Guajillo

Meaning 'little gourd'. The Guajillo, Cascabel (Rattle) or Catarina (Ladybug) chiles all belong to the group known as the Mirasol chiles. The Guajillo from Mexico is a beautiful russet red, translucent, thin-walled dried chile, measuring between 10-15 cm in length and between 2.5-3.25 cm in width. Most chiles grow hanging downwards (pendant). Guajillos grow upright, earning themselves an alternative name Mirasol (i.e. looking at the sun). Its delicate flavour makes it a favourite, especially for colouring, in all forms of New World cooking. Heat level is 2-4. The Guajillo, (which is related to the Pulla and the Costeno chiles), and the Catarina chile have long shapes. The Cascabel chile has a cylindrical shape; the seeds come loose from the placenta when dried and produce a sound like a rattle, which gives it its name.100 days. (Capsicum annuum)

Guajillo Costeno  Mexican heirloom pepper from the early 1900's. In the cayenne family, this is a larger shiny, deep orange-red pepper with a sweet heat.

Gujurati   An Indian variety.

Gulbarga  

A town in central south India which grows a particular chile which is sold (erroneously) as the Kashmiri chile. Consequently, it is called the Mock-Kashmiri. The Gulbarga, with its long thin wrinkled fleshy appearance does not remotely resemble the true Kashmiri, despite its nice crimson colour, neither does it have the flavour of the Kashmiri. Heat level is 4.

A compact plant growing to 18' inches. Produces medium green leaves and a profusion of fruits the size, shape and colour of gumdrops. The pepper is very hot. (Capsicum baccatum)

Gunpowder  

The bush grows dense and relatively low (30cm) and has slightly darker green leaves than a Thai or Cayenne. The yield is prolific.  The small buds start out almost black and change to the colour of aubergine until they get about 10 - 15mm long. At this point the side of the chile which faces the sun goes green. This appears to happen in a day or so. As the pepper matures and gets to about 2 - 3 cm long, it turns entirely green and stays that way for several days. It then goes into a multicoloured phase of green/orange/red and ends up entirely red. The insides are dense and packed with seeds and the flesh is relatively thick. Heat rating is about a 6 to a 7.

Guntur  

A district of India, north of Madras, with prolific chile growing. The Guntur or Andra chile is about 5 cm long by 2 cm wide, with a sharp point. It has a good deep red colour when dried and, is the chile most likely to be used as the major component in standard Indian chile powder. Heat level is 6-7.

Guntur Sannam S4  Grown in Guntur, Warangal and Khammam districts of Andhra Pradesh, India. Skin is thick. Pods mature to red and are hot. Harvesting season is December to May.
