’t. One of Worthing’s latest and greatest success stories resulted from extensive input from local schoolchildren.

If you’ve walked or driven along West Worthing seafront, you can’t have missed the Waterwise Play Area – so called because it is next to the Waterwise Garden on the beach. The unique project was made possible following a successful National Lottery play strategy bid by Worthing Borough Council. Several sites were considered and the job of construction put out to tender.

The three best tendered designs were taken into local schools and pupils were given the chance to study them and decide which suited their needs and likes. Says William Boyd, Parks and Foreshore Support Manager, “We had our own views on what would be selected, but the children chose exactly the opposite.”

There were over 500 responses from children and the winners, Jupiter Play, were by far the most popular.

Soon the ground was cleared and levelled and work began to construct an eco-friendly

playground with good disabled access. It was decided that timber would be better than metal, and that colours should be muted to fit in with the surrounding area. Robinia wood from heritage managed forests was chosen for its strength and natural fire resistance. Engineers project managed the work and you can’t help thinking that those who had to give the equipment a thorough testing might have enjoyed it rather more than they would admit.

The playground was officially opened by The Mayor and the fences adorned with posters and poems from the children of Durrington First and Middle School. Being next to the delightful Waterwise Garden means parents and grandparents can enjoy another eco-friendly facility while the children play. The café at nearby Marine Gardens is a great place to calm down after all that excitement and there’s a plan for the Landtrain to run from The Pier to the area, making it even more fun.

Councillor Major Tom Wye, who was heavily involved in the project, says, “I am delighted with the success of the playground. I knew it would be

popular but this is much more than we expected. People come from miles around.”

Tom points out that the quality of play is particularly good. His own grandchildren’s reaction was “wow!”

As Parks Manager Clive Bramble says, “Since the opening we have all been blown away by the play area’s

Mum’s the wordWe asked a few mums for their verdict. Here’s what they told us

“My children love the sandpit. It’s the only one around here.”

“It’s great being on the beach. It makes it more interesting.”

“Being wooden makes it soothing on the eye.”

“We’ve come from Littlehampton just for this.”

“At last Worthing’s doing something for the little ones

– and the very little ones. And it’s free.”

Testing, testing…These guys seem to be enjoying it all a bit more than they’d admit!

“I wish we’d had this when I was little.” Great fun for Mums and kids alike

success and seen massive use by the local children. Which goes to show – ask the children and you can’t go far wrong.”

Is your business up to the benchmark? It’s all about identifying your strengths and weaknesses, says Jo-Anne Haulkham at Spofforths

In a world that continues to

saddle business owners with

ever increasing compliance

costs, it’s easy to lose sight

of how your accountant can

help you increase your profits

and actively manage your tax

liabilities.

Everyone’s talking about Social Media. It’s becoming more and more popular in business circles, as small businesses are Tweeting and blogging, businesses are growing their numbers of fans on Facebook, and LinkedIn is becoming a tool of choice for online networking. But the road to success is littered with abandoned blogs and stale Twitter feeds. Just like New Year resolutions, social media projects are very easy to start, but much, much tougher to sustain.

So, how can we make it work for us? The key to success, as always, is planning. Take blogs, for example. It’s very easy to use up all your great blog ideas in the first few days or weeks. “Blogger’s Block” – a term which I may have just invented – will cut in very quickly unless you plan a campaign.

The key to blogging success (and, tweeting or Facebook updating, to a lesser extent) is to find a niche or topic you want to talk about.

That’s why Spofforths

Chartered Accountants have

recently launched a new

benchmarking service to help

business clients identify where

their financial performance

is strong and where

improvements could potentially

be made. The new financial

analysis software takes your

business accounts and turns

them into a report written in

plain English, with graphical

illustrations of key ratios and

performance indicators. The

report uses ratio and trend

analysis to investigate the

financial health of your business

and highlights areas you could

work on. The performance of

your business is compared to

an industry average, so you can

easily see how your business

is performing, compared with

others in the same sector.

The new product can also

model future performance by

analysing the effect of making

changes to prices, business costs

and credit control procedures.

While economic conditions

remain uncertain, a key aim of

this service is to help you focus

management time and effort on

areas which are most likely to

affect profitability and cash flow.

If you’d like to find out

more about how Spofforths

can help you make the most

of your finances, call Jo-Anne

on 01903 828728 or for more

information, visit the website

at www.spofforths.co.uk

Do you have Blogger’s Block? It’s all a matter of planning, says Claire Love

at Local Web Solutions/ LWS Creative

Then establish a ‘voice’ or tone for your blogs and plan your topics well in advance. An accountant, for example, could plan to blog around scheduled events such as Budgets or tax deadlines. A retailer could plan blogs as new, seasonal stock arrives or when a new campaign starts. Of course, spontaneous, unplanned blogs or tweets are great, but it’s also an excellent idea to plan your blogs or updates in advance and spread them out over the year. Blogger’s block? No chance!

We’re always keen to showcase the talents of local artists and designers on our front covers, and over the last five years we’ve featured all kinds of exciting original work, from cartoons to sculpture. Could your photo or art work be next? This month we’re launching our very latest Cover Competition – and the winning entry will appear on a future cover of Essentially Worthing.

Here’s how to enter. Your work can be a photograph or a piece of original art using any medium, and in any style. The theme is Worthing and District – but think outside the box. We’re looking for something quirky and fun with an upbeat, local image and plenty of the wow factor.

Send us a high resolution image of your work in portrait format, either as a jpeg or PDF. This should be emailed, together with your contact details, to [email protected] and headed Cover Competition entry.

Singing to make you feel goodStonewater Arts Singers love to sing. Some of them read music,

others don’t. Their tastes in music vary, but that’s fine because

the repertoire is extremely broad. As founder Becky Rocheleau

says, “Singing is for everyone – we look upon it as a form of self-

expression. Being in a choir gives a sense of belonging and can be

therapeutic.”

Becky started her musical career in West End shows like Miss

Saigon, so having moved south and started a family, she needed to

start singing again. Just over two years ago, she joined forces with

Dominique Levack and some friends, meeting at the River of Life

Church in Broadwater Road from 7.30-9.30pm every Wednesday.

They perform two concerts a year and small events for local

charities. The choir has grown but would love more members,

especially men. Interested? Give Becky a call on 07957 133317.

The new face of Henry House

Henry House has a great new

look. This award-winning

therapy centre and hot pool

in Worthing’s Heene Road is

well known for providing a

wide range of treatments for

all ages. And now, it’s not only

looking a whole lot smarter,

it’s also greener and far more

economical, helping to keep

costs down for clients and

visitors.

Henry House closed over

Christmas and New Year to

allow for a major facelift to

the pool and reception area.

The dark wood and carpets

have now been replaced by a

whiter, brighter look – with

new lighting and original

Edwardian floorboards stripped

back to their former glory.

There’s a new driftwood style

sculptured desk, created by local artist Tana Jackson, and the staff who greet you will be sporting new uniforms and logos.

Henry House will also be generating its own electricity, thanks to the solar voltaic panels installed by Suntrader – and this

complements the solar water heating, water collection and recycling already in place as part of their green commitment to the environment.

“We took advantage of the Government’s feed-in tariff

contract, so we’ll be selling our surplus back to the grid,” says owner Karen Simporis. “And with gas and electricity costs set to rise by 7-10% in 2011, this has to be the way to go.”

Getting the balance rightI’m passionate about this type of exercise, says Kerrie Chinn at

B Balanced Exercise

I believe a little goes a long way and that exercise need not be time-consuming, strenuous or expensive. My goal is to bring accessible and welcoming remedial exercise classes to the local community and the Pilates and Extend classes I run in West Sussex are suitable for numerous conditions and problems.

I’ve been trained by physiotherapists in remedial exercise, so can cater for injury recovery, back complaints, pregnancy and post natal, and conditions such as sciatica, osteoporosis, arthritis, MS, ME, breast cancer, stroke, Parkinson’s and other debilitating conditions.

Classes are small so I can get to know my clients and

supervise individual progression in a class environment. I am happy to work with practitioners and take referrals from them, to enhance rehabilitation after physiotherapy or treatment.

Worthing & Adur council and local

support groups are helping me to bring concessionary classes to at-risk groups such as cancer and stroke sufferers and the elderly to build a positive pro–active approach to recovery from illness or injury. These classes bridge the gap between hospital / physio rehab and general exercise forums so those who would ordinarily cease to exercise after treatment or injury will now have another option with classes that help and educate them, keeping them well, mobile and independent for longer.

Home comforts in hotel luxuryWe like our residents to be able to lead their own lives, says Louise Bruce of Melrose Care

A tour of the lovely Victorian

house on Wykeham Road,

Worthing, will quickly

demonstrate why Melrose Care

Home is the home of choice for

many people for a short respite

stay or long term care. This

3-star award winning home was

designated “excellent” by the

Care Quality Commission in their

most recent inspection.

Most of the bright airy rooms

have en suite facilities, but

there are also assisted baths if

required. The communal rooms

offer residents the opportunity

to socialise, read, entertain

relatives or just enjoy the garden

views. There is a designated quiet

room and two conservatories

in addition to the lounge and

dining room.

All rooms are tastefully

decorated with plenty of

armchairs, enabling visitors to

talk without imposing on others’

Mealtimes are an opportunity

to socialise, but residents can

choose when to eat and are

able to stay in their own rooms

if they prefer.

It is important for anyone

going into residential

accommodation to feel it is

their home. Bringing in personal

Lock, stock and barrel?Richard Reynolds has been surfing the Net – with surprising results

The internet is a wonderful thing.

No, really, it is. Okay, sometimes

it can be the most bizarre source

of information or entertainment

imaginable, but every now and

then it can blow your mind.

Just the other day I came

across a piece of information

online that was so bizarre, it

just couldn’t be true – could

it? It arrived via an email

titled “Stuff Everyone Should

Know” (now that’s an email

I’m going to read) and there,

in amongst a whole load of

rubbish, was the subject line

“Never Get Locked Out of Your

Car Again”. The article went on

to explain that should you ever

be unfortunate enough to lock

your keys in your car, or lose

them, then as long as you have

a spare remote with keyless

entry and a mobile phone

you are – well – laughing.

If you lock your keys in the

car and the spare keys are at

home, call someone at home

on their mobile phone from

your mobile phone. Hold your

mobile phone about a foot from

your car door and have the

person at your home press the

unlock button on the spare keys,

holding it near the mobile phone

on their end. And, hey presto,

your car will unlock!

Now, I’m sure, that like

me when I first read this, you

are thinking “What a load of

poppycock!” However, isn’t there

just enough of a semblance of

possibility in that idea that’s got

you wondering? It certainly got

me wondering, so I mentioned

it on my Splash FM show, and

to my delight loads of listeners

phoned in to tell me they had

used this method before and it

had worked perfectly. So – the

internet comes to the rescue

again.

Having said this, it doesn’t

mean from now on I’m going

to believe everything I read

online without checking it out

first. Only today I read that

in a lift, the button you can

press to close the lift doors has

absolutely no function, except

to make you feel you’re in

control. Pressing the button

does not close the lift doors,

or indeed do anything

at all.

Now, I haven’t had the

chance to check this out yet,

but if you have, you know

where to get hold of me…

on the Mid-Morning Show,

10am – 2pm on Splash FM

LEO (July 24 – Aug 23)You’re feeling happy, healthy and confident. When it comes to your love life, you’ve always been headstrong – ready to fall for someone at the first whistling sound of Cupid’s arrow. And, yes, there are romantic opportunities for single Leos this month – but your challenge is to keep the fire burning for longer than your usual flash in the pan.

VIRGO (Aug 24 – Sept 23)Spring cleaning is the name of the game. It’s high time to go through everything in your home with a ruthless eye – and get all those possessions you no longer need along to the charity shop. The same procedure also needs to be applied to your emotional life, but this is a far more complicated process. Don’t let old issues clog up the emotional works – you need to make space for new and better ideas.

LIBRA (Sept 24 – Oct 23)You may find yourself scheduling a couple of doctor’s appointments – and that’s no bad thing. If you’ve been feeling worried about your health, now’s the time to seek professional advice and get it sorted. It’ll certainly put your mind at rest. Times may be tough at work, but hang on in there. In the end you’ll accomplish much more than you could ever have believed possible.

SCORPIO (Oct 24 – Nov 22)They do say that March comes in like a lion and goes out like a lamb – but whoever said so wasn’t referring to your finances. On the contrary, you’ll find money matters are a bit lamb-like and so-so as the month begins, building up to some seriously lucrative prospects and leaving you feeling like the King of the Beasts. Love, on the other hand, is going through a rather tepid phase – try socialising with your family instead.

SAGITTARIUS (Nov 23 – Dec 21)If you have children living at home they could be testing your patience this month. Handle them with wisdom, as the authoritarian approach just isn’t going to work. Now’s the time to review past experiences and put them into context. This is an extremely valuable exercise, and what you thought of as painful traumas could turn out to be useful lessons.

CAPRICORN (Dec 22 – Jan 20)Spring is coming, and the pace of events seems to be hotting up. You’re making rapid progress towards achieving the goals you set yourself, and if you’re launching a new project, the second half of the month makes perfect timing. Although your career is very important, you’ll need to shift the balance a little and make more time to listen to your family.

AQUARIUS(Jan 21 – Feb 19)Your life now has a strong forward momentum, which is very good news. You come up with an idea and find it happens quickly and smoothly. Money and financial opportunities seem to be cropping up all over the place – and you’re feeling confident and intuitive, so follow your instincts. You’ve always been a great talker, but don’t overdo it, or you could find your energy levels flagging.

PISCES (Feb 20 – March 20)You’re feeling on top of the world right now, with personal confidence and self esteem on a tremendous high. Energy levels are fizzing, but take care to use this get-up-and-go in the right way – or you’ll find it could lead to conflicts, impatience and (dare we say it?) a couple of temper tantrums. Most Pisceans love clothes, so make sure you “dress to impress”, as there’s a real business opportunity involved here.

ARIES (March 21 – April 20)You’re in daredevil mood this month. Because your health is so good and your energy levels so high you may be tempted to overdo things and attempt goals which are, quite frankly, beyond you. We’re talking foolhardy here, and you could come a cropper. So, avoid possible injury by using that daredevil streak to your own advantage, in a mindful, well-planned way.

TAURUS (April 21 – May 21)Because you’re so good at being in charge you could find yourself acting as role model this month. Your career path looks strong, and you can expect plenty of family support as you press on to achieve the goals you set yourself in the New Year. If you’ve been feeling a bit under the weather recently, the good news is your health is on track to improve significantly.

GEMINI (May 22 – June 21)Listen to the news and you’ll see how rapidly world events are moving. It’s exactly the same with your own life, but don’t panic – there’s no need to let things get out of hand. Spend time reviewing some difficult issues you’ve been wrestling with recently, perhaps connected with your family, and think about simple and immediate ways to resolve them. This may not be as impossible as you first thought.

CANCER (June 22 – July 23)You’ve been making plans recently, and you know just how you should proceed. Now’s the time to put these plans into practice, so don’t let others try to change your mind. Your happiness and success is up to you, so go it alone, if necessary. If you got through last month with your health intact, give yourself a pat on the back. And if you didn’t, you’ll be pleased to know this coming month looks much more promising, health-wise.

A fun, friendly look at what’s in the stars for you in March

What’s the worst thing that could happen? No doctor wants to have to break tragic news, says Dr Sarah Honess

Dr Sarah has the last word…

What images come to mind

when you think of A&E? Rowdy

drunks, broken bones, car

crashes, heart attacks and long

waits in draughty waiting rooms?

Yes, there’s a lot of the above

– and there’s plenty of GP stuff

too. Snuffles, coughs and colds

and toothache – they’re all

part of the bread and butter of

A&E. It’s mostly a pleasure, a

thrill even – I’m never happier

than up to my elbows in claret

– and sometimes it’s a drudge, a

positive chore but it passes the

time and pays the bills.

Every once in a while though,

and mercifully relatively

infrequently, there unfolds

a tragedy so complete that

it leaves us all stunned and

reeling, wondering how we

can carry on and why we put

ourselves through it.

Of course death is no stranger

to hospitals. Breaking bad news

to distraught relatives is part of

my role. I hope I do this with

sympathy, compassion and

sensitivity. I don’t really share

their grief, I am doing my job.

No one wants to see a weeping

doctor.

When a child dies, it is

something else altogether. No

communication skills workshop

at Medical School will ever

prepare you to speak to the

parents of a dead child. .

Resuscitation is a routine

procedure, you go into

autopilot and get on with it.

There’s a lot to do, a lot to

think about and a lot of people

to coordinate. While you are

busy doing, thinking and

coordinating you are a machine.

As soon as you stop, you are just

a mother staring at someone

else’s dead child, trying to wake

from what must surely be a

nightmare.

Mostly, we deal with death

and carry on. On to the next

kebab-coated drunk scraped

out of the gutter or a three-

week-old sprained ankle. But

child death rocks the whole

team, from the paramedics to

the receptionist. I would like to

pay tribute here to the amazing

people I work with, without

whom I would almost certainly

be rocking gently to and fro in

a secure institution. They keep

me sane. Well, sort of.

So as I drive home sobbing

in the aftermath of an

emotional Armageddon,

I am exhausted and burnt out.

All I want to do is hold my

own sweet children, still warm

and tousled-headed from sleep

and inwardly swear never to

shout at them again.

What this ultimately does is

to reset my priority clocks about

what really, really matters. It

helps to put the world back into

perspective. Feeling so keenly

such raw extreme emotion

makes you very aware of how

precious life is. It strips away all

the clutter and pares life down

to the essentials.

So next time you attend

with anything other than an

Accident or an Emergency and

find us less than enthralled by

your story – forgive us.

We might just have been to hell

and back.

Dr Sarah trained in Medicine

at King’s College, London, and

now works in the Emergency

Department at Worthing

Hospital.
