COOKING CORNERCrockpot Meal2 chicken breasts, skinned and boneless1/2 small cabbage, cut in wedges1/2 package mini carrots1 small can rotel tomatoes1/2 small onion, choppedsalt to tastepepper to tastePlace all ingredients in crockpot. Cover and cook for 6 hours.Makes 2 Servings

Nuts & Raisin Cookies3/4 c. butter1 c. brown sugar, packed1 egg1/2 c. applesauce2 1/4 c. sifted all­purpose flour1/2 tsp. soda1/2 tsp. salt1/4 tsp. cloves3/4 tsp. cinnamon1 c. seedless raisins1/2 c. nuts, choppedIn mixing bowl, thoroughly blend together butter, br. sugar, egg and applesauce. Stir in flour, soda, salt, cloves and cinnamon. Add raisins and nuts. Drop by teaspoonsful onto greased cookie sheets. Bake at 375° for 10 to 12 minutes.

Brownies w/Chopped Candy Bars18.25 oz brownie mix + ingredients on box3­2.1 oz Baby Ruth bars­chopped8 oz cream cheese1/2 c sugar1 egg1 t milkBaker's JoyHeat oven 350 degree and spray a 13x9 baking dish. Make brownies as directed. When all is

mixed well, add vanilla and mix again. Stir in chopped candy and pour into the pan. Beat cream cheese and sugar until smooth. Beat in egg and milk. Spoon over brownie layer and swirl with a butter knife until marbled. Bake 35­40 minutes or until done. Cool and cut squares.

A Spread w/Cranberries & Nuts8 oz cream cheese1/4 c finely chopped pecans1/4 c dried cranberries­choppedThis has been a favorite dish in our house for many years, and I hope it will be at your house also.

Caramel Apples6 sm. Apples14 oz. caramels (1 pkg.)2 tbsp. Water4 c. Cheerios6 popsicle sticksWash apples and remove the stems. Insert the wooden sticks into the stem hole of each apple. Heat water and caramels in small saucepan until caramels are completely dissolved and smooth. Dip each apple and completely cover with caramel mixture. (Use spatula if needed.) then roll apples in the cereal. Press and let dry on a sheet of wax paper.

Wonderful Spice BarsThey make the house smell SO good when baking.2 cups flour1 cup sugar1 tsp. baking soda1/8 tsp. salt1 tsp. EACH cinnamon, ginger & cloves1 cup hot brewed coffee1 cup butter, softened1/2 cup molasses

2 eggsIn large bowl for electric mixer, combine all ingredients and beat for 2 minutes at medium speed. Pour batter into greased 15x10" baking pan. Bake at 350 for 20­25 minutes, until toothpick comes out clean. Cool and spread with frosting.Frosting:1/3 cup butter3 cups powdered sugar1/2 tsp. vanilla3 tbsp. waterIn small saucepan, over low heat, cook butter until light golden brown, stirring occasionally. Add remaining ingredients, blending until smooth (may need to add more water). Spread over cooled bars. NOTE: These can also be baked in a 9x13 inch pan, if you like a thicker bar cookie, but will need to bake a little longer.

Veggie Soup1 head cabbage, cut in large chunks1 c. broccoli1 c. garbanzo beans1 bunch celery6 carrots1 onion in lg. pieces1 pkg. dried onion soupAny extra vegetable you want1 lg. can V8Put all ingredients in crockpot on low. Cook all day and serve.

Historical Recipe – Hot Fish SandwichesHeat 1 T of table fat. Cook about a tablespoon each of minced green pepper and onions in it, until tender. Combine 2 eggs, ¼ cup milk, ½ tsp salt, ¾ cup cooked fish. Cook over low heat or boiling water, stirring constantly, until thick and creamy.Serve hot on toasted bread. For 4

Friday activities for the Walnut Festival weekend will include the RUN THE TOWN FOR THE GOLD run/walks and CornHole tournament on October 1st. Registration for both events begins at 5:30 pm. The races will start and finish at the Alton High School parking lot and the Cornhole tournament will be held in the FEMA building on the school campus. Race entries must be submitted by September 17th to receive a T­shirt.

The chamber will again sponsor a Wood­Working Contest and a Baking Contest at the Walnut Festival on October 2nd. Entries for both contests must be submitted at the Chamber booth by 10 am.Wood­Working categories are (1) Furniture (2) Craft/Sculpture/Carving. The winner of each category will receive $50.Baking categories are A. Quick Bread or Cookies; B. Cake or Pie; C. Candy. The winners of each category will receive $25 for 1st Place, $15 for 2nd Place and $10 for 3rd Place

United Country will be the sponsor for Walnut Idol at the festival this year, with first prize being $100.

Our next meeting is at Corn­Fed Rascal on September 16th at 5:30 pm. Everyone is welcome to attend.
