Yeast extract concentrateYeast extracts are manufactured frombaker's yeast. Manufacture from recov-ered brewer's yeast is also possible.Through controlled autolyses, the proteins of the yeast cell are solubilized.Cell walls are separated and washed in centrifugal separators to securemaximum product recovery. Membranefiltration may be used for polishing andpre-concentration before concentrationby evaporation. Finally, yeast extractconcentrate is generally dried and soldas a powder.
