Karp Królewski z Zatora – Absolutny fenomen i rekordzista pod względem hodowli, bowiem początki
rybactwa i hodowli karpia w Zatorze sięgają czasów panowania Bolesława Krzywoustego. W połowie XV wie-
ku Księstwo Zatorskie przeszło do Korony Polskiej i odtąd królowie polscy otoczyli tę krainę, a zwłaszcza jej
Tekst Jacek Szklarek.)
> Dolina Karpia – obejmuje obszar historycznego
ośrodka hodowli karpia znanego już w średniowie-
czu. Stawy hodowlane, z których największym jest
Pilawa położona w kompleksie stawów Przeręb,
zajmują obszary setek hektarów rozciągając się
w dolinie Wisły, Skawy i Wieprzówki.
> Inicjatorami projektu „Dolina Karpia” były
gminy Zator, Przeciszów i Spytkowice. Później do
grupy, która chce budować wspólny program roz-
woju dołączyły: Brzeźnica, Polanka Wielka i Osiek.
Tych sześć gmin położonych w południowej czę-
ści doliny Wisły i na Pogórzu Karpackim, postano-
wiło połączyć swoje siły i wspólnie promować ten
piękny zakątek naszego kraju.
> „Dolina Karpia” to program, który obejmuje
kilka połączonych ze sobą działań, mających
na celu stworzenie spójnej oferty turystycznej
opartej głównie na promocji walorów przyrodni-
czych i kulturowych tego rejonu. Fundamentem
Doliny Karpia są długowieczne tradycje związane
z hodowlą karpia królewskiego, którego sposób
hodowli został niewiele zmieniony i dzięki czemu
ryba ta zachowuje niepowtarzalne walory smako-
we. Karp zatorski, zwany też karpiem królewskim,
jest rybą poszukiwaną i cenioną przez smakoszy
ryb w całej Polsce. Znalazł on też swoje miejsce
na „Mapie małopolskich przysmaków”. Najlepiej
smakuje karp wędzony, karp w zalewie lub „karp
po zatorsku” – zapiekany w śmietanie. Palce lizać.
> Produkcja karpia odbywa się w gospo-
darstwach rybackich, z których największe to:
Przeręb, Spytkowice, Bugaj i Rudze. Obok „karpia
królewskiego” prowadzi się także hodowlę innych
gatunków ryb, takich jak: lin, jaź, tołpyga, amur,
karaś pospolity i złocisty, oraz ryb drapieżnych:
szczupak, sum i okoń.
Mieszkańcy Gminy Zator odnoszą się z szacun-
kiem do dokonań swoich przodków. W ostatnim
tygodniu czerwca, podkreślając kilkusetletnie
tradycje hodowli karpia, hucznie obchodzą każ-
dego roku Święto Karpia. Podczas corocznych
obchodów goszczą potrawami z karpia swoje
rodziny, gości, znajomych oraz przyjaciół z kraju
i zagranicy.
chwile i wakacje.
> Liczne gatunki ptaków występujące w „Do-
linie Karpia”, w tym te rzadko spotykane w in-
nych rejonach Polski: ślepowron, podgorzałka,
hełmiatka, rybitwa białowąsa, bąk i bączek przy-
ciągają ornitologów i amatorów fotografowania
przyrody z całej Europy. Obszar dolnej części
doliny Skawy i dolina Wisły w rejonie Zatora są
typowane do europejskiej sieci obszarów chro-
nionych „Natura 2000”.
> Lokalizacja w pobliżu Wadowic, Oświęcimia
i dużych aglomeracji miejskich Krakowa, Katowic,
Bielska, to niewątpliwy atut tego regionu. Obszar
„Doliny Karpia” wyróżnia się nieprzeciętnym krajo-
brazem naturalnym i kulturowymi tradycjami dzię-
ki czemu stanowi doskonałe miejsce do aktywne-
go wypoczynku połączonego z krajoznawstwem.
Spacery i przejażdżki rowerem wzdłuż Skawy,
wśród łęgowych zarośli i stawów zarośniętych szu-

Najcenniejsze przyrodniczo
tereny to przede wszystkim kompleksy stawów
hodowlanych, będące ostoją wymierających
w Polsce roślin i ptaków. Również bardzo cenne
są fragmenty lasów łęgowych o charakterze natu-
ralnym, które zachowały się wzdłuż podgórskich
rzek – Soły i Skawy.
> Stawy Rybne <> Początki gospodarki stawowej na Ziemi
Oświęcimsko - Zatorskiej sięgają XIII wieku. Jest
to jeden z najstarszych i największych w naszym
kraju ośrodków hodowli karpia. To właśnie z oko-
lic Zatora pochodzi sławny Karp Królewski.
Chlubą tego terenu jest ślepowron – ptak, któ-
rego niemal cała populacja krajowa skupia się
w okolicach Zatora, Oświecimia oraz Skoczowa.
Swoje ostoje znalazły tu takie wymierające w na-
szym kraju gatunki roślin jak m.in.: oczeret sztyle-
towaty, nadwodniki, kotewka orzech wodny czy
grzybieńczyk wodny. Szczególnie dwa ostatnie
z wymienionych gatunków występują tu bardzo
licznie stając się florystycznym symbolem Ziemi
Oświęcimsko - Zatorskiej.
> Dolina Dolnej Skawy (PL125) - ostoja ptaków o znaczeniu europejskim w Polsce, projek-towana ostoja Europejskiej Sieci Ekologicznej “Natura 2000” <> Obszar ten obejmuje największe kompleksy
stawów na Ziemi Oświęcimsko - Zatorskiej: Spyt-
kowice, Przeręb, Bugaj oraz Stawy Monowskie.
Stawy położone są ze wszystkich stron Zatora
i obejmują około 1500 ha powierzchni. Prowa-
Stawy
te to jedno z nielicznych w Polsce stanowisk
lęgowych podgorzałki (kaczki zagrożonej w skali
światowej). Lęgną się tutaj również inne gatunki
zagrożone w Europie: ślepowron, mewa czarno-
głowa, rybitwa białowąsa (PCKZ, najliczniejsze
stanowisko w kraju), bąk (PCKZ), bączek (PCKZ),
zausznik, czapla purpurowa, kropiatka, zielonka
(PCKZ), hełmiatka, rycyk, krwawodziób, rybitwa
czarna, rybitwa rzeczna oraz podróżniczek.
> Dolina Skawy <> Dolina rzeki Skawy na odcinku Graboszyce
– ujście do Wisły, należy do jednych z najbardziej
malowniczych zakątków Ziemi Oświęcimsko
- Zatorskiej. Mimo że silnie przekształcona przez
człowieka, zachowała w wielu miejscach układy
zbliżone do naturalnych, bogate w gatunki rzad-
kie i chronione. W zachowanych fragmentach
lasów łęgowych w drzewostanie oprócz wierzb,
topoli czarnej spotkać można również olchę
szarą. W runie na wielu stanowiskach masowo
występuje chroniona paproć – pióropusznik stru-
si. Charakterystyczne dla doliny Skawy są liczne
małe zbiorniki wodne rozmieszczone wzdłuż
biegu rzeki – pozostałość po często niekontrolo-
wanym wydobyciu żwiru. Obecnie stanowią one
środowisko życia płazów a także bobrów. Samo
koryto rzeki zachowało w znacznej części natu-
ralny charakter. Urwiste brzegi wykorzystywane
są przez jaskółki brzegówki, które gniazdują tutaj
w licznych koloniach. Natomiast żwirowe plaże
zasiedlają sieweczki rzeczne i piskliwce.

Royal Carp of Zator – Absolute phenomenon and record holder in respect to its breeding history, which
dates back to the times of Prince Bolesław Krzywousty. In the middle of the 15th century, after the Principality
of Zator joined the Polish Kingdom, Polish monarchs took the whole region, and its greatest wealth – fishing
ponds - under their special care. The carp was the most valued of all fish bred there. Its unique taste was ap-
preciated by Polish kings who made it a favourite dish on the royal menu. The present name of the fish – royal
carp is the remnant of those days of glory. Although at present many farmers call their fish “royal”, historically
only the carp bred in Zator has the right to be named “royal”.
(The source: “Dary naszej ziemi, Małopolski Smak” – published by the Marshal’s Office of the Małopolska Province. Text: Jacek Szklarek.)
> The CARP VALLEY covers the area of the tra-
ditional carp breeding center, famous from the
Middle Ages. Fishing ponds cover hundreds of
hectares in the valleys of the Vistula, Skawa and
Wieprzówka rivers. The largest of them, Pilawa, is
situated in the complex of Przeręb fishing ponds.
> The Carp Valley project was initially started
by the communities of Zator, Przeciszów and
Spytkowice, later joined by three others -
Brzeźnica, Polanka Wielka and Osiek. The six com-
munities, all of them located in the southern part
of the Vistula valley and Podkarpackie Uplands,
decided to join forces in order to promote this
beautiful region of our country.
> The Carp Valley programme incorporates
several inter-related activities, which aim at
creating a joint tourist attraction based on natural
resources. The Carp Valley concept is based on
a several centuries old of carp breeding. The
breeding technique has not been changed for
ages, which results in the unique taste of the fish
meat. The local carp variety, Zator carp, better
known as royal carp is widely sought and valued
by fish lovers all over Poland. The fish has been
included in the Map of Małopolska Food Delica-
cies. It tastes good when smoked, marinated or
stewed in sour cream. It is really excellent!
> The carp is cultured at fish farms, the largest
of which are: Przeręb, Spytkowice, Bugaj and Ru-
dze. Apart from the “royal carp” other fish species
are also bred, among them tench, ide, silver carp,
amur, crucian and german carp and predatory
fish such as pike, sheat-fish and perch.
The inhabitants of the Zator Commune deeply re-
spect their ancestors’ efforts which is celebrated
at the annual Carp Festival, held in the last week
of June to commemorate the several centuries
long tradition of carp breeding. During the fes-
tival, fish farmers prepare fish dishes for their
families, guests, friends and relatives.
> The Carp Valley has become a favourite week-
end and holiday destination. Local rivers, well-
prepared old-river beds and water-filled gravel
pits are a real paradise for anglers. During the
season, which lasts from March till October, the
region becomes a dream holiday destination for
anglers and their families.
> The Carp Valley is rich not only with fish but
also with many bird species, including rarities
such as Night Heron, Ferruginous Duck, Red-cre-
sted Pochard, common and Whiskered Tern, Bit-
tern and Little Bittern. These attract bird watchers
and wildlife photographers from all over Europe.
The region of the lower valley of the Skawa river
and the area of the Vistula valley near Zator, are
included in the European „Natura 2000” network.
> The convenient location near to the towns
of Wadowice, Oświęcim and big cities such as
Krakow, Katowice and Bielsko is also a strong
point of the region. The area of the Carp Valley,
rich with beautiful scenery and cultural traditions
makes it a perfect place for relaxation combined
with sightseeing. Walks and bicycle rides along
the banks of the Skawa river, so close to riverine
bush and bulrush ponds, with innumerable
waterbird habitats, are a perfect way of spending
free time.
The Valley is crossed with cycling trails: Greenways
– Green Trail Krakow – Moravia – Vienna (natural
and cultural heritage), EuroVelo R4, the Trail of the
Oświęcim Regional Monuments and the Wooden
Architectural Trail.

> The Region of Oświęcim and Zator, so abun-
dant with wildlife is also unusual, as the survival
of its rare and protected plant and animal species
is closely connected with human activities.
Extensive complexes of fishing ponds provide
shelter to rare plants and birds which are on the
verge of extinction in other regions of Poland.
Fragments of riparian forests which have survived
along the banks of the Skawa and Soła rivers are
also precious and unique.
> Fishing ponds <> The Fishing ponds in the region were estab-
lished as early as the 13th century, which makes
the Oświęcim – Zator region one of the oldest and
most extensive centres of carp-farming, famous
for the local variety – the royal carp. The area
is abundant with rare birds, of which the Night
Heron is worth mentioning, as the whole of its
Polish population nests around Zator, Oświęcim
and Skoczów. The unique environment favors
the growth of rare plant species which are non-
existent in other regions of Poland: including Bog
Bulrush (Schoenoplectus mucronatus), Waterworts
(Elatine) Water Chestnut (Trapa natans) or Floating
Heart (Nymphoides peltata). The latter two are so
frequent here that they have become the floristic
symbol of the region.
> Lower Skawa Valley (PL125)- bird sanctuary on the Europe-an scale in Poland, the planned bird sanctuary of the ”Natura 2000” European Ecological Net-work. <> The area covers the largest complexes of fish-
ing ponds of the Oświęcim – Zator Region, namely:
Spytkowice, Przeręb, Bugaj and Rudze Ponds. The
ponds, which surround Zator from all sides, cover
the area of ca. 1,500 ha. Although fish-farming is
run on a large scale, many ponds are thickly grown
with water plants. The whole sanctuary is spotted
with innumerable gravel-pits with bird-inhabited
isles. Attachment 1 of the Bird Directive lists bird
species which require the establishment of bird
sanctuaries within the frames of the Natura 2000
project, of which as many as seventeen nest in the
region. Additionally, seven species nesting in the
valley are listed in the so-called Polish Red Data
Book of Animals (PRDBA). The ponds make one
of the few in Poland nesting sites of ferroginous
duck, the species considered endangered all over
the world. Other rare bird species also nest here,
among them: Night Heron, Mediterranean Gull,
Whiskered Tern (PRDBA, the most numerous site
in Poland), Bittern and Little Bittern (PRDBA),
Black-necked Grebe, Purple Heron, Spotted
Crake, Little Crake (PRDBA), Red-crested Pochard,
Black-tailed Godwit, Black Tern, Common Tern
and Bluethroat.
> Skawa Valley <> The valley, together with the Skawa river,
in the stretch between Graboszyce and where
it joins to the Vistula is one of the most scenic parts
of the Oświęcim – Zator Region. Despite extensi-
ve man-made changes, in many places the valley
has maintained its original character, and is abun-
dant with rare and protected species. Among the
tree stands of the preserved fragments of riparian
forests, one can find, apart from willows and black
poplars, grey alder. Rare species are present also
in the ground flora, among them the protected
ostrich fern. The long-abandoned gravel-pits,
now filled with water are characteristic for the
Skawa valley, numerous but small-sized, these are
the habitat of amphibians and beavers. The river
bed has largely maintained its original character.
Sand-Martins nest in colonies located in steep
river beds.

Lecker!
> Die Karpfenzucht wird in Fischzucht-
Anstalten betrieben, von denen zu den größten
Przeręb, Spytkowice, Bugaj und Rudze gehören.
Neben des „königlichen Karpfen” werden auch
andere Fischgattungen gezüchtet und darunter
Schleien, Goldorfen, Silberkarpfen, Graskarpfen,
Karauschen und Silberkarauschen sowie
Raubfische wie Hecht, Wels und Barsch.
Die Einwohner der Gemeinde Zator achten die
Leistungen ihrer Urahnen. In der letzten Juniwoche
feiern sie das Karpfenfest, wodurch sie der
hunderte Jahre alten Tradition der Karpfenzucht
Ausdruck geben.
In
der langen Anglersaison – von März bis Oktober –
werden sie zum Erholungsort für Anglerliebhaber
und deren Familien.
> Mehrere Fischgattungen und unzählige
Vogelgattungen aus dem „Karpfental”, darunter
auch die, welche selten anzutreffen sind, wie
Nachtreiher, Moorente, Fluss-Seeschwalbe, We-
ißbartseeschwalbe, Weißflügel-Seeschwalbe,
Rohrdommel und Zwergdommel ziehen Orni-
thologen und Fotoamateure, welche die Natur
fotografieren, aus ganz Europa an. Das Gebiet des
unteren Skawa-Tales und des Weichseltales in der
Region um Zator wurden im europäischen Netz
„Natura 2000” aufgenommen.

Polen vom Aussterben bedrohten Floragattun-
gen zu finden wie u.a.: Stachelspitzige Teichsimse
(Schoenoplectus mucronatus), Tännel (Elatine),
Wassernuss (Trapa natans) oder Seekanne (Nym-
phoides peltata).
Moorente (welche weltweit vom Aussterben
bedroht ist). Ihre Brutstellen haben hier auch
andere europaweit bedrohte Vogelgattungen:
Nachtreiher, Schwarzkopfmöwe, Weißbartsee-
schwalbe (laut PCK - die größte Stelle in ganz
Polen), Rohrdommel (PCK), Zwergdommel (PCK),
Schwarzhalstaucher, Purpurreiher, Tüpfelsump-
fhuhn, Kleines Sumpfhuhn (PCK), Kolbenente,
Uferschnepfe, Rotschenkel, Trauerseeschwalbe,
Fluss-Seeschwalbe und Blaukehlchen.
> Das Skawa-Tal <> Dieses Tal gehört samt Skawa-Fluss in der
Strecke Graboszyce – Weichselmündung zu
dem malerischen Winkel des Oświęcim–Zator-
Gebiets. Obwohl es von dem Menschen stark
beeinflusst und verändert wurde, wurden hier
an mehreren Stellen Komplexe beibehalten, die
Natursystemen ähneln und reich an seltenen und
geschützten Gattungen sind. In den erhaltenen
Fragmenten von Schwemmwäldern kann man
neben Weide, Pyramidenpappel auch Grauerle
antreffen. Im Unterholz kommt an manchen Stel-
len massenweise der geschützte Farn - Straußen-
farn - vor. Charakteristisch für das Skawa–Tal sind
zahlreiche kleine Wasserbecken, welche entlang
dem Flussufer gelegen sind – sie sind Überreste
der des Öfteren nicht kontrollierten Kiesgewin-
nung. Heutzutage bilden sie den Lebensraum der
Lurche und auch der Biber. Das Flussbett an sich
hat größtenteils noch seinen natürlichen Charak-
ter.
anlegen.
