Holton Farms & Fulton Houses

Holton Farms of Westminster, VT, and Chelsea Market are proud to announce a partnership with the Robert S. Fulton Houses in Chelsea. The three have teamed up to establish a New York City Housing Authority EBT/Food stamp CSA (Community Supported Agriculture) program in which residents will be able to swipe their cards and fill a box with farm fresh produce, weekly on Wednesdays from 1pm-3pm (starting May 18 through Thanksgiving). For all other Holton Farms and Chelsea Market members there is also a pickup 4:30pm to 5:30pm on Wednesdays at Chelsea Market across from One Lucky Duck. Posman Books is taking spring cleaning very seriously this year! Though it's been a long and hard winter for the book-store industry, they are thrilled to be thriving as Chelsea Mar-ket's independent bookstore. This Spring, they are beginning a store-wide renovation that will include an expanded children's section, a versatile event space and a brand new streamlined look. Though they are closing our doors soon for construction, don't worry! You can still find them at a temporary location across the hall for all your stationary and literary needs.

Inspired by rabble-rousing speakeasies of the prohibition era, The Tippler will be located underfoot in a Chelsea Market site that hasn’t been publicly accessible in over 150 years. Enjoy hand-crafted cocktails, local and imported beers and wines and Mediterranean-style tapas in a friendly, welcoming atmosphere of exposed brick and underground charm.

Grill MasterGrilling tips from seasoning and temperature to resting and slicing by Joshua Stokes at Grill-A-Chef

Slapping a steak on a hot grill seems easy enough, but all too often the simplest misstep will leave you with shoe

leather or tartare. Take the guesswork out of grilling with these tips:

Spring for the good stuff: The best steak you'll ever cook starts with great meat from a reputable butcher like Dick-son's Farmstead Meats.

Bring it up to room temperature: Going straight from the fridge to the frying pan can lead to uneven cooking.

Season, and season well: Meat requires significant amounts of salt, especially in thicker cuts.

Dry it up: Browning won't occur in the presence of mois-ture. Pat your meat dry and and lean toward flavor enhancers based on oils.

Start High/Finish Low: High heat will spur the formation of a delicious brown crust quickly. Once you've developed a nice sear, move it to low heat. This will allow the meat to warm through without any burning on the outside.

Let it be: Once it hits the grill, leave it alone!

Know when it's done: An instant read thermometer will run you around eight bucks and ensure that your meat or fish comes out perfect every time.

Let it Rest: Once the meat is cooked to your liking, give it some time to rest before it lands on your plate.

Cut across the grain: Imagine eating a celery stalk: when you eat the whole stalk, the fibers are impossible to ignore; however, if you slice across those fibers they are practically imperceptible. The same goes for meat!

A Musical LegendPhotography by Dick Waterman, on exhibit through June 12 at Chelsea Market, documents a half century of blues legends and rock icons.

D ick Waterman spent his career discover-

ing musical talent while his own remarkable photogra-phy remained largely under wraps. Since 1964, Waterman managed a who's who of blues legends, ranging from Son House to Bonnie Raitt. Without setting out to, he captured some of the most iconic blues and rock images of the past forty years. Yet his work never saw widespread publication. In fact, Water-man often referred to his photography as "no more than a hobby."

All of that changed in 1999 when a chance encounter with Govinda Gallery director Chris Murray led to a book. Between Midnight and Day features 120 photos as well as Waterman's personal recol-lections, and is quite possibly

the last undiscovered collec-tion of blues photography that will ever be unearthed. Today, Waterman shares his photog-raphy through his own blog and website. At dickwater-man.com, glimpse the world of Muddy Waters, Howling Wolf, Ray Charles and B.B. King, as well as blues-based rock-in-roll greats like Janis Joplin.

Some of Waterman's early works show a camera friendly Bob Dylan, as well as back-stage access to the Rolling Stones. Many of the artists Waterman photographed back in the 1960's (Bonnie Raitt, B.B. King, Chuck Berry and more) continue to be shot today, more than forty years later. See Waterman's work for the first time ever in NYC, on display at Chelsea Market April 21 - June 12.
