Here’s To Baby £13.00Our champagne toast to ‘Baby’ - aka, the world’s firstworking computer. Unveiled in June 1948, thebrainchild of Manchester University professors: Williamsand Kilburn. ‘Baby’ was recently voted one of the threegreatest scientific discoveries of all time, along withDNA and genetic fingerprinting.

Ketel 1 Vodka infused with Vanilla shaken Galliano andour secret blend of Spiced Peach and RosemaryPurée then topped up with Champagne.

Collyhurst Cooler £10.50A rather forgotten proud Mancunian creation. Legendhas it the famous Collyhurst Cucumber grew to anenormous 2.3 meters in the local tea gardens. Whetherthis had anything to do with the garden’s proximity tothe chemical and dye works we will never know, butwe think this very long and extremely refreshing swizzleis a fitting tribute.

Absolute Wild Tea Vodka, Lemon Sherbet, Ginger,Apple, and Cucumber water served long overcrushed ice.

Washday Blues £10.50Flapping in the breeze and pegged out to dry in backyards and ginnels, freshly laundered clothes madefrom fabrics spun in local mills was a familiar sight togenerations of Mancunians. This sunny Gin breezer isguaranteed to banish those washday blues.

Tanqueray Gin, Honey, blue Curacao, Tio Pepe,Lemon & Dandelion & Burdock Bitters topped withSoda and served with Popping Candy.

Mr. Mercer’s Cotton Peculiar £12.00Invented by Lancashire chemist John Mercer(1791-1866), mercerisation - treating cotton withcaustic soda to give it a smooth silken sheen - is aprocess still used today. We trust you’ll find our CottonCandy topped Ice-Cream smoothie equallygroundbreaking.

The Pioneer £11.50Closed in 1982, the port of Manchester was animportant asset to our fair town becoming the 3rdbusiest port in the UK. Named after the first Ship to dock- "The Pioneer" - brought in sugar from the North ofFrance but took back with it a shipment of steel asManchester's engineers were famed for theircontributions to the industry.

Gold Phantom £10.50In 1884, when Henry Royce opened his first workshopin Hulme, did he ever dream his firm would one dayproduce a magnificent Rolls Royce Phantom plated insolid gold? Valued at around £5 million, it’s currently theworld’s most expensive super-car. Fortunately, ourgolden punch is an altogether more affordable luxury.

Old Thom Henry’s Cherry Effervescent £12.50In 1776, visionary local apothecary Thomas Henry - apioneer of carbonated waters - speculated thatbottled ‘dephlogisticated air’ (aka oxygen) would oneday be ‘as fashionable as French wine at fashionabletaverns’: not quite as fashionable as our delicatelyaerated bottled punch, however.

Pear Williams & Peel £11.00Produced at Manchester’s Soho Foundry, Messer’s Peel,Williams and Peel Junior’s engine parts drove theindustrial revolution in much the same way asinnovations such as this sparkly Whisky Pear Williamscocktail.

Glenmorangie Nectar D’Or, stirred with Poire Williams,Lemon Sherbet, a touch of spice and Whiskey-barrelaged Bitters. Available Hot or Cold.


Berry Black Smog £10.50Fume-spewing chimneys shrouded VictorianManchester in ‘very black smog’ as one diarist noted.In 1872, having identified what we now know as ‘acidrain’, local doctor Robert Angus Smith campaigned forcleaner fuels. 77 years later, Salford introduced Britain’sfirst smoke-free zone. This Vodka and dark Berry cordialis enhanced with smoky malt Whisky and a subtle hintof Chocolate.

Bison grass Vodka stirred with Blackberries, Raspberries,Chocolate Spirit and a touch of Islay single maltScotch.

The Industrialist £11.00Instrumental in Manchester’s 18th Century prosperity,Sir Richard Arkwright’s vision turned artisanal watermillsinto mighty, power-driven factories where materialswere mass-produced using machinery andsemi-skilled labour. A self-made man, we fancy he’dadmire this potent, spun cotton-toppedold-fashioned’s mix of Bourbon, Vermouth and our‘industrialist’ mix - prepared with a secret recipe.

A frozen mix of Bulleit Bourbon, Vermouth, Mezcal,Bitters and Maple syrup, served over Candy Floss.

Forgotten ClassicsAny decent cocktail bar should be able to mix up avariety of popular classics. At Cloud 23 we would liketo introduce you to a new set of classics that we feelhave been overlooked, forgotten, neglected orabused. These drinks make great alternatives to thecocktails that we already know and love.

Southside Fizz £9.50A classic variant of a Gin Fizz, this ultra-refreshinglibation is seeing a bit of a revival nowadays. One toplease any Mojito lover, we like our Southsides servedeffervescent with lots of mint and lots of ice.

El Diablo £9.50This devilish drink originating in 1940’s California is amust for any Moscow Mule lover. A classic combo ofCuervo traditional Tequila, Lime and BlackcurrantLiqueur topped up with homemade Ginger Beer.

Hemingway Special Daiquiri £9.50The man himself gave his name to this Cuban corker.Dry Cherry Liqueur and Grapefruit Juice give a realedge to the holy trinity of Havana Club Rum, Lime andSugar found in Daiquiris.


Singapore Sling £9.50Unfortunately the exact recipe for this classic is lost inthe annals of time, but we’ve gone with our preferredrecipe of this pimped-up tropical Tom Collins. JoiningTanqueray Gin, Lemon and Soda, enter: PineappleJuice, Cherry Liqueur, Cointreau, Benedictine andBitters with a tiny touch of Grenadine. Fruitylicious!

The Fred Collins Fizz £9.50The celebrated Collins drink is fizzing stuff. From John toTom to Joe they are all part of the same family. Weprefer to call ours The Fred Collins Fizz - precursor to theLynchburg Lemonade perhaps? Grand Marnier andBulleit Bourbon meets our fantastic homemadeLemonade. Thank you Fred!

East India Cocktail £9.50The drink of the British Raj and rulers of Queen Victoria’sEast Indies Crown Colonies. Much of the cotton spunby Manchester's many mills travelled from this far awayland. Martell VSOP Cognac, Cointreau, Maraschinostirred gently with Raspberries. Only the best for royalty.

1930s Cosmopolitan £9.50Long before Carrie Bradshaw and the girls sipped onCosmos in that 90’s show, there existed a suspiciouslysimilar concoction in the 1930s. This sophisticated andclassy version is Tanqueray Gin based with Raspberry,as opposed to Cranberry, giving its attractive pinkblush.

Delicious Sour £9.50For those that swear by the deliciousness of theirfavourite Amaretto Sour, here is a sour so delicious theynamed it as such. An original and sinfully tastycombination: Apple Brandy, Peach Liqueur, Lime andbaby Apple.

Knickerbocker Special £9.50Mid 19th Century New York’s Knickerbocker Hotelproduced a variety of specialities (including desserts!)and this is one of our absolute favourites. A fruitynumber we like to drink frappe, this could be acontender for the Mai Tai throne: Havana Club Rum,Raspberry, Pineapple, Grand Marnier and Orangeslices shaken with a little Lemon.

Old Pal £9.50For aficionados of seriously old school cocktails like theManhattan or the Negroni, we’d like to introduce youto your new best friend: Old Pal. We’ve taken the libertyof adding a little Antiqua Formula Vermouth to thetypical mix of Rye Whisky, Campari and dry Vermouth.


Revived SignaturesOver the years, our cocktail offering has becomerenowned. Rather than replacing all of our previouscocktails completely, we kept five of our most lovedlibations for our faithful patrons. We have howevergiven them a bit of a reboot, adding a few tweaks andflourishes.
