It is always a pleasure to see the smiling faces of those lining the streets on parade day in Creemore. We love seeing the anticipation on the children’s faces as they patiently wait for Santa to make his way down Mill Street.

It is truly one of the best parades around. Not only is there a lot of community participation, with people

putting many hours into the creation of their floats, there is also a lot of enthusiasm from spectators who come from the village, surrounding areas and the big city to take in the charms of this quaint village.

The 2014 Christmas Greetings edition includes a collection of photos from last Saturday’s parade, including crowd favourites such as the miniature horses, the bands and Santa himself.

The Creemore Echo is happy to bring you this special holiday edition, chock full of holiday greetings from area businesses and individuals, along with tried-and-true recipes – all yummy sugar and butter – for your family and guests this holiday season.

This year, our food columnist Elaine Collier shares a few of her favourite things and a savoury dish for the Christmas feast.

Besides the usual holiday traditions that every family seems to have, there are two things I always try to do around this time of year every year, and believe it or not neither of them has anything to do with cooking!

The first is re-reading one of my favourite books by Rosamunde Pilcher called Winter Solstice.

It is not one of her better-known books, but it is a book about a number of different people and events that intertwine, leading up to Christmas in a small town in Scotland.

It’s about love and loss, love found, old family ties and making new ones.

I highly recommend it for a good holiday read.Although the Alastair Sim movie version of A

Christmas Carol ranks high on my DVD must-view list around this time of year, watching my DVD of

ISH Love Actually is what really starts to get

me in the Christmas mood. While definitely not a children’s

movie, like my Pilcher novel, it is also a tale about love and loss, love found, old family ties and making new ones.

I have to admit I have a soft spot in my heart for British actor Bill Nighy in any role he plays (and here he does a super job as the disreputable Billy Mack has been

rock star), but gazing at Colin Firth, Hugh Grant and Liam Neeson ain’t so bad either!

Now that I’ve shared a few of my non-cooking favourite things, it’s time to raid the Avalon recipe files and head back into the kitchen.

This year’s holiday recipe is my take (or does everyone now call it a “hack”?) on an age-old Kraft Canada classic recipe, Catalina Cranberry Chicken. I’ve substituted lots of caramelized onions for the onion soup mix, which considerably cuts down on the salt content and gives a richer flavour.

I’ve also used sweet onion dressing rather than the usual Catalina.

This dish is a really nice combination of sweet and savoury.

You can make it ahead of time, refrigerate and then reheat in the oven for a quick supper, which is always nice when your Christmas to-do list just keeps getting longer and you’re pressed for time.

In this special Christmas edition of The Creemore Echo, you will find lots of wonderful holiday recipes, photos and joyful memories.

And to you dear readers, amongst all the festive gatherings and indulging in those delicious seasonal goodies at this time of year, I wish you much Christmas love and kindness.

That is what eating well and living well is truly all about.

Serves 44 bone-in chicken breasts with skin2 tablespoons olive oil2 medium onions, halved and sliced cross-wise1/2 cup orange juice1 1/2 cups fresh cranberry sauce (see below)1/2 cup Kraft sweet onion dressing1 teaspoon orange zestMake fresh cranberry sauce ahead of time. In a medium saucepan, mix one bag fresh cranberries, 1 cup sugar and 1 cup water. Stir and bring to a boil, then reduce heat and simmer for about 10 minutes, until berries pop and mixture has started to thicken. Remove from heat. You can use canned cranberry sauce as a substitute.Preheat oven to 350°F. Season chicken breasts with salt and pepper. In a large skillet over medium high heat, add olive oil. Place chicken breasts in the skillet skin side down. Sauté chicken for about five minutes, or until skin has browned. Turn pieces over and sauté for another few minutes until other side is browned, then remove and place skin side up in an ovenproof casserole or flat baking dish. Reduce heat to medium low and add onion slices to skillet. Stir and sauté until soft and very lightly browned. Arrange sautéed onions over the chicken breasts. Increase heat to medium; add orange juice and sweet onion dressing to deglaze the pan. Add cranberry sauce and gently stir through. If mixture looks a bit too thick, add a bit more orange juice or water. Pour cranberry mixture over top of the chicken breasts. Cover the casserole dish with foil and bake in the oven for half an hour. Remove foil and continue baking for 10 to 15 minutes more until chicken is nicely glazed. Remove from oven and serve. This is good with rice or noodles. Finish off the chicken by sprinkling the orange zest on top.

2 cups mashed pumpkin1 cup milk3 egg yolks, beaten1/2 cup sugar1/4 tsp cinnamon1/4 tsp cloves 1/4 tsp ginger1/4 tsp nutmeg1 tsp salt 3 egg whites, stiffly beaten1 pie shell pastry, uncooked

Mix pumpkin with milk and together add the sugar mixed with spices. Mix well. Fold in the egg whites. Dump mixture into pie shell. Bake at 450 degrees F for 10 minutes. Reduce oven to 375 degrees F and bake 20 minutes longer or until filling is firm.

8 large eggs2 cups of Eggnog1/4 cup white sugar1/2 tsp rum extractloaf of thick sliced bread (day-old or stale bread works best) cinnamonicing sugar (optional)

In a bowl, beat eggs, add the eggnog, sugar and extract. Soak bread until well saturated on each side. Cook on a hot, greased griddle or fry pan until golden brown on both sides and cooked through. Sprinkle cinnamon on top of each slice while cooking. Sprinkle icing sugar if desired before serving. Serve with maple syrup and a side of chopped fresh fruit. Enjoy!

A seasonal twist on a traditional French toast recipe, and a wonderful Christmas morning treat that serves 8-10 people. If serving fewer people this recipe can easily be halved. For a fun twist, use halved english muffins (20-24 slices).

3/4 cup butter or margarine1 cup packed light brown sugar1/2 cup granulated sugar1 tsp vanilla2 eggs2 1/4 cups all purpose flour1 tsp baking soda1 tsp salt1 2/3 cups chocolate chips (you can add more if you desire - I do!)1 cup chopped nuts (optional)

Heat oven to 375 degrees F. In large bowl, beat butter, sugars until fluffy. Beat in eggs and vanilla until creamy. In a medium bowl mix together flour, baking soda and salt, add to butter mixture. Stir in chocolate chips and nuts, if desired.

Taste the batter to make sure it’s yummy but remember to leave some to make the cookies with. Drop what’s left by teaspoonfuls onto ungreased cookie sheet. Bake 8 to 10 minutes or until lightly browned. Let cool slightly. Remove from cookie sheet to a wire rack. Cool completely. Enjoy with a nice glass of Miller’s Dairy Milk!

Makes about 5 dozen (depending how much is eaten before putting them in the oven)

3/4 cup shortening 1 cup white sugar1 egg4 Tbsp molasses2 cups flour1 tsp baking soda1 tsp cinnamon1 tsp cloves2 tsp ginger1/2 tsp salt1 cup white sugar

Cream shortening, add sugar, egg and molasses. Add dry ingredients. Mix well. Make into small balls, roll in white sugar and press down with fork. Bake at 375˚F for 8 to 10 minutes.

Preheat oven to 350 degrees F. Beat together butter and superfine sugar with electric beater until fluffy. Combine flour and cornstarch and gradually add to the butter mixture. Beat well. Stir in chocolate. Spoon heaping tablespoons onto an ungreased baking sheet. Bake 20 to 25 minutes or until lightly browned. Cool for 5 minutes and then sprinkle with icing sugar. Makes about 4 dozen.

1 cup butter, softened2 tsp vanilla1 Tbsp milk1/4 cup icing sugar2 cups all-purpose flour1/4 tsp salt1 cup icing sugar

Cream butter, add vanilla, milk and ¼ cup icing sugar. Sift in the flour and salt and combine well. The dough will be more like pastry dough than cookie dough. Preheat the oven to 350 degrees F. Roll into balls about one inch in diameter. Place on an ungreased cookie sheet. Bake for about 20 minutes. While still warm, roll the balls in icing sugar. Let cool.

1 cup real butter1 cup brown sugar1 bag chocolate chips1 cup nuts and/or sprinkles (your choice or whatever is in the baking cupboard)saltine crackers

Line a cookie sheet with aluminum foil. Cover foil with single layer of saltines. Cook butter and brown sugar over low-medium heat to a boil. Pour over saltines. Bake at 350 degrees F for 5 to 7 minutes. Sprinkle chocolate chips, wait a few minutes , then spread chocolate out. Sprinkle with chopped nuts and/or sprinkles. Let stand for 24 hours to set. Break or cut into pieces. Enjoy!

1 1/4 cup all-purpose flour3 Tbsp sugar1/2 cup (1 stick) butter (no substitutions), cold, cut into pieces1 Tbsp red and green sprinkles or 1/2 cup mini baking bits

Preheat oven to 325 degrees F. In food processor with knife blade attached, pulse flour and sugar until combined. Add butter and pulse until dough begins to come together. Place dough in medium bowl. With hand, gently knead in nonpareils or baking bits until evenly blended and dough forms a ball. On lightly floured waxed paper, pat dough into 8” by 5” rect-angle; freeze 15 minutes. Cut dough into 1/2-inch squares. Place squares, 1/2 inch apart, on ungreased large cookie sheet. Bake cookies 18 to 20 minutes or until lightly browned on bottom. Transfer cookies to wire rack to cool. Repeat with remaining dough. Store cookies in tightly covered container at room temperature up to 1 week, or in freezer up to 3 months.

Melt first 4 ingredients over low heat in medium pot, stirring frequently. Remove from heat and add remaining ingredients. Mix together well. Let cool a few minutes. Drop by tablespoonsful onto waxed paper. Let set for a couple of hours.

1 cup uncooked oats1 cup flour1/2 cup coconut1/2 cup walnut pieces1/2 cup firmly packed brown sugar1 tsp baking powder1/2 cup melted butter or margarine1 can Eagle Brand milk1/2 cup Realemon juice

Stir milk and lemon juice to crumb mixture. Pat half of crumb mixture into greased 9x9 inch pan. Spread milk and lemon mixture on crumb crust. Sprinkle remaining crumbs on top. Bake 30 minutes at 325 degrees F.

2 1/2 pkg Baker’s semi-sweet chocolate, divided1 pkg (250g) cream cheese, softened

Melt 8 of the chocolate squares. Set aside to cool for 1 minute. Meanwhile beat cream cheese with electric mixer until smooth. Add melted chocolate to cream cheese, mix well and refrigerate covered at least 1 hour. Cover a baking sheet with wax paper. Shape mixture into balls and refrigerate again until firm. Melt remaining 12 chocolate bars in bowl and dip balls into chocolate. Refrigerate and store in covered container. You can add flavoured extract if you wish. Makes 3 dozen.
