Mary Beth milburn has catered weddings for the past two decades, during which she witnessed not

only the changes in wedding garb but the changes in wedding grub.

“it’s no longer just chicken and vegetables on a plate,” says milburn, director of catering at embassy suites in east Peoria for the past two years. “Brides want a theme that carries through to their food— not just their décor.”

angie Pedulla, owner and operator of on the go catering in Peoria, agrees, adding some couples have even reduced the number of guests so they can spend more on their food.

“at one time, it used to be all about the wedding dress for the bride,” says Pedulla. “While that is still important, food has become extremely more important to brides. couples want their guest to walk away from their reception saying, “Wow.” They want a show. They want an eye-appealing display.”

With 2013 upon Peoria area brides and grooms, the new year brings new trends in food and drink.

For those couples out there still trying to decide on the ordinary chicken or beef and green beans or potatoes, why not give these trends some ‘food for thought’?

While plated meals are still a popular choice, Peoria area vendors say they have seen an increase in couples wanting buffet-style stations at their wedding receptions.

milburn says food stations by themselves are nothing new, as they used to utilized simply because of the layout and logistics of the venue.

“now, they are doing it for individuality, and to make their guests mingle,” says milburn. “it gives them a little more pizazz to their event.”

mashed potato bars and risotto stations are the two big requests lately, according to cathy molt, catering manager at embassy suites. The mashed potato bars include generic mashed potatoes, yukon gold, “or the one that’s really cool is the purple Peruvian with all the toppings,” says molt.

From salad stations, meat carving stations, starch stations, pasta bars, on the go catering has seen an increase in “live action stations,” with a serving chef at each area.

“The trend right now for the food is all about the ‘mini,’” says Pedulla.

molt recalls one wedding at embassy suites that served soup shooters in mini martini glasses with a side car of a grilled cheese sandwich.

lisa Ponce, catering sales manager at Four Points by sheraton, says food stations are very popular with most of her clients as well.

"some that were really fun were a station where everything was dipped in chocolate, even the potato chips, and a late night nacho and taco bar,” says Ponce.

Move over wedding cakeThe dinner portion of the reception is not the only part of the meal transforming. Peoria area brides are steering away from the traditional tiered wedding cake and instead serving individual portions of their favorite desserts.

“We have had a lot of cake pops and dessert stations, mixing up their favorite desserts and displaying them on different levels,” says Ponce at Four Points.

“Plus, not everyone likes cake. and when you have a cake, a lot of it goes to waste,” says molt of embassy. “i think when you have

an assortment for people, you get more bang for your buck.” Pedulla says recently, a couple served cookies and milk, which is a unique twist on a childhood favorite. also, cheesecake bars with toppings are also very popular at on the go catering, she says.

“They want to give their guest a variety,” says Pedulla.

milburn says Pinterest, an online picture sharing website, has changed how brides look at food and dessert displays.

“Brides who have had Pinterest forever, bring in pictures,” says milburn. “(Pinterest) has given brides that creative insight because what they might not have thought of, it gives multiple ideas.”

according to Ponce at Four Points, almost all of the brides she works with now serve a signature drink.

“some are their personal favorites; some are created just for that evening; and some of the drinks are chosen because they simply go with the theme of that evening,” says Ponce.

depending on the type of alcohol used, a signature drink can be more costly, yet many couples see it as a unique way to display a common interest they share.

“it seems like in the last six to eight months, they have really taken off. it gives the couples something of their own. What’s interesting is more people want

no matter what your food and drink vision is, all three vendors agree: serve what makes you happy.

“every bride is special. every bride has her own vision,” says Pedulla.

“your decision will never be wrong because this is your day,” adds Ponce.

“The most important thing is ensuring each wedding retains that uniqueness because on that day, that bride is the only one that matters,” says molt.

i submitted this wedding because miles and olivia have such natural, gracious love for each other, that they designed a celebration full of meaningful details to reflect their relationship. From the sweet bluegrass hymns and the tender, tearful vows to a reception full of cookies, pie, yard games and laughter, the bride and groom surrounded themselves with home and family. They created all the details themselves: handmade paper flower bouquets, custom designed newspaper programs, and antique tins and mason jars for their centerpieces. and while the details were both fun and beautiful, my very favorite part of the day was photographing miles’ grandfather, as officiant, brush olivia’s tears away as she read her vows. it was a perfect moment in a day dedicated to love and family.

Beyond the CandleWhile you’re planning your ceremony, many couples face the dilemma of keeping things traditional or finding ways to be traditional...but with a spin. Unity ceremonies are quickly becoming a way for the couple to get more creative and incorporate something new. Anniversary Letters. have your moms write a letter to you, and you and your fiance each write one to each other. lock the letters away in a box to be opened on your tenth, twentieth, or fiftieth wedding anniversary. remembering those feelings of what you felt on your wedding day will be the perfect gift for each other, throw in a bottle of wine too!

Wine mixing. showing the symbolism of mixing the sweet and perhaps the "bitter" parts of relationships — mix wines together as a symbol of the things to come. especially appropriate if you're having a winery wedding.

Sand Blending. Probably the one you've seen most often as an alternative — mix two different colors of sand. or, buy the small wax beads (looks like sand from afar) but put a wick down in the beads and now it becomes a candle you can burn on your anniversary.

Planting a Tree. having your ceremony at your house or another meaningful spot? Plant a tree as a symbol of your new life beginning together.

Soil mixing. Being in the heart of the midwest and often seeing farmer's families join — mix the soil from the two farms. doesn't get much more symbolic than that.

These are merely a few unity props, consider activities or favorites that you and your partner share. This is a great way to show your guests who you are and what means something to you as a couple. Enjoy!

Defining your style Janice yoder of morton’s adore Bridal and specialty says research is key when settling on a wedding style. But don’t fret if spending countless hours browsing Pinterest leaves you more confused than when you began. yoder believes a trained stylist may be all you need to help put your finger on your style. By asking a few questions about a couple’s likes and dislikes, a stylist can guide a bride and groom toward a style that works with their personalities. “The number one thing when it comes to the dress is that you feel confident,” yoder says. “if you feel confident and beautiful in a dress, that’s your style. That’s your dress.” if this info increases those wedding day jitters, here are some current wedding styles decoded. Traditional elegant, classic and timeless are adjectives that come to mind when thinking of a traditional wedding. according to yoder, a traditional dress can be a classic a-line or ball gown with very clean lines. “i see her in something that is just very true,” she says. “you can think of audrey hepburn.”

a girl’s gotta have style. your hairstyle, home décor, and clothes all reflect who you are as a person. When it comes to wedding planning, however, it’s not always as simple as choosing which table lamps best compliment your sofa, or which flats you should pair with your favorite skinny jeans.

From the all-important dress to the decadent dessert, your style shows through in every detail of your big day. But with so many options out there, how’s a girl (and her groom, of course) to know which wedding style best suits her — wait, scratch that — their taste?

according to Kristy howell of Washington’s create a scene events, traditional décor can include monochromatic arrangements with a lot of texture and light colors. michele Birkner, owner of michele’s Floral events and decorative accessories in Peoria heights, says a traditional wedding often features floral arrangements with roses, hydrangeas, tulips, lilies and peonies. candlelight adds a romantic flare to a traditional wedding. Whether that statement is made with a swarovski crystal-encrusted dress, a chunky beaded belt, elegant gloves, feathers, or candelabras, the glam couple stands by the notion that more is more. glamorous décor often includes elegantly textured linens, large-scaled centerpieces and lighting to add that extra bit of sparkle, howell says. add lilies, orchids and gardenias with metallic accents for that bold, glam statement.

Vintage currently a popular trend, a vintage wedding may feature burlap, linens, wood, and twine, howell says. When it comes to the dress, boatnecks, cap sleeves, keyhole backs, and lace seal the deal. “vintage is really about styling to me,” yoder says. “it’s about completing a whole look from veil through jewelry into your dress and down to your shoes. if you want to be a true vintage bride, you’re going to create the entire look with your hairstyle, your makeup, that whole look.” Birkner suggests “shaggier, looser flowers” like spider mums, tulips, and peonies with the addition of materials like lace, rope, and ribbon to complete the vintage look.

“The glam girl, to me, is not afraid to make a statement,” Yoder says.

Unique “For me, unique is someone who is so strong in their personality that they are willing to do something that nobody else would do,” yoder says. “a lot of uniqueness comes out with either a lot of couture styling or color.” and that color does not come in the form of a mere pop of blue in a bride’s sash. When using color, the unique bride goes big. “We have seven different black bridal gowns in the store,” says yoder, who also offers her brides dresses in emerald green, mystic blue and blush pink to name a few. “Those only work on the bride who is so willing to make a statement, because you can’t do that halfway.” Unique can also be in the way the skirt drapes, in an interesting top, tropical flowers, unexpected accessories, and surprising décor. “one couple we worked with opted for funky lighted vases with goldfish swimming in them,” howell says. “The guests thought they were really unique and they couldn’t stop talking about them.”

Mixing Style

still a couple may begin planning with an idea of their style, just to find that sometimes plans change. “you may come in thinking you want a vintage theme, but then fall in love with a super modern dress,” yoder said. While many would immediately have an oh-no-i’ve-got-to-change-my-entire-wedding-freak-out session, yoder says this does not have to be the case. “elements of one style can be added to a dress of a different style to make it fit in to your wedding,” she says. Birkner says the same is true when it comes to flowers and décor. “sometimes the style supersedes the flower choices,” Birkner said.

“We can do glam bouquets with very traditional flowers if it’s designed and stylized correctly.” In the end… no matter what others expect, it is always important that a couple stay true themselves. “The style should reflect the vision that the bride and groom have for their very special day,” Birkner says. yoder agrees. “The style of your wedding should have something to do with your personality,” she says. “We love to see a bride come in with a true sense of who she is whether she’s a traditionalist, whether she loves vintage, whether she loves to wow people, or whether she’s that glam girl. if the bride really stays true to her personality and who she is, her wedding will just come together so amazingly.”

Dessert Assortment. Just brainstorm with your fiancé about all of your favorite sweets and provide a dessert station rather than a single choice. Brownies, cookies, mousse shooters, lemon bars — whatever you're hankering for. guests will love the variety.

you know you’ve done it. you can’t help yourself. you see something and it’s an involuntary response. you click “repin” before you even realize what you’re doing. it’s as if your mouse has a mind of its own. Before you know

it, your “my dream wedding” board is full of four hundred pins, you’re overwhelmed with where to begin, and planning your dream wedding turns into a nightly anxiety attack.

as a wedding planner and designer, i often joke that Pinterest is the biggest blessing and the biggest curse to happen to our industry. Brides come to our offices with more ideas than one event could ever absorb. They’re conflicted with their style and their choices. They’re not even sure what direction they started because they’ve gotten so far off track.

in an effort to help you make the best use of Pinterest so it can be more blessing than curse, we wanted to offer a few tips to use it as a resource throughout your planning experience.

DEFInE YOUR STYLE.

Before you pin something on your wedding board, ask yourself, "is this consistent with my wedding style?" if you're not sure what your wedding style is, take some time to define it. are you going for elegant, traditional, formal, whimsical, vintage, glamorous? are you going for a bright or muted palette? monochromatic or pops of color? There's no shortage of wedding styles but knowing yours is the key to staying on the right track.

so, let's say you've decided your style is traditional with a little "glam" thrown in. does that mason jar wrapped with burlap filled with wildflowers really fit your wedding style? Probably not. go ahead and pin it — but don't put it in your wedding board. start another board like "things i love" or "future parties" — that way you can remember the idea but it doesn't become a distraction from the real ones.

or...keep it really easy and just "like" something instead of pinning it. you'll still be able to find it again but it won't be visual clutter.

GET InSPIRED. nOT OVERWHELmED.

When one of my clients first came to me, she had over 1,000 pins on her wedding board. no wonder she was waking up at night in a panic wondering how to bring it all together! We helped her sort through, prioritize, and be honest about what elements she loved and which ones she just sort of liked.

To keep it from getting overwhelming, we recommend that you don't just have one wedding board that you pin everything into. Break it up. have different boards — one for bouquets, stationery, guestbook ideas, linens, and centerpieces. That way, when you're ready to work on that one element — your ideas are all clustered together rather than thrown into one.

KEEP IT REAL.

you've done your pinning. you've been stringent in your requirements of what makes the cut. now what? Use those ideas as your guide in your vendor meetings. Print your board as a PdF or save those pictures in a file on your computer. We personally find it easiest to copy the image and paste them into a document, but everyone has a different system they like. The more ideas you can bring with you when you meet with your florist, invitation designer, or linen provider — the more connected you can be and the better they'll "get" your vision.

But make sure you don't just go in with the pictures — go with a budget. Pinterest is full of so many ideas but rarely do you see one that says, "Be careful — this centerpiece could be pricey." you don't want a vendor to price things out based on the pictures you provided and find it's two, three, or four times what you can actually afford. nothing breaks the spirits like an invoice with too many zeros.

mAKE IT YOUR OWn.

The last piece of advice we can offer...or is it more of a plea? do not replicate a Pinterest idea verbatim. you're unique. you're an individual. Use it as your inspiration or your jumping off point but get creative and personalize it. Find ways to incorporate your personality, your color palette, and your style into it. Who wants a wedding that's just a repeat of what someone else has done?

so, get to pinning and have fun — just don't let it consume you and, more than anything, leave room for new ideas and for the professionals you hire to dream up their own vision for you. isn't that why you hired them?

Why did i choose this wedding? i chose this wedding because this was one of the most beautiful, thought-out, creative weddings i’ve shot— and it was all done on a very low budget. almost all of the decorations, details, and papers were done by the bride. Using ideas found on the internet for inspiration— this bride’s country wedding dreams came to fruition! i loved the country theme throughout— and the laid back atmosphere proved fun for everyone!

What was my favorite part of the wedding? The bride had begged to have their dog be a part of the wedding somehow, but they had decided it wouldn’t be a good idea. When it came time for the rings, the best man pretended to have lost them; then their dog came running down the aisle with the rings on his neck! her reaction and tears of joy were priceless!

q: how was your trip to new york? can you give us any

details about upcoming episodes on Tlc?!

a: The trip was wonderful! i had a blast and it was fun getting

to know the other cast members who are now like a second family to me. Being in a huge city is so different than central illinois! i can’t give away too much about the upcoming episodes except you can expect lots of surprises…some good and some bad.

q: Trends certainly hit big cities first. From your time

in new york, can you tell us about any cake trends on the wedding front?

a: in the city everything is bigger and wedding cakes

are no exception; the bigger the cake the better. Traditionally the individual wedding cake tiers are at or around 4 inches tall but lately the trends seem to take tier height to 6 inches. Be aware that if you’d like to follow this trend you need to ensure your dessert plates can accommodate a larger cake slice and be prepared for a higher per serving price as well.

another big trend emerging is the use of different wedding cake tier shapes. For example, in the past you ordered a wedding cake by shape: round, square, hexagon, etc. What i saw while in new york

was a mix of tier shapes. a four tier cake might have a square base, a hexagon, and then a round top tier. it gives the overall appearance more texture. i had to laugh when i noticed this trend because my wedding cake was a mix of different tier shapes and that was in 2007! i guess i was ahead of the curve!

q: let’s look at the other spectrum, for a bride who

wants an elegant, classic cake. What always works at a wedding? What is a “timeless” order?

an all white wedding cake will always be in style in my opinion. colored flowers and wedding colors easily go in and out of style and can make you cringe with regret when looking back on cake pictures. White is always in style, classy, and timeless. Just because your cake is white doesn’t mean it needs to be bland though! White lace, white flowers, intricate piping, and sugar molds are all some of the options available to give your cake an extra special touch. it should also be mentioned that the wedding cake itself is timeless and always works. Trends like cupcake towers, dessert bars, and forgoing the wedding cake all together may also be tempting but my advice is to resist the urge.

q: so say i’m planning a wedding on a budget. any

tricks for getting the most bang for your buck?

if you want the most bang for your buck…buttercream cakes are less expensive than fondant, fill your cake layers with buttercream instead of fancy flavors or fillings (most guests like this option the most anyway!), and choose one cake flavor, such as a white vanilla cake, or something fairly neutral that most of your guests will enjoy. remember, you will never be able to please everyone regardless of how many flavors or fancy fillings you choose so why not go with buttercream icing, one cake flavor and buttercream filling; in doing so you will usually find it significantly reduces your overall cake price.

on a side note, i do not recommend baking your own wedding cake, having a family member or friend bake your cake, or dropping the wedding cake from the budget completely. even if you are an excellent cake decorator, why add the extra stress of making your own cake? it is worth the cost to have a professional bake, decorate, and deliver your cake. i do not recommend family or friends (unless they happen to be shop owners or professionals)

because most of the time this ends in disappointment. your dear friend may say she can match the wedding cake of your dreams you spent hours picking from a magazine but unless she has extensive cake decorating experience, the likelihood of this happening to your standard is small. avoid the stress on your relationship and choose a professional.

q: i saw the episode where you made an elaborate

groom’s cake. What are some fun ideas to incorporate different kinds of cakes into your wedding or bridal shower — maybe different flavors?

The groom’s cake is a great place to showcase your fun side and celebrate the groom. if you do want something edgy or surprising at your reception, a groom’s cake provides that opportunity. ordering a cake for the groom without his knowledge and presenting it as a gift at the reception is a popular option. some other fun ideas, if it is within your budget, would be to provide guests with a twist on the expected. For example, instead of a white cake filled with vanilla buttercream impress your guests with a white almond cake filled with champagne buttercream.

i chose to submit this wedding for several reasons. First, the venues were beautiful and romantic and everything was kept to a modest budget. They chose to do the wedding on a Friday morning and had the reception in a family’s member’s back yard. But these decisions did nothing to compromise on beauty, uniqueness, and intimacy. second, this was a Jewish wedding and there were so many wonderful customs that were new to me as a photographer. The signing of the Ketuba prior to the ceremony was especially meaningful. all their family was present and the rabbi talked about the significance of the Ketuba as a piece of artwork that the bride and groom sign to declare their intentions to be married and raise a family in the Jewish traditions and faith. Third, the bride sang “i Will never give Up” to her groom as she walked down the isle. This was a surprise to everyone accept the rabbi. she concluded the song standing with him at the alter. it was amazing. Fourth, at the reception, there was a mic set up and all the members of the wedding party and many family members took turn giving toasts. There was also a pool in the back yard so the kids could swim while the adults danced on the patio.
