• 1 (8 ounce) pkg. cream cheese• 3 cups shredded sharp cheddar cheese• 2 tbsp ground green pepper• 2 tsp Worcestershire sauce• 1 tsp lemon juice• 1 tsp mustard• 1/2 tsp salt• 1 cup fresh parsley

Mix all ingredients together (except for parsley) in a large bowl. Roll into a ball. Place parsley in a pie pan and roll your cheese ball in the parsley until its completely covered. Chill your ball for one hour before serving.

Creamy Cucumber Rounds with Smoked Salmon• Thin rounds of cucumber • Canadian Camembert• Slice of smoked salmon• Dill• Lemon

Top thin rounds of cucumber with a little slice of smoked salmon and a tiny wedge of Canadian Camembert. Sprinkle with dill, lemon zest and pink peppercorns, to taste.

Serve immediately, or refrigerate and take them out a few minutes before serving, bringing cheese to room temperature.

You’ve got choice:

For a change of taste, try with Canadian Brie, Cream Cheese or Neufchâtel with herbs.

Christmas Morning Wife-Saver BreakfastPrepare the day before and pop it in the oven. Serves 8.

• 16 slices of bread (crust removed)• Thinly sliced ham• sliced or grated sharp cheddar cheese• 6 eggs• 1/2 tsp salt• 1/2 tsp pepper• 1/2 tsp dry mustard

• 1/4 cup minced onion• 1/4 cup green pepper (fi nely chopped)• 1 tsp worchestershire sauce• 3 cups whole milk• dash of tabasco• 1/4 lb butter or margarine• crushed corn fl akes

In a 9 X 13 glass, buttered baking dish put 8 slices of bread. Add pieces to cover dish completely. Cover bread with slices of ham. Lay cheese overtop of ham and then cover with the last 8 slices of bread. In a bowl, beat eggs, salt and pepper.

To the egg mixture add dry mustard, onion, green pepper, worchestershire sauce, milk and tabasco.

Pour over the bread, cover and let stand overnight. In the morning, melt the butter, pour over top. Cover with crushed corn fl akes.

Bake uncovered, 1 hour at 350º F. Let sit 10 minutes before serving. Serve with fresh cut fruit and hot cinnamon buns.

Turkey Pad Thai• ½ pound ¼ inch wide dry rice noodles• 2 tbsp oyster sauce• 4 tbsp ketchup• 1 tbsp molasses• 1 tbsp sugar• 2 tbsp fi sh sauce• 4 tbsp water• 1 tsp dried chili fl akes• 2 tsp butter• 2 large eggs, lightly whisked• 2 tbsp vegetable oil• 3 large garlic cloves, minced• 2 cups diced cooked turkey• 1 cup sliced green onions• 1 cup bean sprouts• chopped peanuts• cilantro sprigs• lime wedges

Cover the noodles with very hot tap water and let stand 10 minutes.

Combine the next 7 ingredients in a small bowl.

Melt the butter in a frying pan and scramble the eggs. Remove from the pan and chop.

Drain the noodles.

Over medium heat, heat the oil in a wok or large frying pan. Add the garlic and noodles, stirring until the noodles are translucent. Add the sauce and the turkey and heat to warm through. Add the eggs, green onions and bean sprouts and stir to combine. Heap onto a serving platter and garnish with chopped peanuts, cilantro and lime wedges. Serves 6.

Green Tea and Mint-Infused Hot Chocolate• 1 tea bag of green tea• 2 tsp cocoa powder• 3/4 cup almond milk/ milk/ soy• 1tsp sugar cane syrup• 1/4 cup boiling water• sprigs of mint

Put mint tea bag in cup with boiled water. Heat milk and add cocoa powder and sugar cane. Stir until cocoa powder is dissolved. Pour over green tea and garnish with mint sprigs.

Marvelous Marinated London Broil• 1/2 cup of light mayonnaise• 1/3 cup soy sauce• 1/4 lemon juice• 2 tbsp prepared mustard• 1 clove garlic,minced or pressed• 1/2 tsp ground ginger• 1/4 tsp freshly ground pepper• 1 beef top round steak (3 pounds), 2 inches thick.

In large shallow dish combine mayonnaise, soy sauce, lemon juice, mustard, garlic, ginger, and pepper. Add steak, turning to coat. Cover; marinate in refrigerator for several hours or overnight. Grill or broil about 6 inches from heat, turning once, 25-30 minutes or until desired doneness. To serve, slice diago-nally across grain. Makes 6-8 servings.

QUICK AND EASY KRAFT DINNER PIZZA

Prepare Kraft Dinner as per instructions on box and stir in beaten eggs (and fresh herbs if using). In separate bowl, mix tomato paste, garlic, oregano and red pepper fl akes (if desired). Press Kraft Dinner mixture in a spring form baking pan and top with tomato paste mixture. Add toppings of choice and cover with grated cheese. Bake in a 375º F oven until cheese is golden. Let cool a few minutes and remove spring form pan. Cut wedges and watch the kids dig in. (Whole wheat Macaroni makes a healthier pizza).

Lazy Man’s Cabbage Roll Casserole

• 2 pounds of ground beef• I head of cabbage• 1 large tin tomato sauce• 2 cups of cooked rice

Cook ground beef until fully cooked. Cook cabbage till tender. I cut up my cabbage into chunks then micro wave it. Cook rice. In large oven proof pot add meat, cabbage and the rice. Mix in tomato sauce. Cook uncovered at 350º F for about 1 to 1 & 1/2 hours. Should look browned when fully cooked on top.

• 1 box regular Kraft Dinner• 2 eggs beaten• 152 ml tomato paste• 1 tbsp garlic powder• 2 tbsp dry oregano• Pizza toppings of choice such as sliced

meats, mushrooms, shrimp, etc.

• Red pepper fl akes to taste (optional)• Handful of chopped fresh herbs of

choice such as basil, rosemary, or thyme (optional)

• 454 grams of skim milk mozzarella (grated)

• Mix in other grated cheeses if desired

Christmas Shortbread Cookies• 125ml butter• 175 fl our• 75 ml icing sugar

1. Combine all ingredients and beat for 10 minutes2. Drop from the spoon onto the cookie sheet3. Decorate with cherries or candy bits4. Bake in a 350º F oven for 17 minutes

Jewelled Fruit Cake• 2 cups dried apricot • 1-1/2 cups pitted dates• 3/4 cup fl our • 3/4 cup sugar• 1/2 tsp salt • 1/2 tsp baking powder• 3 eggs • 1-1/2 tsp vanilla• 1 cup red and green candied pineapple, cut up• 1 cup red and green candied pineapple• 1-1/2 cups brazil nuts

Heat oven to 300º F. Line loaf pan, 9 x 5 x 3 or 8-1/2 x 4-1/2 x 2-1/2 inches with aluminum foil-grease mix all ingredients, spread in pan. Bake until wooden pick inserted in center comes out clean about 1-3/4 hours. If necessary, cover with aluminum foil during last 30 minutes of baking to prevent excessive browning. Remove for pan; cool, wrap in plastic, store in refrigerator.

Christmas Cake Cookies• Pre-heat oven to 400° F • 2 lbs dates• ½ cup candied cherries • ½ cup candied pineapple• ½ cup almonds • ½ cup Brazil nuts• 1 ½ cups sugar • 2 eggs• 2 ½ cups fl our • 1 tsp baking soda• 1 tsp salt • 1 tsp cinnamon• 1 cup butter • 1 tsp vanilla

Sift dry ingredients, cut up fruit, blanch almonds. Chop & toast Brazil nuts. Cream butter and sugar. Beat in eggs. Add dry ingredients, fruit & nuts. Drop by spoon on greased cookie sheets. Do not over bake. Keep pan of water in oven.

Mike’s Proudly Canadian Shortbread• 125 ml (½ cup) Canadian corn starch• 125 ml (½ cup) Roger’s Canadian icing sugar• 250 ml (1 cup) Robin Hood all purpose Canadian fl our• 175 ml (¾ cup) Fraser Valley Canadian butter Mix together the corn starch, icing sugar and fl our. Using a wooden (Canadian maple is best) spoon, blend in the butter until a smooth dough forms. Using a CSA approved Canadian maple rolling pin, roll out the dough. Thereafter, cut the dough into shapes with cookie cutters of your choice (my favourite is the maple leaf).

Decorate your cookies with glazed Okanagan cherries. Bake in 350º F (150º C) oven for 15 to 20 minutes. Let cool.

Holiday Butter CookiesPreheat oven 350º F. In a mixing bowl, cream 1 cup butter; gradu-ally add ½ cup sugar and beat until light and fl uffy. Beat in 1 egg and ½ teaspoon almond extract.

Gradually blend in 2 ½ cups sifted regular all-purpose fl our. Chill dough for ease in handling. Roll out dough on lightly fl oured surface to 1/8 inch thickness.

Cut into desired shapes with assorted cookie cutters and place on baking sheets, or put in cookie press, using star attachment, and dough formed into circles or “s” on baking sheets, or drop cookies can be made by stirring 1 cup baking jujubes or cut-up gumdrops and 1 cup fl aked coconut into basic recipe. Drop by rounded teaspoons onto baking sheets.Bake 8 to 12 minutes. Remove immediately to wire rack to cool.

Chocolate Unbaked Cookies• 1/2 cup butter• 1/2 cup milk• 3/4 cup white sugar• 3/4 cup brown sugar• 1 tsp vanilla

Melt the above ingredients slowly in a medium sized pot. When it is melted, turn the heat up to med-high and boil for 4 minutes. Remove from heat and add quickly:

• 3 cups quick cooking rolled oats (can add extra 1/2 cup if you don’t like them so sticky)

• 1/2 cup cocoa• 1 cup coconut

Stir quickly and spread fl at on a cookie sheet. Can slice with a pizza cutter when cool. You can also sprinkle some icing sugar on top.

Snowballs• ½ tsp nutmeg• ½ tsp ground ginger• 1 ½ tsp vanilla extract• 1 cup soft butter• 1/3 cup granulated sugar• 2 ¼ cups all-purpose fl our• 1 cup chopped walnuts• icing sugar

Mix together fi rst fi ve ingredients. Gradually stir in fl our, then walnuts. Shape into one-inch balls and place one inch apart on ungreased cookie sheet. Bake at 350º F for approximately 20 minutes or until golden. Remove from cookie sheet and, while warm, roll in icing sugar. Cool. Store in an airtight container. Enjoy!

Makes three dozen cookies.

The First Noel

Before Big Sister Fiona and Little Sister Danielle met they felt that something was missing in their lives. For Fiona, doing something that “wasn’t just for me” was a motivation in becoming a Big Sister. For Danielle, having a Big Sister meant having some-one in her life “who could understand me.” While

their motivations were different for being involved in the program, their common interests have helped

forge a great friendship.After a few months of being matched, Danielle has al-ready become “happier and more excited” because of the time she has shared with Fiona. Big Brothers Big Sisters provides support to matches as they build new friend-ships. Fiona and Danielle are just beginning their friend-ship but are looking forward to all the things the future will bring.
