solar-assisted concentration of the spent syrup which is recirculated for osmotic dehydration, and subsequent solar drying of the partially dried fruits. Effects of various operating conditions on osmotic dehydration on mangoes, papaya and kiwi ;were examined relative to experimental results and published literature. It was noted that a two to three fold increase in the throughput of typical solar dryers was obtained white enhancing the nutritional and the organoleptic quality of the final product. Results of preliminary design calculations on farm scale "osmo-solar" dryers for fruit slices will be presented along with the criteria for scale-up.
